Cailettes excellent. No they don't have quite the lightness of the UK equivalents like from James in Raglan and Gloucester Road, Bristol, with the lightness of the lung, and yes, they're a bit saltier with some salted pork in the recipe; but they have a bit of green (chard?) and they're beautifully seasoned, and much lighter than crepinetes or fricandeau - and much more tasty.
