"Located in the Hilton but also open to non-guests, Mercato is the finest restaurant in Gdańsk. Here, chef Paweł Stawicki endeavors to “capture and highlight the multicultural and metropolitan aspects of Gdańsk’s culinary culture,” using local Pomeranian products alongside a few colonial imports. The menu, which changes four times a year, features elaborate takes on traditional recipes, plus a weekly special composed of seasonal ingredients. Perhaps the best choice is to place your fate in the skilled hands of Stawicki and order the six-course tasting menu, which includes signature dishes like cobia tartare, white asparagus cream soup, and veal cheek confit. Named after Via Mercatorum (the ancient trade route that once linked Gdańsk with the south), Mercato is proud of its heritage—a fact that’s readily apparent in the restaurant’s decor. Around the space, you’ll find framed drawings of everything from the broad bean (grown by the Pomeranians since prehistoric times) and the Baltic salmon (once served to noble Gdańsk residents of German origin) to the duck (a favorite fowl of the Polish, Kashubian, and Prussian inhabitants of Pomerania) and the Fagas sheep (brought to Poland from Holland by the Mennonites)."

We had a lovely meal at Mercato tonight. The food and service were excellent - Jola gave fantastic advice on wine pairing for our food with tastings after we chose our meals. The service was excellent and we felt that Jola catered to all of our requests - even adding a pause between our courses so that we could enjoy each dish without any rush. On top of that, Jola allowed us to order off-menu cocktails (the best strawberry margherita we've tried) and also offered a complimentary amuse-bouche before and after the meal, which made our anniversary dinner even better. Every dish was delicious - we had rabbit, stroganoff, prawns and a beef tartare - all of which were plated with care. Thank you to Jola and the Mercato team for such a wonderful evening!!

Outstanding modern Polish food. It was a pleasure to eat. Familiar tastes with a twist and beautiful presentation. Will definitely visit again when in Gdansk. One point of critique concerns service: staff were sometimes chaotic and had no clue about wine (not able to give any description or compelling recommendation). The wine list itself was decent and the white burgundy I picked delicious.

Tried the tasting menu and most of it was very tasty. The rabbit and mascarpone dessert were amazing. The service was also very good. Unfortunately, the restaurant was under construction bringing down the atmosphere a bit.

We had dinner twice at Mercato while staying at the Hilton Gdańsk. Mixed experience overall. The first evening we were served by a lovely and professional waitress, though some junior staff were quite arrogant. The herring starter was great, but the risotto was bland and overloaded with stracciatella cheese - not the best choice for Gdańsk. Funny enough, the chef asked for reviews if we liked it, but no one checked afterward to see if we actually did. The second dinner, with our parents, was less pleasant due to the waiter’s attitude - a bit of a lecture about questions we asked. The pierogi (more like ravioli) had a fantastic mushroom sauce, and the mains - cod and trout - were excellent. Unfortunately, the service both evenings lacked warmth and attention. Great food potential, but the experience didn’t quite match the restaurant’s setting or reputation.

I booked a table approximately 30 minutes before I was set to arrive. I’d heard the restaurant was in the Michelin Guide so I was hoping for better-than-average, but oh wow. This place over delivered. The best tartare I’ve ever had (delicate, subtle, balanced, and multidimensional; not just raw meat). The most generous and well-cooked piece of fish I could ever imagine. But mainly, service was next-next level. Karol basically designed my evening for me with excellent wine pairings and thoughtful but opinionated suggestions for my next move. I ended up spending hours here (solo diner) including a cigar on the terrace while they closed the restaurant. My only remaining reservation was the bill—how much was this all about to cost me?? I have to say that it was almost weirdly good value! The rums I’d been recommended were very sensible prices. I was never upsold or taken advantage of. They definitely had my back. Three courses, two wines, two rums, dessert, a cigar, and one-on-one service: €140. Genuinely blown away by the whole experience.

Exceptional food! Hilton, allow your Chef to manage this over the 4 seasons to change the menu!!. Wine pairing great, but l feel, might be stifled by conforming to the Hilton brand....separate this into a fine dining restaurant for tourists and discount during off peak seasons for affordable local prices; you can upsell by local gift vouchers by yield managing.

On the expensive side, but I had a pretty good lunch. The highlight was the herring, the best I’ve had so far. Nice effort with the wine list being in Gdansk.
