Seattle’s Hottest New Bars, January 2024

"Long gone are the days when hotel bars were unassertive spots for weary business travelers mindlessly swiping their corporate AmExes. Hilton’s Hotel 1000 is home to a new downtown magnet for upscale cocktail enthusiasts, locals and visitors alike. A luxury experience, Rosebay focuses on locally sourced, small-batch spirits (as seen in the Reserve Bijou, with Monkey 47 gin, green Chartreuse, Cocchi Dopo Teatro, and Seville orange bitters). The place is small, but the cozy booths and warm fireplace make for a memorable date-night setting. Rosebay nevertheless caters to groups as well — a lineup of “large format cocktails” offers 750 millimeters for four to six drinkers." - Brianna Gunter

Where To Get Eggnog In Seattle

"This great new bar on Capitol Hill that we usually love for glittered Jell-O shots released a three-month-aged eggnog spiked with whiskey, rum, fernet, and cognac. It costs $20 for a liter, and you can stop by during their to-go pop-up on Friday, December 11th to grab yours." - aimee rizzo

Dave’s Hot Chicken Is Planning a Capitol Hill Location in Seattle | Eater Seattle

"Located inside Hotel 1000, the new bar called Rosebay offers small bites such as smoked geoduck, razor clams and even caviar, with an array of cocktails designed by Lindsey Matteson of the Walrus and the Carpenter — including 'large format' cocktails intended to serve four to six people that cost more than $200." - Harry Cheadle

Google
Rosebay is a nice hotel cocktail bar that I'm glad to see open up in the area. The space inside was decorated well for the holidays and there were plenty of festive options available. The drinks we tried were strong and hit the mark. Service could have been a bit quicker but we were there near last call which may have impacted service speed. Would come back for another drink in the future!

Rosebay Cocktail Bar inside Hotel 1000 feels like stepping into a bright winter chalet in the heart of downtown Seattle. The space is glowing with white trees, soft lights, and a warm modern fireplace — clean, cozy, and beautifully designed. ✨ The holiday décor is magical, from snow-dusted evergreens to elegant Nordic details that make you feel uplifted the moment you walk in. The cocktails are crafted with care, the atmosphere is calming, and the staff is warm and attentive. You can even order from All Water Seafood & Oyster Bar, the hotel’s signature restaurant, which makes the experience even better. Perfect for photos, date nights, solo relaxation, or holiday gatherings. A peaceful, beautifully curated escape right in the city. ❄️🔥 #RosebayCocktailBar #Hotel1000 #SeattleBars #SeattleHolidays #CozySeattle #LocalGuideSeattle #SeattleDecor #SeattleChristmas #HolidaySeasonSeattle #WinterChaletVibes

Excellent service in a quiet, relaxed atmosphere. Exceptionally well decorated and comfortable - does not feel like a hotel bar at all. Creative menu of small bites, including a luxurious chocolate fondue and a thick & hearty french onion soup. Great place for a quiet date! The non-alcohol drinks are creative and have deep flavors.

SEAHAWK Post Game: Compassionate critique. Hotel 1000 gives an elegant vibe, just check out their website… ok, so I had the misfortune of visiting the bar on a SEAHAWK game night. Hoping to enjoy a relaxing time by their cool cylinder shaped fireplace with a light bite and cocktail was near impossible. The bar had maybe two employees who were out numbered by at least 25 guests to each staff member. They seemed friendly and resigned to knowing they couldn’t possibly keep up with the crowd. Why??? Would the hotel fail their employees this way. Hotel had a two night minimum (because of game day)? The hotel knows they are going to be full of guests who may want something to eat or drink after the game. Took ages to get one of the orders, the other food item didn’t come at all and drinks were almost gone before food arrived. You know it’s rough when people begin ordering grub hub and then pass out their orders in the upscale cool bar. Thank you though to the 49er fan who did generously offer me one of his McDonald French fries as I waited for over an Hour fory food order to arrive.

Google
Timothy is incredible. He made great cocktails, while also providing great recommendations for people who are looking for next stops. It's the perfect bar to begin and end your evening in Seattle.

Google
Timothy created this drink for me. I called the Mona Lisa because the drink was serious but not. Flavor has a play on Sangria, using flavors of mango, apricot, simple syrup, vermouth, clove and Cabernet. Wow.

The hummus & pita are incredible and the drinks are well crafted. Great environment, worth the price.

Yelp
We stopped at the Rosebay bar before catching our ferry. Great location (for ferry goers) and ambiance and a super chill bartender who was pleasantly particular about making great cocktails. Jamie was friendly, knowledgeable and efficient and made a quick stop memorable. We hope to be back soon.

Yelp
Staying at the hotel, dropped into the Rosebay Cocktail Bar for some pre-dinner drinks. The space is modern and welcoming. The service is quite good. But you don't go to a cocktail bar for the space... you go for the drinks. Well, on that note they have hit it out of the park. In addition to the usual cocktails, they have a good selection of unique craft cocktails. If you're looking to break out from the usual Aperol Spritz, they have a signature Rosebay Spritz with a sweetness level midway between an Aperol and a Cynar spritz. On the other hand, if you're looking for something that is just purely refreshing as an aperitivo, the Party Dress (made with Singani 63) is just the thing. This is a great cocktail bar that just happens to be in a hotel.

Yelp
Martin changed my view of sours and Rodney is the definition of hospitality! Can't wait until the golf lounge is open
