Rustica Bakery & Cafe Is Opening in Wayzata this Summer | Eater Twin Cities

"A third location is planned for downtown Wayzata in the former Wuollet Bakery space at 795 Lake St E, with a planned summer opening. The 1,600-square-foot site will seat up to 30 people indoors and include outdoor patio seating in warmer months, and will feature a similar modern aesthetic to the Minneapolis and Edina bakeries. Known for bread, croissants and decadent sweet treats, the menu will include rustic loaves of sourdough, cookies, danishes, scones and a variety of savory offerings. The shop’s executive pastry chef, Shawn McKenzie, was named a 2023 James Beard Award finalist in the outstanding pastry chef or baker category; early in her career she ran pastry programs for Isaac Becker’s restaurants, including Bar La Grassa, 112 Eatery and the closed Burch Steak & Pizza (which is making a rebranded comeback as St. Pierre Steak and Seafood), continued at Penny’s Coffee, and helped open Café Cerés with chef Danny del Prado at a former Penny’s Coffee location in 2020. Jester Concepts — the hospitality group founded by Brent Frederick in 2008 that owns Starling, Butcher & the Boar and Char Bar — bought the bakery’s two locations in November and emphasizes pairing unique craft cocktail programs with chef-driven cuisine. “When Wuollet Bakery and Penny’s Coffee closed, it left a noticeable gap in the community,” Frederick said in a news release. “We feel there’s a strong demand for [the bakery]’s offerings and we’re excited to provide a new gathering space for the neighborhood.” The Wayzata site replaces Wuollet Bakery, which closed permanently in January after owner Eric Shogren shuttered a string of the local chain’s outposts amid a legal battle stemming from allegedly defaulting on loans." - Serena Maria Daniels

Rustica is unique and fancy bakery! They also serve coffee drinks! Their drinks are pretty standard and regular compared to other cafes, but they also have some fun seasonal drinks to pick from too! I tried their Chocolate Hazelnut Danish and it was pretty good! The service here is also very good! I was helped out by Noella (I hope that was her name, I'm sorry if not!!) She was super sweet and fast! Lovely experience. It's difficult for me to rate Rustica without mentioning their prices. They are quiiiiite high. Their drink sizes & prices seem pretty extreme to me. $6 for a plain 10 oz mocha is disappointing to see. Rustica is located in Edina and they seem to lean very hard into their target demographic & not branch outside of that. I think it would be nice to see Rustica lean more into what their "Fall Seasonal Drinks" looks like. More individuality, fun, and uniqueness. $6 for a "Rustica Special" mocha would seem reasonable. Not one you can get anywhere else. This bakery also seems to get PACKED. I visited @ 10 am on a random wednesday and almost all of the seats were taken and it was **Loud** So If you're looking for a cafe to work, study, or read at--keep driving. Tons of parking available in the huge parking lot and the mall nextdoor gives you more activities to do!

It's busy, and finding a place to sit might be hard. But I like the atmosphere of this place. If you want a modern place different from Starbucks, here it is. Coffee is good. I have tried their scones and wasn't a big fan. Their danishes were good.

Jackson was awesome! My wife and I, with our dog, came to have coffee and something small for breakfast. He took amazing care of us! Went all out to make the experience just right. Great suggestions, warming the pastries, toasting the bread and helping bring everything out to the patio. As someone that managed restaurants for years this type of service is rare and far between.

I’ve been here many times and usually eat the quiche at the cafe. However I ordered one to go and they seriously dropped the ball. The portions are laughable for the amount they charge.

Last few visits disappointed. Today at 12 Noon Edina was sold out of everything offered on the menu except avocado toast. The young woman talked as she was putting labels on orange juice, unapologetically, explaining they usually sell out by now. A nice young man helped me settle for a scone and coffee. A woman and her elderly mother, with a walker, left because of the menu. They also had to go back out in the rain because no mall entrance. I was meeting someone who had already settled on the avocado toast or I would have left. Sadly, this location also does not have a restroom. We may try again in Spring 2026.

It’s the American version of the Korean bakery. Everything is fattening and slightly disappointing or if you call disgusting to eat. Rustica has been around for a while but they kind of stopped doing their hand made pastries that are least there was a concept behind it. It’s like the Lunds & Byerlys model these days. Maybe that’s who owns it and use a different name. It’s a great location next to Southdale mall but the place is busy so this might all make sense. It’s like a Coffeeshop with pastries and cookies or sweets. I would only go here if I’m desperate. It’s like a more beefed up Starbucks.

First time dining in here. The Chai Latte was good & ginger cookies. Their strawberry scone wasn't as good, very dry & crumbly. The Jinx Tea wasn't very sweet. The service was great & quick.

I never thought I'd find pastries as good as the ones I have tried in Europe- but Rustica DELIVERS. Everything ja beautiful, fresh and delicious. I have always done the Flat White with Almond milk and it is so good and so smooth you need 0 sugar. I have been to 2 locations and both very different vibes, but very welcoming and great to sit for a while, and most importantly the quality consistent.

Rustica has really good pastries, which is the primary reason I've been a returning customer for over 2 years. Their pastries are some of the best I've tried in the twin cities! Bonus of pretty good coffee + kombucha on tap. The interior is a cute open floor plan with lots of tables and chairs that fill up fast. I've never had bad service! This visit I arrived at 7:50am, and by 9:00 it was PACKED! On a Thursday morning! They definitely get busy sometimes. - Parking lot at Southdale Mall - Indoor seating + seasonal patio

Filled with natural light, compared to the other Rustic the Southdale location is different in almost every way. Staff is kind, friendly and attentive, lots of seating, convenient parking and a full bakery and coffee menu I'll definitely choose this location over the other.

I tried the blueberry lilac latte, the flavor was so good but there was not enough coffee flavor in my opinion, so just ask for an extra shot of espresso! Same goes for the honey lavender latte, flavor was great, but it needed more coffee! I ordered both iced and ahead and they were ready to go when I arrived! Staff was friendly and asked if I needed a drink carrier and straws as I picked up my drinks. They have a small but cute patio and the inside was very clean and airy!

Amazing lattes!! Homemade syrups.... And the baked goods! I was across the street at a medical appointment for a couple days and this was the closest café. I wasn't sure how high my hopes should be as I chose the nearest place, but this cafe far succeeded my expectations.

Big windows? Lots of outlets? Good vibes? This is your spot! I enjoy coming to this location because the natural light and outlet availability makes it a perfect place to work on your laptop. I came in the late afternoon so they didn't have lots of baked goods available so I just went with a chai tea latte with a shot of espresso. The small cup seems a bit too small so I went with the larger size. The beverage was really tasty though I must admit, I didn't taste the espresso very much. The service was great, friendly team. I did have to wait a little bit but it wasn't too bad. Parking was pretty easy & free as it's a parking lot in the front. It can be a little busy with the mall next door but I'd say it's not too bad.

Great coffee, great food, great service, terrible website directions 930 on a Wednesday morning, the place was busy and packed, but the service was fast and personable. Really nice person taking orders, she seemed naturally excited and happy. The store itself is new and attractive. A little noisy, but hey, it was full of happy people talking to friends and family. The music was not too intrusive And then the coffee. They brew Dagwood, which is a great choice. I ordered a red eye and it was delicious- sting but not too strong, great by itself and the way I like it, with an unhealthy amount of half and half. The food is also great. Not French patisserie level, but well better than most coffee shops The only negative? Online directions to this location blow. They are basically we are in the mall. Where in the mall? Just kidding, you can't get there from the mall. Access is only from the outside! I refused to be denied and drove around the mall untill I found it. So, website directions are a big fat ZERO. But everything else is five stars. So I forgive the directions.

I wanted to go to Lake Calhoun Rustica, but my GPS took me here which made me discover the second location. Very classy area and I would say high class. People were doing business inside or ladies were meeting and talking. Slot spaces between tables like the one on Lake Calhoun. Clean inside young servers, very polite, and the whole place with the high ceiling was relatively quiet they could do second floor restaurant if they want to maximize income, like many corporations do. Both items my wife and I ate were excellent.

They lost a point because they don't have sugar free syrups, but I do like that they have "for here" cups that are actual china cups with handles. And I like the design on the top. The process to brew decaf coffee was long and convoluted but it gave me time to write this review, so I suppose that's a positive! I had a soup one day that was very good. You can watch people in Lifetime Fitness play pickleball through the back window if you're bored. What's not to love?

Okay, I admit I come here for the cookies. All of their cookies are great. The Olive Bread is very good and so is the Kouign Amann. The whole family likes the Monkey Bread. It would be nice if they had a wider selection of sandwiches; not a big fan of ham. And sometimes the baguette is VERY chewy. The new location is very nice with lots of parking.

Finally a coffee shop aside from Starbucks and caribou in Edina! Yay!! Plus one with such delicious bakery items. This location is bright and airy, with floor to ceiling windows on the two front walls. It's located in southdale but has its own exterior entrance. Plenty of free mall parking. I had a delicious honey latte with cinnamon and came to read early morning on a Sunday. The place was busy, but still plenty of space to sit. Kind and helpful workers. Rustica is a good one glad they opened another location!

Rustica Balery is a delightful bakery. I have been to their Minneapolis bakery a few times, and just moved near the Edina location. I tried a few items: the honey lavender latte was nice, as well as the pastry I got, and a quiche. They have a wide variety of seasonal coffees and pastries. A few things keeping this review from 5 stars- I was underwhelmed by the coffee. It was just okay. And next is the quiche. Don't get me wrong, it was tasty, but I was shocked when I opened to see how small it was with the dressed greens. (Pictures below, smaller than my hand for a slice) For 12$, I'll stick to the quiche from down the road. The dressed greens were wet in olive oil, no lemon, salt or pepper. Instead of it being fresh, it just tasted like heavily saturated olive oil spinach. The Edina location staff were friendly and quick. Ambience is wonderful, nice lighting and tall windows! Overall I will go back, but probably will stick to a pastry.

This location has a nice ambience and is a great place to study. Four stars because a 10 oz brewed coffee cost me over $4. I thought, surely they have free refills, but there is a $1 charge. I probably won't return, as there are equally nice shops in the area with better coffee that is reasonably priced.

The selection of pastries is excellent but they were unable to provide allergen information on any of the daily special tarts. Batistas are extremely slow at making coffee, lots of chatter and it takes 15-20mins to receive your order

This place is a one stop shop for desserts, coffee, and pastries with a splash of modern decor and plants. The coffee is good, an if you're into super fresh avocado toast without the extra fixings, this is the place. The staff is kind and helpful. It's conveniently attached to a mall as well.

Such a cute spot with delicious pastries and fun coffee! The croissants are probably the best I've had in the twin cities and the banana bread has a great crunchy topping. I got the basil raspberry mocha which was a fun spin on a classic coffee. The service is always polite and helpful. Lots of natural light which makes for great ambience.

I have been getting coffee at Rustic almost three times a week for times a week for a year but today I noticed they charge 50 cents more for decaf. I've been able to justify spending more for coffee and scones from there for the location, but this is ridiculous.

I had two hours to kill before the Black and Gold Elite event. I look up and see the Rustica sign, not believing my eyes. If you can imagine a quieter Rustica, it exists. It's away from all the Southdale craziness. I was there at 4. Ellen took great care of me and answered all my questions. I was puzzled by all the yellow in the blueberry muffin. She thought it was the semolina flour, not lemon. I had the peach scone at home. Both were amazing, gotta get all the peaches I can get for the season in any form. The packaged cookies, I resisted. Everyone knows how good they are! Black iced tea, they charge $1 for a refill. I sat in the sun reading and getting lots of light. I brought Basil home a caramel roll. I'd better bring him something home. They didn't have the eclairs because of staffing issues, and it is the same menu as Uptown. We seriously need robots in the food industry. The bathrooms are so cool and they face a tennis court. Not sure about the busy hours, but this was serenity. This will be my Rustica.

Probably not someplace I'll be returning to. Not that there was anything that especially turned me off, but their prices are a bit high and the environment was not that comfy.
