A First Look at the Massive Winery and Restaurant That Just Replaced Govnr’s Park | Eater Denver

"Founded in Littleton in 2014 by a group of Colorado winemakers and restaurateurs intent on using grapes from smaller growers nationwide to produce wine in an urban setting, this new 11,000-square-foot location combines production and hospitality with a tap room, tasting room, retail shop and on-site winemaking (including sparkling wines that are riddled downstairs). The tap room—entered from the corner of Logan Street and 7th Avenue and located in a former dry cleaner next to the old Govnr’s Park site—serves a regularly expanding range of wines on tap alongside charcuterie and cheese boards, bruschetta, ceviche and crème brûlée; the adjacent tasting bar offers five-wine flights for $12 (fee waived with a bottle purchase). On-site bottlings will include varietals such as Cabernet Franc and the BlanCo. White Blend (made from Palisade fruit), and the operation’s three wineries will crush roughly 130 tons of Colorado grapes this year while also sourcing fruit from California, Washington and Oregon. A Littleton Winery Is Taking Over Govnr’s Park Tavern | Eater Denver

"A Littleton-based winery expanding into Denver by taking over the Logan Street space at 7th Avenue and Logan Street and planning to open a wine bar and restaurant by late summer. I've been to Carboy Winery many times — it has a cute vibe inside, a great outdoor patio and OK wines. When it comes to food, I’ve usually stuck to the charcuterie in the past, but I recently tried the burger and it was fantastic — what a great find on the menu!

Great spot to sit down and enjoy a glass of wine with friends. Their red sangria was pleasantly sour. My friend liked their slushie too, very refreshing on a hot June day. Fries were crispy and fresh. We also liked the bison carpaccio. My only complaint is that they didn't have any paper napkins on the tables, nor did your food come with it. It was a little unpleasant to not have that. It would've elevated the whole experience. Great service. Will come back.

Carboy is the absolute best if you are in Cap Hill and looking for a chill spot to have a glass. There Happy hour is so cheap if you and a friend are just looking to hang for a couple of hours. Noel my server, was the perfect sommelier. She was so knowledgeable about the different tastes of the wines. And the baked goat cheese is definitely a recommended.

I went for happy hour with a girlfriend. I had a happy hour rosé and the crispy spicy tuna bowl. The food was delicious and the wind refreshing. Noelle was our server, and she was great! Definitely coming back.

I love this place especially since in my daughter’s neighborhood. I go whenever I visit Capitol Hill in Denver. I love the food! Also happy hour with the charcuterie board and a bottle of wine. Carboy winery is so delicious!! They have the best sangria in the state! And I have tried a lot of them before. There is plenty of seating--or seating options with inside and outside seating. Very fast and friendly service. Have been here plenty of time because of their sangria. Love it here!

Awesome atmosphere! We got some burgers, a red wine flight, and a couple of glasses of wine. There were a lot of wine options, so the flight worked out well. The Colorado red blend was one of my favorites. It's a great place for a date and there was some outdoor seating that would have been good as well.

I have been a member of their wine club for some time and it is always a great time! I love their tasting events for wine club members during their releases and appreciate the perks. I have brought many friends for wine nights and it is a great spot to work outside while enjoying some tasty wine and snacks. They also give members discounts on growler refills which is great, especially to gift friends and family who are visiting during their stay. I am a loyal Carboy visitor for sure!

My friends and I stopped in for lunch after the Denver Botanical Garden. We were able to find street parking right out front. It was not too busy midday, no need for a resy. Its cutely decorated. We walked in and were greeted pleasantly by Ayana (sp). Its actually a pretty large place. Lots of outdoor seating, a second room probably for events, and the main seating area. There's even a counter where you can buy items from there kitchen. I also noted a calender of events. They had a live music night, cool. Food - I had the Cesar salad. It didn't even need protein. It was the perfect size for lunch portion, not too heavy. My friends ordered the exact same but with different proteins. One said it was slightly over salted. But I was fine with it. I also got to try a bite of the feta dip they ordered, which comes cold, but is quite tasty. And a bite of the truffle fondue, which is wonderful. I only wish it came with a tray of veggies instead of carbs, but that's not there fault. Service - Ayana did it all. She was the busser, server, bartender, and hostess. Talk about double duty. She chatted with us a little after out meal. Had a nice warm smile, provided good service. I enjoyed myself, I'm sure this business will continue to do well.

Carboy Winery offers great service, good food, and some nice wine selections. Our Denver friends are members and huge fans of Carboy. We were here on a Friday evening and the place was full We ordered some charcuterie boards, deviled eggs and the burrata. I absolutely devoured the burrata. It was really good! My husband enjoyed his wine flight, which gave him the opportunity to try 4 different wines. They were all local Grand Junction grown grapes. Carboy has a nice vibe with super friendly staff, so definitely a must as a spot to check out in this area.

Pretty good winery. Getaway packed and there are a variety of cocktails and wines. I just had a glass of pinto noir and the spinach feta dip winery snack. My buddy got the red wine flight. Overall all was good and ita a cute little spot across from Trader Joe's. They host some good specials and I would love to come back and try more of their menu. Great stop in when in Logan street and they have parking lot parking which is very nice.

This has been such a great neighborhood go-to. I had not been in a bit and there were some amazing new menu items. The Deviled Eggs, Baked Goat Cheese, and Peppers were delicious and gluten free! I love their patio on nice days as does Ace The Restaurant Dog. Kelly who was our server treated as like a king. I can't wait for our next patio date!

I've tried Carboy before when I went to the Rose Summer tasting event a couple years ago but this was my first time trying them as an outing that's not an event. Vibe: we went around 2pm on a Friday (day after thanksgiving) and there was only one other table there. It was a very laid back vibe for sure which we like. Food: we got the seasons of 92 cheese platter. Really good selections! Everything was fresh and we enjoyed it all. The wine and seltzers we tried were all very good! Service: pretty good! Ayana was super Friendly and knowledgeable!

Another great time at Carboy. We went to pick up our wine club order and some lunch while we were there. My husband ordered the lamb French dip which he enjoyed even though the au jus was overly salty. The mixed greens side was a big hit with the sandwich. I ordered the burrata and was very happy! It was well balanced with the different flavors and the olive oil was perfect! Of course, I had to order a glass of wine since we were there to pick up our wine order. I chose the Red Blend (Horse Heaven Hills) and it was a great pairing with the greens and burrata (and bred of course). We are happy to support this local winery and the food and service is always wonderful! The location is great for us and it's such a modern rustic ambiance with service from friendly and knowledgeable staff.

Fun winery and place to grab a drink and a bite with friends! Carboy has indoor and outdoor seating, though their outdoor seating is larger. Dogs are allowed on the street patio portion. They have a nice selection of wines and bites. We got a Cesar salad and burrata to enjoy and got a mix of white and red wines. Definitely recommend to anyone looking for a good winery that also serves food.

Be selective of whom you give your love to... and this little gem would be my daily, weekly go to spot and favorite local winery if I lived downtown. Comes as no surprise it is a nice welcome when I venture down here. It is beautifully decorated with wood surroundings that is like a big warm hug when you walk in. So why would you even bother to leave??? Staff is friendly and service wa super fast. The menu has wonderful offerings. Had a glass of the pinot noir and it was perfect with the lamb meatballs, tuna sashimi and ricotta, apple pancetta bruschetta. Just enough to tie us over before a visit to the Blossoms of Light. Would definitely be back to try the rib sliders and everything else I can stuff my face with happily. If it wasn't for the parking, I would crush on this place forever. I despise downtown parking and this pushed my limit. If you manage to snag a parking spot in the back lot, you deserve two bottles of wine or several wine flights. My advice, just park your butt here until traffic dies down. People who love passionately are meant to be loved passionately. You can feel the love at Carboy Winery but I'll go crush deeply on you Carboy at your Littleton location!

Had a great meal but be careful, drinks add up real fast lol. The wine is on tap! I do not recommend the Cobb salad as it tasted like a fancy house salad but the additional salmon was only $4.00 so that's a plus. The bartenders were incredible and the happy hour prices were ideal! Will definitely be back!!

So I just got back from lunch with a friend. Carboy has a patio and dine in. At 11:00 am we were the first one. Simple decor and the bar area. The two and four tops were located along the front of the bar. Eagles eye view of their promising bar! Guess what? I totally forgot to take photos of the bar. I haven't talked to this friend in a while I got excited! We tried their Meatballs and their charcuterie board. Both were good! The meatballs were yummy! Service was great.

I loved this winery. Be sure to take advantage of the happy hour which as far as I could tell was on everyday from 3-6pm. For $30 we received a bottle of wine and a charcuterie board which was delicious. The sunny day made it better where we were able to sit outside but what made it even better was seeing all the dogs walking past or sitting with their owners. They seem to be dog friendly plus there's a park right across the road. I'd definitely love to come back again and would be recommending it to friends to go too. Social distancing is enforced which is also awesome to see!

Let me start off by saying that I am a regular at Carboy (fortunately and unfortunately ), I feel like that's important to say especially before giving a raving review. Carboy just has this vibe about it - from the beautiful wood surrounding to the gorgeous light fixtures - this place is just great. Their happy hour specials are perfect for a girls night. I say that because when my sister and I were here recently, it was pretty much straight up just girls sharing charcuterie boards and bottles of wine. But, what's wrong with that! Their best happy hour special has to be the charcuterie board and bottle of wine for $30. It's also a perfect date spot - which one of the servers did confirm that he either sees a girls night or first date situation with the clientele. So, grab your best friend or ask out that app boy/girl you haven't met yet and head to Carboy!

Had a great time at the recent Carboy winery member appreciation event. The location is close to a lot of great restaurants so you can make a night out of a visit. Many of their wines use grapes grown at the winery in Palisade but also vineyards around the country. This is a gem in Denver with relatively affordable wines local to Colorado.

We catered an event with Carboy and had an excellent experience. The communication from the staff was top notch. The food was delicious and they even curated a list of tequila's for our guests to try. Additionally, they had one of their knowledgeable bar staff be able to give us a "history" class regarding the different types of tequila's we were tasting. All in all, a great event in a fantastic place. Kudos to Caitlin Peterson for helping support!

I am officially declaring Carboy Winery as the ultimate cure for the Sunday Scaries. Tons of outdoor seating, QR code menu, an extensive wine list, friendly staff, tasty snacks, strict COVID precautions...what is not to love! I went with the Carboy Red Blend and it was incredibly smooth and easy to drink. The chocolate pots de creme was also amazing. I am honestly not sure what a pots de creme is, but I can confirm that Carboy's is rich, chocolate-y, and absolutely delicious. Although inside seating is not currently on option, the interior has a great, rustic ambiance. I will definitely be back soon to try more Carboy wines, charcuterie boards, and craft cocktails.

Came here on a Friday afternoon with my girlfriend for some wine tasting. You get 5 different pre selected wines. Wide range of rose, white, and reds. The server was great and was able to explain the wine in detail. We had an extra glass and some burrata when the tasting was done. It was a wonderful afternoon. You might consider reservations on the weekends or nights as I've walked by and it looked very crowded, but when we went there were only a couple of tables. I've been to other tastings in Denver where you get a lot more wine for the same price- only reason it is 4 stars instead of 5.

My parents and I stopped here for some charcuterie and wine. We loved the charcuterie platter and all had the Featured Wine Flight, which was top notch (the Pinot Gris is to-die-for!). Although the menu is slightly limited as far as entrees go, they do excel in their wine selection. I'll definitely be back to try a happy hour :)

I really enjoyed my experience here; especially as compared to my lackluster experiences at Logan Street down the block. The space is well done, cozy without being cramped. It is seat yourself/first come first serve but we were able to sneak in at the bar. Given the nature of the food, it doesn't seem like most people were lingering for too long after their meals. The bartenders were friendly and funny and ready to offer suggestions. We ordered house wine which was good, the Red Rocker board, and the burrata. The burrata was awesome! Decent serving size for the price and comes with flavorful pesto and crispy bread. The board was good although the featured meats and cheeses that night weren't my favorite. The pickled veggies and the mustard were great- super spicy! I am excited to come back and check out more of what this spot has to offer because from what I can tell, they're nailing it.

I love this winery! The wine is truly the top in Denver. I decided to join their wine club because I couldn't find my perfect match. I had joined almost every wine club in town and this was the first one where I really enjoyed the wine vs all the other perks. Their wine in events can't be beat either for $5 and sitting on their patio in the sun is one of my favorite pass times. Always a great experience and their food is actually pretty good too. Nothing super fancy more small bites but everything has been delicious that we've gotten.

We have passed by this place multiple times. It wasn't until our friends who are members invited us to join them one day for a drink that we discovered this gem! Be sure to go during happy hour. We got the board and bottle for $30 after we had already sampled the white wine flight. The white wine flight was refreshing but the house red wine that came with the board and bottle special was delicious and just what we needed in a chilly December day. The charcuterie board had a great variety but I wished there was more of a customizable option since ours didn't have cheese but our friends did and we didn't want some of the other meats they had so, we ended up with the all meat board.

Basic as F. Yet - I love meeting people for HH here. They have their house tap wines and boards before 6pm for like $25. I actually love their variety of board offerings from cheese to meat to veggies. While I think Postino might be slightly nicer with a similar concept - Maybe it's my bias on bottles vs tap.... I love coming here and I'll be back again and again.

We just keep having the best experiences here! From the wine and food to the service and hospitality, this place has it all perfected. We have split 500ml splits of the Cab, Pinot noir, Vin '49, and Syrah. I prefer the cab, but they're all unique in their own way. For our last visit, we had the octopus to start. I don't love seafood, and I don't love seeing tentacles on my seafood, BUT THIS WAS AMAZING. It was prepared so perfectly that the texture wasn't rubbery, but tastefully chewy. The flavor was to die for. I can't believe I am now a fan of octopus thanks to Carboy. The owner came out and chatted with our table for a bit and sent us a complimentary plate of scallops. They melted in our mouths and were simply divine. The pesto sauce the scallops were served with were also delicious and I found myself cleaning the plate with other appetizer items (like the carrots and cauliflower and the brussel sprouts!). Every plate that left our table was scraped clean. For dinner I had the filet rare-medium rare with fries. The steak was topped with a pad of butter and served next to a bed of lettuce. The steak was cooked exactly to my liking, and I am very picky on how my steak needs to be prepared. Judge if you want, I know what I like. The fries had great flavor and my friends had fun stealing them off of my plate while I savored every bite of my steak. Come here for happy hour with friends and order a flatbread or meat/cheese board with a glass of wine. Come here with a first date to sip on some wine. Come here with your parents to impress them. Come here with your partner for a romantic evening. Whatever the celebration, you need to spend it at Carboy, it's just that good.

Today was SUCH a disappointment! Service, maybe I should say "Lack there of", didn't even happen! There was a really nice guy who cleaned the table for us, then the bar staff was pure crap! Two people went straight to the bar and got their drinks ordered and paid for prior to anyone bringing water to us! Which that never came! There was one blonde young lady who was working her butt off behind the bar, while the other was talking to her friends for 10 minutes, while we just sat there! Literally considering canceling my membership over this!

My first time at this location and was not disappointed! The service was great and although I chose to dune outside they were very attentive and checked on me. Great wine and fantastic charcuterie boards! I loved the mix of music playing outside as well. A definite must to have on your winery bucket list!

I was excited to come here because 1) I love wine 2) the decor looked like my aesthetic. I came back in April with my girls (5 of us). Social distancing was still in full effect and we didn't have a reservation so there was only space inside. As we walked in a group walked out so we lucked up on their vacated tables (2 hightops). The hostess sat us at ONE of the two tables. No explanation on why she only gave us one table (made for 2, 3 max) for 5 people. But we sat and said nothing. Next we met our server. Idk if she was ready to be off, having a bad day, or if she just didn't like the jovial enjoyment of our group, but she was immediately cold and off-putting. We all noticed, again said nothing. We ordered wine flights and before drinking realized it was very warm. Another table commented about it also. We asked our server about the air and she said it wasn't on because the door was open. One door. Mmkay. No she wasn't a Black grandma worried about her grandkids letting her air out in case you were wondering. We said nothing in response, but after the question we noticed she disappeared further proving she didn't want to serve us. A good amount of time had passed and she was no where to be found. Another server came to check on us. By this time we decided to rush ourselves. Between the cold then disappearing server, the cramped table, and the heat, we'd had enough. We downed our wine as quickly as possible, paid with our apparently new server, and left with a bad taste in our mouths. I honestly don't remember the wine. All I remember is how unaccommodating, uncomfortable, and unfulfilling the experience was. The second star is really just cuz im nice. I will likely never return. For good wine and good vibes head to Infinite Monkey Theorem.

This is such a cute wine bar! Lots of delicious wine and snacks. I came here one evening after work with some friends and we tried a couple of the wines and a rose slushie. I am and always will be a big fan of a rose slushie, so that was amazing! We shared the "Ricky Bobby" cheese board, Burrata bruschetta, and herbed ricotta bruschetta. The Ricky bobby was good, although I don't think the amount of food that you get on the board is quite worth $16. Both of the bruschettas though were SO great. The cheeses were perfectly creamy and the toppings were fresh and plenty. Such a great place to meet friends for a glass of wine and appetizer, I can't wait to come back soon.

They have indoor and outdoor seating. Variety of food selections. Not so much variety on non alcoholic drinks which is understandable. I just got the pot de chocolate crème for $4 which was a tiny tiny pot of yummy chocolate! A-OK

What's not to love? Patio seating on a gorgeous summer night. Dogs allowed in a section on the patio. All of the waitresses we met were friendly, helpful, and knowledgeable. Use your camera app to pull up the menu (visible at night and saves paper) The food was delicious. The wine was amazing. Their stain remover works wonders! Currently I can't think of a better atmosphere from any other restaurant I've been to recently.

Decent wine but great service! We came from next door and they had already done last call but less us grab a glass anyways. The bartenders were super friendly and I'd go back just to chat wine!

Love carboy! Tried the cheese board with such a wide variety of goat, sheep's milk, and cow dairy cheeses. Some soft and spreadable, some harder. Accoutrements were on point with salty almonds and sweet figs. A glass of house red wine was the cherry on top- next time it'll be a carafe!

Wine flight and charcuterie, limited menu. So yummy. Outdoor seating, dog friendly. Can have your dog outside. Offers dessert. If you want a big meal, this is not the place for you. Waiter accidentally spilled wine on my friend's pants, and immediately came back with a full new glass of wine and amazing stain remover that worked instantly. They sell this at the restaurant, too!

We lucked out with parking, but I imagine there are times when it could be a challenge. Plenty of indoor and outdoor seating. Some of the outdoor spots had umbrellas. They had three wine flights to choose from. Decor/ambiance left something to be desired.

Carboy excels at the basics--great vibe, knowledgeable servers, excellent food and drinks. The only drawback was a limited menu, although everything we ordered was excellent and a very good value. That said, it's a winery first and eatery second, so it's easy to get past. Strongly recommend the flights for variety and value and any of the charcuterie boards. Then, sit back, relax, converse and people watch while soaking in the vibe.

Wine is extremely overpriced, especially when you can go to Logan Street next door and get the same thing for much cheaper. We sat at our table at Carboy for 30 minutes while countless waitresses and waiters walked by with no recognition or apologies for wait. Ended up leaving and were never spoke to once. Went next door and were immediately served with friendly service

Recently had lunch here with a coworker, a bottle of red, I had a chicken curry sandwich with potato chips and it was very good. I really like the chips, they cut them long way , nice, crispy, salty I like the ambiance and when it's warm they have outdoor seating. Service was attentive

I live on the north side of Denver so I had never been here. Was on the south side for a work function yesterday and someone recommended Carboy. I had never been - and am typically not a huge pasta eater so I was slightly begrudged when I sat down and looked at the menu. My go to's are steaks and Mexican- so this was not my typical meal preference. The Chile rellano ravioli caught my eye. Pasta with Mexican flavors? I'm in. Well let me tell you- it did not disappoint! Wow. Delicious is an understatement. So unique. The flavors were so well developed. I came home and told my husband about it and cannot wait to go back just to have the Chile rellano ravioli again. 10/10. Great atmosphere. Everyone's food looks fantastic (3 out of 6 of us got the ravioli lol) - but the others looked delicious too. We will definitely make the 45 minute drive down to go here again. Great place.

From the phone call with Christina to the hostesses to the bartender Will, and the amazing chef Rabecca our experience was historical for the simple fact that this has been a difficult time for the world and my partner and I are celebrating our last month together which has been difficult and everyone here made it one of our best memories and I appreciate y'all so much !!!!!!!
