This was my second visit to Sabi Omakase, but my first experience with Chef Jan. I had high expectations after an impressive first visit three years ago—and I was not disappointed. Chef Jan, a young and relaxed presence behind the counter, brought a calm and welcoming energy to the room. But once he began preparing the dishes, he entered a different zone—completely focused and deeply respectful of his craft. It was clear he had both passion and humility. He emphasized letting the ingredients speak for themselves, saying he “only” presented and assembled them in their best form—and that intention came through in every bite. His approach brought a fresh and personal touch that distinguished this menu from the previous one, something I truly appreciated. It was also the first time I genuinely enjoyed mackerel—a fish I’ve never been particularly fond of before. That alone says a lot about his skill. Talent, dedication, and integrity in one’s craft speak far louder than superficial impressions. Chef Jan is a perfect example of that.

I dined here in April and it was one of the best evenings of my life. Truly. I had the pleasure of dining here alone and it was an experience to remember for a lifetime. Incredible atmosphere, service and food. I went with the juice pairing too which was outstanding, and definitely recommend for non drinkers or people who don’t want to get too drunk alone. Maizo took care of the service and, as always, a chat with her just makes you smile. She has a way of making you feel completely at ease — like you’re exactly where you’re meant to be. The omakase itself was outstanding. Every dish was crafted with care, and what really stood out was the chef’s deep love for the cuisine he represents. There’s a quiet intensity in how he speaks about his food — a true pride and devotion that comes through in every course and story. It’s not just dinner; it’s a heartfelt expression of craft and culture. If you haven’t been — go. Whether solo or not, it’s an experience that lingers, in the best way.

The best omakase experience I’ve had in recent years. If I lived in Oslo, I would frequent this place once a month. Everything, from the welcoming reception, drink pairing recommendations from Maizo, best quality seafood, to the interesting conversations with chef Airis. Experience is intimate, fun och frikking delicious. I loved this place so much I booked it asap for my birthday. I only selected a few photos because I didn’t wanna ruin the surprise for anyone. What an amazing experience and so far the best sushi I’ve ever tasted! All the different types of fish and cuts you’ll taste during the menu is unbelievable. I really enjoyed the evening at Omakase and to experience Vladimir’s passion for the work and how skilled he is. It’s clearly to see it’s a former world champion in sushi. I specially liked the fat belly tuna and the reindeer. This is a must try experience in Oslo if you love sushi.

Amazing restaurant from start to finish. One of the best meals ive had in all of Europe. The selection of wines for this tasting menu was amazing, the food as fresh as can be and prepared by two amazing chef's right before your eyes. Remarkable how much the quality and freshness can effect the final product in taste. Every bite was a treat, nothing wasted and all in a modern, clean and beautiful atmosphere with extremely attentive and thoughtful service. A must if you are in the area!!

We were warmly welcomed by a friendly sommelier and started the evening with a lovely glass of champagne. The 19-course menu showcased the freshest local ingredients, each dish crafted with meticulous attention to detail. The wine pairing was exceptional, featuring sparkling wines, sake, and white wines, with the standout being Krug Grande Cuvée 172ème Édition. After the meal, we enjoyed a remarkable Ichiro’s Malt & Grain World Blended Whisky from the Chichibu Distillery, perfectly rounding out the evening. Highlights included the tuna tartare with caviar, grilled and smoked sake, hirame, hotate, and the exquisite uni. The chef’s use of Norway’s finest seafood elevated each course, creating a perfect harmony of flavors. Sabi Omakase is a must-visit for anyone seeking an extraordinary omakase experience in Oslo.
