"When I turned up at the latest pop-up at Broc Cellars, I bit into Walker Stern’s Spanish tortilla and immediately realized how long I’ve been missing out. The potatoes had a soft bite, the eggs filled every crevice and were perfectly cooked—not rubbery or overdone—and buttons of chanterelle mushrooms punctuated each slice, making for a light, satisfying Sunday lunch I’ll be thinking about for a while. It shouldn’t be a surprise—Stern helped relaunch French-omelet-famous Verjus—but it’s a joy to see his own cooking out in the wild, with partner Devon Nevola running a smooth front of house, and I’ll be scouring menus and waiting for the next Here Before event." - Paolo Bicchieri
