As someone who frequently travels to Japan and regularly explores sushi restaurants rated 3.5 and above on Tabelog, I consider myself quite demanding when it comes to omakase.
Before this visit, I honestly didn’t expect too much. Knowing that the head chef, Jan Markiewicz, is Polish, I assumed it might be more of a “Norwegian-style” sushi experience. However, I was completely proven wrong.
His passion for food, deep understanding of ingredients, technical skills, refined palate, and exceptional ability to identify subtle flavors were far beyond my expectations. It was only later that I found out he was born in 2000 — just 26 years old — which made the experience even more impressive.
The front-of-house manager, Maizo Kwan, who is from Hong Kong, also made me feel instantly at home, as someone who works in Hong Kong. Her professionalism, warmth, and attentive service were outstanding. She was knowledgeable, engaging, and took care of every detail throughout the evening.
The entire experience was delicate, thoughtful, and deeply moving. It reminded me that true passion for food transcends borders. This was also my first time enjoying sushi crafted by a European chef, and it truly broadened my perspective.
It made me realize once again how big the world is — and how great sushi can be found far beyond Japan.
