"Ramen512, a laid-back spot wedged between a Jet’s Pizza and a Randall’s supermarket in a Cedar Park strip mall, stands head and shoulders above many of Austin’s other ramen restaurants thanks to its rich, nuanced broths and perfectly cooked noodles. The chicken-based shoyu is a crowd favorite, and the smooth broth with a touch of dashi, medallions of pork belly, and briny strips of nori all justify that reputation. But if you’re a ramen purist, their tonkotsu broth has a deep pork flavor and a velvety texture. And grumble as we may about the drive, we’re still out here making it. "Hosting a final Austin pop-up for ramen project Monty Paitan on Monday and Tuesday, November 18 and 19 from 5 to 9 p.m. each day; the pop-up's menu includes the Duck and Shroom (a duck paitan ramen with mushrooms, duck breast, and confit duck leg), the Garlic 4 Ways (also with that duck paitan and garlic roasted, chipped, and raw), and ajitama deviled eggs.
