The 15 Best Bread Bakeries in Paris | Eater

"As the name implies, the theme at Fermentation Générale in the 11th arrondissement is fermentation. From kefir and kombucha to natural wines, ciders, and pickles, the menu is a dream for anyone who loves sour flavors. Sourdough fits perfectly in that mix. Every bread is tangy and tart, with a depth of flavor reminiscent of San Francisco sourdoughs. Located in the 11th arrondissement. Dayna Evans" - Dayna Evans

Fermentation Generale is one of my favorite spots for buying bread, I'm also a big fan of their kimchi (I ate the entire pot the same day, couldn't stop eating!). I just want to point out that it makes me very sad to read other people's comments. Sometimes we tend to forget the effort behind a small and specialized business like this one, who are not willing to compromise their quality and process for extending their opening hours and variety of products.  And as a customer I really value that. They are also very kind and friendly.

I was super impressed by the variety of breads and other ferments available here, especially in such a small shop. My favourites were the sourdough scones, kombucha, amazake sobacha, and trompette loaf. Very friendly and helpful staff. Keep an eye out on the hours/days of operation - and check out the puzzle place next door!

Incredible local shop of fermented foods and drinks. I had a delicious sourdough bread, spicy fermented veggies, and a sour red grape ale. FYI cash only.

Lovely service and delicious kombucha (I love the hibiscus flavor!). Higher prices are justified for a small business that works with local producers who make small quantities of their products.

Their bread is phenomenal. So flavorful, So soft, so fresh even when it was purchased at closing time. It was soft and so good even the next day. They just gained a regular client! The fermented rice / amazake drink by epiq foods is really good! This hidden beauty secret drink is available at this place and is sold in limited quantities in the city. Highly recommended. Not mass produced and made with incredible amounts of love! I’m a fan! Their pumpkin kimchi is deeelicious!

Very kind man working, ate my weight in their bread walking home because I couldn't resist! The loaf slice was spicy with bits of herb and peppers, so much flavour and depth, and a lovely quality to it. Made me feel like I was a woodland creature in a Beatrix Potter book ❤️

A small little shop packing the most surprisingly good bread/cake. Unexpectedly good in flavor and texture. I would definitely come back here multiple times. The man behind the counter is cute too!
