A Thursday evening with my Ma... the food was delish; highlights for me were the Billington mushroom tart, the Buddle Farm Cauliflower Soup and the Granny Smith Apple dessert. I have shared all the food pics in order of menu. We didn't have the supplement dishes as really wasn't necessary. Good value spot. Two comments - sadly was not warned that the Roscoff onion fritter was super hot, and the knife for the Lamb dish was too cumbersome (and heavy), for such a delicate cut. Staff were friendly and attentive, without being fussy...ambience was perfect, in fact I was pleasantly surprised how busy the place was.

My husband and I can confidently say that etch. is the best fine dining restaurant we’ve experienced in Brighton so far. We booked the tasting menu with wine pairing, and every course was exceptional. The food was outstanding, beautifully presented, and full of flavour, while the service was warm, attentive, and truly professional. A wonderful dining experience from start to finish - highly recommend!

We came over valentine's weekend and had the tasting menu. There were a lot of courses! Food is high quality and presented beautifully. They also catered for my dietary requirements (pregnant) and acknowledged my partner's birthday which was nice. Service got a little slow towards the end of the meal when we were ready to leave.

Absolutely incredible experience at etch. The food was unreal, each bite was so well thought through and presented beautifully. The service was impeccable and the ambiance lovely. One of the best meal’s I’ve had in a long time!

Having been to Etch before this time we decided on a guest chef evening. We had been to Glynn’s restaurant in Birmingham so it was the perfect pairing. Superb evening began with cocktails in the downstairs cocktail lounge before being escorted to our table. Chefs introduced each course and it was nice to hear both Stephen and Glynn talking about their dishes. High quality ingredients, superb presentation all led to the most exquisite meal. Each dish beautifully styled, tasting divine, perfectly balanced. We didn’t do the wine flight just a couple of glasses of our favourite Nyetimber English Sparkling. Was such a nice evening and both chefs came out throughout the evening to chat to tables and to say goodbye at the end.

Having eaten at a 2* restaurant recently I am honestly surprised Etch is yet to receive at least 1 as to me the food was significantly better and presented in such unique ways.Everything was done to perfection. Staff, wine, ambience & food.Side note, even the toilet experience was excellent - the only Japanese toilet in a Brighton restaurant as far as I am aware. I’m excited to return.

Superb evening at Etch celebrating our wedding anniversary. Everything was perfect - food, drinks, service and ambience all 10/10. Food was incredible, every dish a culinary delight. I had the soda drink flight, a fantastic option. Never had such creative and delicious non alcoholic drinks. We were lucky enough to meet Steven and chat to him as he was serving some of our courses. What a nice guy :) hugely talented and down to earth. Will be recommending Etch to all our family & friends - and we’ll be back too!

Sensational. Visited for an anniversary dinner, and we were hugely impressed by the quality of the food. I'm not always a fan of tasting menus, but it was perfectly paced and sized. I love that they're not trying to do anything too weird and wacky with their flavours. The menu consists of incredibly high quality ingredients, accurately seasoned, perfectly cooked, and paired beautifully with other flavours. The chalk stream trout, beef, and chocolate dishes will stay with me for a very long time. Really liked the wine list as well. Some rarer and slightly obscure options, with a great selection by the glass. V v highly recommended.

What a find this place is! This is food about as good as it gets and the menu is ever changing based on what is locally available. The menu is simple and perfect, a choice of a 6 course or 8 course tasting menu; with a wine pairing option. They will happily alter to suite vegetarians etc. Everything we had, from a light broad bean and mint velouté soup, 20 minute sugar/salt cured fresh mackerel blow touched to crisp the skin, local beef and two deserts was outstanding. The staff were very professional, knowledgable and helpful. Decor is modern, clean and very attractive. There is absolutely nothing I can say negative about this place. Apparently others feel the same way, it is becoming extremely difficult to get a reservation. Interestingly the kitchen is open and a hive of activity. Steven Edwards (an award winning British chef) and his team clearly know what they are doing and are not afraid to experiment and surprise. For example; bread is a light, warmed brioche bun with a glossy Marmite glaze. Absolutely stunning, especially considering I do not like Marmite! My wife, daughter and me spent a very enjoyable 3 hours dinning at Etch and left very happy and pleasantly surprised. The 8 course tasting menu is not over indulgent, just right for anyone with a normal appetite. You may have noticed all my reviews to date on Yelp have been 5 star, this is deliberate. Life is too short to focus on that which does not make us happy. This is why I restrict my reviews to those things/places that make me happy and appreciate life. Sure, I have been to some really awful restaurants, but, like I said, life is too short to spend time thinking and writing about them
