When the cost of production increases, you have choices to make. You can raise prices, or slightly reduce ingredients.
I was in Oakland Chinatown the other day, and happen to walk by the Ruby King Bakery. I saw only one person being served, so I popped in to see what they had. It was Sunday afternoon, so there was a limited selection. I asked for baked pork buns, curry beef puffed pastries, and butterfly cookies. Everything was priced at or less than $1.90 each, so prices were kept under the $2.00 mark.
Ok, so I get my pink box home, and check out my haul.
- Butterfly Cookies: Crispy, flaky, not too sweet large cookie. There's no sugary glaze.
- Curry Beef Puff Pastry: Flaky puff pastry with a nice curry flavor and filling.
It brought back some nice memories of visits to old SF Chinatown.
- Pork Buns: Here's where you lost a star. The pork buns have less meat filling than before. When you eat one, at some point you're just eating alot of bread. I thought maybe it was just one. But no, I tore another bun apart and it revealed a smaller amount of meat filling.
I think eventually they have to raise prices. Ruby King Bakery has been around for awhile, and it has a loyal customer base. People love their egg tarts. This experience won't stop me from returning, but I don't have to buy Chinese baked goods.

FYI- Covid policy: Masks optional but preferred inside. No masks worn by customers in cafe. Plastic shield at counter, and staff were wearing masks. I'd say 99% of the people in Chinatown were wearing masks.
