I ordered Wellfleet oysters here and they were bland, odorless, and flavorless. Anyone familiar with Wellfleet oysters knows that is the opposite of what they should be. True Wellfleets are briny, mineral-heavy, and unmistakable on the nose. They usually smell like low tide in the best possible way.
These did not. They tasted like generic, cold saltwater with no character at all. No peat. No funk. No finish. Just saline.
When I politely asked whether they were definitively Wellfleet oysters, the response was immediately defensive and aggressive instead of informative. Rather than explaining the bed, harvest date, or supplier, I was told, quote, “I don’t care if you grew up with them, I’ve bought more than your entire family has ever eaten.”
That response alone should give anyone pause.
For context, I did grow up working fish markets in the Wellfleet area and am very familiar with what these oysters are supposed to taste and smell like. I have ordered Wellfleets across the country and can recognize them instantly when they are authentic.
If you are going to sell region-specific oysters at a premium, they should actually reflect that region. If you are going to challenge a customer’s experience, you should at least be able to back up your sourcing with transparency instead of hostility.
I will not be returning.
