Despite the high expectations our experience was outstanding. The place, the set up, the ambiance, the art de la table, the service were exquisite. The food and the cooking of Nadia Santini is purely delicious and fulfills all senses, concentrated in the essence and finesse and not so much on impressions. Tradition and local ingredients are seamlessly connected to the future and modern cuisine techniques. The cherry on the pie is the warm and lively reception of the whole family, that is involved with various roles in the restaurant.

What a great dining experience. The whole Santini family is extremely passionate and it's such a pleasure to be their hosts. The service is probably the best in Italy, the atmosphere is warmly and elegant. The cuisine is typical but at the peak for quality and finesse. There is a reason if this restaurant has been at the top in Italy for so long...come and get why!

Great place, the atmosphere is warm and relaxing. It is a very nice place where to enjoy a nice dinner. The staff is very well prepared always paying attention to the table. They always explain the dish and how it is prepared. The ingredients are at the highest quality. We will go back more times in the future.

Gorgeous setting, extremely attentive and friendly staff - they were so welcoming! Food was beautifully presented and most dishes were lovely - dessert was a highlight. Some dishes however lacked a little flavor but were still excellent. A wonderful experience!

The night we stayed in Parma before going on to Milan, we ate at Dal Pescatore, a 3 star Michelin restaurant of many years. The meal was superb and one can see how the restaurant earns the three star honor each year. Early for once, we arrived before they were open and went for a short drive in the countryside where this lovely restaurant is nestled. Returning at the correct time, the gates were open and we parked and took the short walkway to the entrance. This is a family affair and you are made to feel like family from the time you enter. We were seated in their lovely dining room and then spent the next several hours enjoying a multi-course tasting menu. Some of the dishes of note--the parmesan crisps, the two terrines, the foie gras, the two pastas, the frog legs, roast duck, and then some lovely desserts. A large tray of mignardises was brought so we each could have one of each type. Service was exceptional and as I noted in the beginning, we were treated as if we were dining with family we knew for years. Before leaving, I went to get a photo of the chef and he insisted that the photo include the four of us along with his two brothers. For me, this was our best meal in Italy and it ranked with two others as being evenings to remember!

EXCELLENT service beyond all expectations!! We arrived early before the restaurant even opened and Mrs. Santini (one of the Chefs) greeted us warmly and led us into the garden to wait until it was time to be seated. She brought us a plate of prosciutto and crackers and water while we enjoyed the lovely garden area. Such Italian hospitality at its best! When it was finally time to go to our table, we were ushered in by the waitstaff dressed in tuxedos, setting the tone for an elegant atmosphere. Throughout our meal, all members of the Santini family personally approached our table to greet us, welcome us, and thank us for being there. We felt like special guests! Now onto the food. We started with an appetizer of tomatoes composta which was spectacular!! Next we enjoyed some pasta before cheese and dessert. Everything was solid and of high quality. When it was time to depart, the entire family ushered us out and waved goodbye. Such a lovely and warm dining experience that we won't forget!

One of Italy's most renowned houses of haute-cuisine, the elegant dining room and its proprietors having earned 3-Michelin Stars consistently since 1996, Dal Pescatore has literally turned Canneto sull'Oglio into a culinary destination, a 19h30 Wednesday arrival finding the restaurant newly ready for service with the team fresh off their yearly August vacation. Opened in 1926 as a family restaurant, but since growing in size and grandeur thanks to the self-trained style of Nadia and Giovanni Santini invigorating the region's natural bounty with passion as well as technique, Dal Pescatore looks to tell its story in a manner far different from other's of similar age or worldwide 'ranking,' modernist concepts tossed by the wayside in favor of time honored tradition with an eye towards luxury. Truly a gorgeous restaurant, the front foyer filled with paraphernalia from Dal Pescatore's history plus several books, guides and awards, it was after a brief look around the space that four were escorted to a table amidst hardwood and bright colors, the floor-to-ceiling windows looking out on a center courtyard where several cats frolicked throughout the evening, a choice of the Santini's most sizable tasting the only reasonable option , a total of ten-courses plus several Canapes and Mignardises easily justifying the €250 cost. The first table to sample some of the season's newest inspirations, this the restaurant's first service after well-deserved time off, lightly fried Pumpkin joined Eggplant Fritters and Tuna with Pork on Crostini to kick off the evening, thin crisps of aged Cheese offering an explosion of flavor before one of many bread services, the Grissini and Onion Loafs particularly delicious with a grinder of Fleur de Sel at the table allowing for augmentation of Butter from a nearby farm and creamery. Celebrating late-Summer with finely-chopped and marinated Tomato compressed between sheets of Eggplant and subsequently moving to the sixth taste of Culatello in twenty-four hours, Terrine two upped the ante on number one substantially, thin slices of Lobster Ceviche wrapped in sheets of Seaweed topped with a spoonful of Siberian Oscietra Caviar. Served slow and steady, the mood very European but made jovial by members of the Santini family frequently stopping by, a "Summer Vegetable Fantasy" arrived with strips of Squash curled around housemade Ricotta, Eggplant and Sea Bass, a tense moment occurring next when Nadia and team sent forth Foie Gras with Peaches and Passion Fruit, the often-cloying fruit thankfully mellowed by the sauce plus a splash of local Sweet Wine that the Sommelier poured gratis. Hand cutting Fettuccine to be paired with briny Bottarga, Salt Cod and Olives before pulling back on the reins with vibrant Salsa Pomodoro, Dal Pescatore's signature Pumpkin Tortellini was presented next beneath a lacquer of Fruit infused Butter plus gratings of Cheese and Amaretti Cookie, the balance admittedly tilted a bit sweeter than anticipated though the overall effect was still quite stunning. Rounding out savories with Frog Legs and an aggressive Herb Salad followed by rosy roasted Duck paired to Pear, Apple and Quince in a Balsamic bath, the Cheese course comprised three perfectly aged local specimens with Apricot Gelee and sweet Bread, a silver tray of Mignardises offered for nibbling while desserts were prepared. Taking advantage of a short break to explore the space further, several knick-knacks giving the elegance levity and a "feels like home" appeal, self-selected desserts included light options such as Pistachio Mousse with Meringue and well as a Dark Chocolate Sundae complete with a smiley face, a truly memorable evening ended by the team asking for a picture with us as opposed to the other way around plus a signed copy of the menu and hand-painted bookmarks to take home with the memories.

One of the best places on earth! Exceptional food. Impeccable service. Bravo Santini Familia. Too many favorite dishes but the most memorable was the Aubergine Tomato Terrine. Heavenly! Worth the 1.5 hour train ride and 4 mile walk from the train station. Fortunately, the gracious Santini family drove us to the rail station.

Dal Pescatore offers sublime traditional food. The Tortelli di Zucca alone is worth the trip. Plus the owners, Santinis, are some of the most likable restaurant people one will we ever meet. Now if we can just get Antonio Santini to moderate his adoration of Burgundy and ease him more into Barolo. Come on, put some Barolo in from Marta Rinaldi.

You can call this the meal of the year or a once in a lifetime dinner. Luckily, I have been able to go here about a half dozen times (I get to Italy about every other year and go here). The restaurant is out in the middle of farmland, no large cities nearby but a spectacular restaurant setting/decor, a great menu and great wine list. I always do the tasting menu with many bottles of wine :-). Family run, great service and they are always very gracious! If you go, stay at the nearby Agriturismo L'Airone (they can transport you to/from the restaurant - a good idea if you enjoy the wine). https://www.dalpescatore.com/lang_en/

It is hard to describe the ambiance and food at Dal Pescatore. The Santini family have been preparing gastronomic delights here wine the 1920s and still providing one of the most exquisite experiences ever. Yes the pumpkin ravioli is simply the best, but the entire experience is a treat for all the senses. I cannot even begin to describe the service. Never before have I been treated like I was by the family and staff. Wow.
