Former Blue Owl Head Brewer Is Opening Roughhouse Brewing in San Marcos | Eater Austin

"Opened in San Marcos in January 2019 by husband-and-wife team Davy and Alex Pasternak, this farmhouse-style brewery is led by a former head brewer from Austin’s sour brewery Blue Owl who plans to use yeast and oak fermentation techniques to produce drier beers. The operation launched with four to five initial beers and will also offer local wine and cider; beers are available for tasting and to-go and will be released for limited distribution. Modeled after a wine estate on part of the Pasternaks’ 50-acre ranch, the five-acre site includes a taproom, a covered patio and large outdoor seating, and features illustrations by Graham Francoise that tell each beer’s story. Hours are Thursday–Friday 4–9 p.m., Saturday noon–9 p.m., and Sunday noon–7 p.m." - Erin Russell

This place won us over with the food paired with the spectacular Ales and Pilsners. The nachos are the best in the region. There's plenty of space and the service is always fast. Great selection of beer to go and the artists on their packaging are phenomenal.

What a lovely place to find tonight! The high ratings drew us to try, and, wow, we were delighted! Kind staff, great food options and beer, play area plus soccer, well maintained landscaping to walk around, pavilions with cement flooring to enjoy the beautiful nature surrounding this hidden gem! We bright a few games and it was a great evening with a breeze! If I can give feedback on food: one more kid's option and one more side option for the sandwiches to offer variety for a large family/group who may want to taste different flavors. This was one of the most amazing gems of a brewery I have ever stepped foot in. Please please try the smoked lager if you are a fan of mezcal you will LOVE this beer. The food is spectacular, there are books to read and outdoor spaces to enjoy. The staff is willing to stop and chat about beer,I didnt want to leave!!!! Could not have asked for a better place to host my daughter post graduation party from TXST. It was a great place for family, younger siblings, and friends to gather and enjoy. The Christmas lights were beautiful, soccer field and goal was perfect for the kids, and the food and drinks were amazing. The loft area fit our group perfectly!

Great little brewery. Good selection and the half pots were big(8oz). The property is nice and nature oriented. The beer was great, the only one I did not like was the pumpkin ale but what do you expect? The staff was super friendly. I would definitely come back if in the area!

It has the sweetest Hill Country charm -- open spaces, live oaks, laid-back vibes, and the kind of friendly atmosphere that makes you want to stay all afternoon. The beer is so good -- super refreshing, thoughtfully brewed, and full of flavor without being heavy. Whether you're into crisp lagers, funky farmhouse ales, or something unique, there's always something worth trying. The staff is also incredibly kind and patient, especially if you're indecisive like me and want to sample everything first! And the FOOD? Shockingly delicious for a brewery. It feels homemade, cozy, and pairs perfectly with a cold drink. The whole place is super kid- and dog-friendly, which makes it feel more like visiting a friend's ranch than going to a bar. Picnic tables, string lights, wide-open space -- literally the cutest spot for a date, family hangout, or catching up with friends.

This was one of my favorite places I visited on my recent trip to Texas. This lovely brewery near Driftwood has great beer, food, and the most delicious chocolate chip cookies they baked in house. The beers are unique with great flavor. The property itself is very peaceful and there's a lot of open outdoor seating. The service was great, people behind the bar are very friendly. I highly recommend this spot :) we had a great time here for a few hours just hanging out with friends.

Incredible space. We thoroughly enjoyed our visit here and intend on bringing the entire family back. The grounds themselves are impeccably maintained, not to mention a safe haven for butterflies, they're everywhere. They have a lovely garden area, an outdoor stage and great play area for kids. The staff is super friendly, and I love all the little attention to details, like all the ladies room necessities. We didn't have any food this visit but look forward to going back for Friday pizza night!

Found this little piece of Heaven from a Google search. Went on a Friday night for their pizza and so glad we did. They have 3 pizza ovens outside, quick and easy. Order a pint inside then go outside and order a pizza. They give you a buzzer and set it off when it's ready. Cute set up outdoors when the Texas weather is good it's not so bad outside. They have beer, wine, seltzers and non-alcoholic beverages. Everyone on staff is friendly. I recommend visiting this hideaway spot. We are returning for sure and next time we are going back during some live music performances. Cool venue outdoors.

So this place is a little out-of-the-way, which makes it even better for stargazing or feel like your out of town to enjoy some awesome atmosphere and leave your worries at home. There's a pop-up pizza place. It was so good. Their sausage pizza was just so flavorful. The crust of it was nicely chard in such a good way. The texture was chewy and just right it has a sourdough taste. I also got the Primavera pizza. I was pleasantly surprised with the lemon notes, asparagus just everything about it was perfect and something not commonly seen on a pizza. The service was nice. I will definitely make another trip there just for that Primavera.

What a beautiful place to grab a beer. Lots of space for kids and dogs to run around and great photo opportunities. It looked like a great, large covered stage area with cute lights strung up. There is some seating inside at tables and the bar in the air conditioning. I'm not sure if they rent out for events, but it would be a truly magical perfect place to do an event. All our questions were answered and we received our items in a speedy fashion. Gotta love a brewery that offers flights. We also were able to try a few beers as we were choosing our flights. The Honeycrumb was my favorite beer, and my second place would probably go to Treeform. They offer some ciders and some non alcoholic options as well. We ordered the Pastrami sandwich and the BBQ Pulled Pork tacos. Both were fairly oily, but flavorful and filling.

Listen, I loved this place! I was stopping in on the way to meet some friends in a nearby town and I'm so happy I did. Everyone inside was super nice. Music was great on their playlist .. so I got the nachos and their flagship IPA (see stickers!). Both were really good! I highly recommend stopping by if you're in the area. Apparently they have activities, fireworks, things like that on the weekends too. They are dog friendly outside. I had a lighter beer too... maybe a Kolsch? The beers were really good and I was expecting ok. Go check them out!

This was our second time here, the first time years ago when we built out house at the lake. That time it was a little lacking for staff and food, but we were pleasantly surprised on the strides made since then. We tried several beers, and each was very good. I'm a Lager guy, but their Pilsner offering was definitely a winner. We had some sandwiches, mine was The Hammer, which was ham, Swiss and American cheese, with spicy mustard and pickle which made it very much like a Cuban (my fav sandwich). We sat outside and it was warm but under the umbrella it wasn't bad. My only complaint is the tables are low to the ground. I'm 6'3" and even those shorter than me felt like we were at a kindergarten show and tell with knees up in our chest. The staff was knowledgeable and super friendly and helpful, glad we came back.

I came here with a group of 5 friends on a Sunny afternoon. We sat outside since it wasn't too hot. They have a television outside and my friends were able to watch the Soccer game. The bartender was really nice and knowledgeable. He offered to change the channel of the television to ensure my friends were able to watch the game. It wasn't too crowded when we got there, but shortly afterwards there seemed to be a rush of people. This is definitely a family friendly event space and they even have a playground area for the kids. They have an outdoor self-serve water cooler which is always nice. I find myself always needing water as these types of places and sometimes you have to wait in line for quite some time just to get a cup of water. I did not face that dilemma here. The bartender allowed us to sample several of the different beers on tap to make sure we were ordering what we wanted. I got the Melon Head as a I like sour beers. This wasn't technically a sour, but it was quite refreshing. There is an outdoor garden area at this location and I enjoyed walking around to see the different crops they had growing. This location is off the beaten path and almost looks like someone's private residence when you pull up. The atmosphere was chill and relaxing. I would definitely come back for a date night with my husband.

Found this brewery on Google apps. Came here on a beautiful day and it was perfect little getaway! This brewery had live music, and beautiful seating outdoors. We got two beers and a warm pretzel. I wish they had more beer options but definitely a cool place to bring your dogs, kids, and just to get away from the city crowd!

Stopped in for a mid-day flight while in town visiting my parents. The indoor space is small but why sit inside when you can enjoy the beautiful outdoor seating? The space outside is large with numerous picnic tables to drink and eat with friends, there's stage for live music and a play space for kids. The beer menu isn't huge but there's a good variety and something for anyone who enjoys beer. My flight was a mix of varieties, including a sour and all were well done. I wish I made it back in the evening. This would be a fantastic happy hour or night out with friends.

Been wanting to come out here for awhile. Very nice drive going up Ranch Road 12. About 3 quarters off RR12. The property is good size, plenty of parking and plenty of room outside. The indoor are is pretty small. They do have food, but we didn't get any. The beer menu was limited, around 10 beers on tap. It was a bit disappointing for me at first to see such a limited selection. Then I spoke to the bartender and he sold me on the Sodid Saison. It's a dark saison, I'm not used to saison. I ended up drinking three of them. I also got the lighter Saison, which was good, but lack flavor compared to the darker Saison. They are very passionate about there beer. They have wine and non alcoholic drinks as well. Very kid friendly plus pet friendly. A play scape for the kids. The ambiance is very casual, I love being out there, especially when the weather is cool like it was on Saturday. They have an outdoor stage, plus events during the month. Definitely going back here again. Bathrooms are clean. This whole place is clean.

The food was amazingly good for a brewery! The 5 dip appetizer was fantastic. We especially enjoyed the olive/hummus dip. I can only say that my sandwich (turkey/brie/onions/pesto/fig jam) was absolutely delicious! Nice selection of beers and great atmosphere.

Absolutely a fantastic place to meet, eat, and enjoy good beer. Love the staff, love the vibe, and love the fact that it is an easy drive to get here! Roughhouse is one of the runs in the Run in Texas series that I highly encourage everyone to try even the most dedicated Coach potato. Trust me when I say that you will definitely kick yourself for not getting here before now!

I think this little gem is worth the drive... the lovely, scenic, country drive. Their outdoor area is beautiful and cozy, with plenty of seating options, and they have a veggie garden (if like me, you like admiring gardens) They have fun events regularly. They have fun interesting beers, like a cave ale, and all their beers have creatively designed labels. But the best thing about this brewery is their sour, Berried, which is also a cave ale. It was so good I even took a bottle home, at $16, on a Teacher salary...

Absolutely beautiful and peaceful place! I was weary of trying it since the beer sounded very floral, but there is something for everyone! I love the shaded outdoor picnic tables, and there is even a fire pit for s'mores ($3 to buy the kit)! The beer is delicious and fresh and they have a menu of farm to table foods. My husband and I tried the salsa (made from the goodies in their on-site garden) and it is the best I've had with the right amount of heat. We were able to buy a quart of it to take home- yummy! This is definitely a great place to hangout with the pups and to get some fresh, countryside air while enjoying an acoustic band and some fresh beer served by the friendliest people.

What's that saying...?...too much of a good thing? No, I got it: don't drink bad beer. Admittedly, my hop-soaked beer taste buds may not be par with a more astute beer connoisseur, but bad beer is bad beer. Tis a shame: this place is a true retreat. The Austin-indie-jazz duo provided an eclectic sound which paired perfectly with this serene outdoor haven. Their flight card/cart is cool...it's dog friendly....there's a cactus. The point is, what can you do when the beer's bad but move on and find another place. I'm also slightly irked when businesses refuse legal tender.

This place is great and worth the drive! The Farmhouse Ale is hoppy enough to pass as an IPA. And if you like dry ciders, they have a great one! (I forget the name - sorry!) The food is great as well. We had the sliders and a Ruben sandwich. Really tasty food, fun venue, and great staff! Would definitely visit again!

The Texas Pioneer spirit of the folks here is amazing. Last night they were hit with a bad storm. Today, though they had damage from hail and high winds, they were open, serving great beer, with a smile and a warm greeting. This while sweeping up broken glass. Thankful no one was hurt. Beautiful brewery in Hill Country, Texas! Live music on weekends. Plentiful picnic table seating outdoors. I had a chocolate chip cookie which was fresh and not too sweet! The nachos had fresh chopped beef--similar texture to brisket or pastrami. Liquid nacho cheese is very warm. None of the food was exceptional, but down home good. Great place for a lazy weekend afternoon!

A group of us drove in to get some beers on a hot early evening/late afternoon after shopping at San Marcos Outlets. And if you're debating whether or not to make that drive--do it. You're welcome. Roughhouse has THE space, service-oriented people backing it up AND...(the most important part for all of us beer nerds) a delicious lineup of their own beers. We drove in and were surprised to find that it was tucked in at the end of this residential street. There is plenty of space here though--it gave us Jester King and TX Keeper Cider vibes with the "outback" far out drive that make you feel like you've escaped the busy city/town life. Parking is abundant in the gravel area, and from the moment you arrive you know it's going to be a wholesome good time. We could hear the live band out there that day, and we saw people with their dogs and kids. So awesome when breweries allow all people and furry friends! There's a kitsch pickup truck out front and a huge wooden cottage-like space that is the microbrewery. The interior feels much more quaint and modern, so get out your hipster glasses and handkerchiefs, millenials! I enjoyed my flight of beers for $12. My favorite beers were Treeform IPA and Floral Print. I ended up taking a Treeform home, and the label is so tastefully done with an earthy and spritely flavor. We also ordered burgers (that come with mac and cheese! SO ooey gooey), and I gotta say their black bean veggie burger was not bad. I'm critical of veggie burgers because most people just slap it on the grill and that's it...or they just give you a thick piece of Portobello between two slices of bread. Not at Roughhouse! We also enjoyed a game of cornhole and can confirm they also have large Jenga. They have clean restrooms and serve-yourself water. Wifi is strong and it's a guaranteed a good time. Will definitely be back. Can't wait to see them grow and expand in the community.

We went to Roughhouse on a chilly Saturday afternoon for a family engagement party. It is pretty remote, with little to no ride share service available, but this small inconvenience was quickly forgotten. The grounds are absolutely beautiful, and the fire pit was the perfect antidote for a winter's day. The service was fantastic (shout out John, Sarah, Sidney, & Michael), the beer and wine solid, and the food tasty. We particularly loved the barn-like building in which the brewery is housed, the oak trees strewn with lights, and again, the amazing fire. It was the epitome of Texas hill country charm. Cheers to Roughhouse, and thanks for a fun time.

As good as it gets!! I have always loved their farmhouse ales (Ona is probably my favorite dark saison in existence but I'm also so happy about their lager program starting up. It's great to have refreshing approachable pilsners for people that aren't quite ready to walk on the (beer) wild side. If you're ready to go a little wild I definitely suggest their cave aged beer (the premiere has a little funkyness but it's not too crazy, like overripefruit and sourdough bread) we loved it and it feels really fun to pop a cork out in the texas sunshine. You can always count on Roughhouse to make something creative and unique and if you come to the taps with an open mind you definitely won't be disappointed. They have beers to go in bottles and cans too which is lucky bc some of the high abv ones are really the best (but I can't have them before driving, ha!!) Great food for snacking, we got a bbq sandwich and really liked the bbq sauce, we ended up getting extra so we could dip our chips in it lol The setting is hard to beat, plenty of shade outside with abundant picnic tables, plus there is an air conditioned loft if you just can't handle the heat!

Four generations of our family arrived at opening time on a Sunday to celebrate a 25th bday. The food and beer was good (and I'm not really a beer drinker). The playground is a great idea since it kept our little ones busy while the rest of us relaxed and enjoyed our visit sitting at our table next to it. I found it very thoughtful that the women's bathroom had complimentary feminine hygiene products, Band-Aids and hair ties for hot weather. We will be patronizing this establishment again.

The Pilsner was especially delicious and the hill country lager (I think?) made for easy daytime drinking. Waitstaff was super friendly and knowledgeable. We booked Roughhouse Brewing for our Rehearsal dinner on 3/15/24. If I could give 10 stars I would! Our experience was just amazing! Naz was our point of contact and from the beginning she was so nice and accommodating. We booked the upstairs loft for our 45 guests, and it fit us all perfectly. It overlooked the actual brewing room which was so cool! We had their inhouse catering of pulled pork and brisket sliders. They served it with mac and cheese and coleslaw and it was amazing! We had a lot of out of towners in from Virginia, so we really wanted to give them some good Texas BBQ, and we definitely did! Everyone LOVED the food! It was the perfect, relaxed, atmosphere that we wanted! The beer is amazing, and because they serve wine and other drinks, everyone had something to choose from! After our event was over, we went outside and enjoyed the scenery and firepits. It was such a beautiful place! I would ABSOLUTELY recommend this brewery to anyone!

Perfect atmosphere for our family and friends over Spring Break! Food and drinks were great. One of the waitresses helped me figure out what I would like to drink. I was nervous trying a sparkling red wine, but she was spot on!

Very nice brewery. Not a fan of farmhouse ales but, they are actually pretty good what they have on tap. Love the upstairs hangout. Suggestions- The place is in the boonies. Food specials or something to entice people to come in would be good. Moose Out

One of the best Breweries we have been too!! The food was delicious, we got the nachos to share and man they have a kick of spice and we loved it! The pulled pork sandwich and the pastrami sandwich were both amazing. Their beer flight are so reasonable and for the big portions too. We will definitely be coming back soon!
