An extremely sophisticated culinary experience at this classic-contemporary Spanish restaurant. An amazing open kitchen which produces very elaborate dishes full of textures and bold flavors. We tried the steak Rossini and the Rack of Lamb which were memorable. The Chocolate Soufflé Saddle and the Tanzania Cocoa were superb. Service was impeccable. Definitely a must in Madrid!

Exceptional service from start to finish. The food and wine were absolutely top-notch, and everything was beautifully presented. We had a fantastic evening and truly enjoyed the experience. One small disappointment was that the tasting menu wasn’t available after 21:30 – it would have been helpful to know this when booking the table. Still, a memorable night and a place well worth visiting.

We celebrated my wife and daughter birthday there. The atmosphere and service were excellent. We ordered tasting menu. The food was perfect except the last dish , rock of lamb. It was not hot, barely warm, and totally tasteless. Overall, we had a good experience in this Michelin star restaurant.

An exceptional fine dining experience at Saddle in Madrid. From the moment we sat down, the service was polished and warm, and the tasting menu was thoughtfully crafted with seasonal, high-quality ingredients. Each course offered a unique combination of flavors and textures, but the absolute standout was the Garrucha red prawn with almond ajoblanco and green pod bilbaína — incredibly fresh, delicately sweet, and bursting with balanced flavor. It was a dish that alone justified the visit. Other highlights included the Line caught hake and Chargrilled artichokes, and we appreciated the creative touches throughout, like the nutmeg biscuit with fennel broth and the Grand Marnier Soufflé to end. The wine pairings were spot on, particularly the O’Morto A’Rocha Castes Blancas 2021. Highly recommended for anyone looking to experience Madrid’s high-end culinary scene with a modern, elegant twist.

Had the tasting menu here. 9 courses in total, the overall quality of cooking is good but nothing exceptional. They did use some really high quality ingredients; the tomato was very flavorful, and the sea bass we had was very fresh. However we were hoping to have at least one memorable dish but didn’t have any. The food just feels conventional. To name a bad one, the red shrimp tartare was strangely fishy, the fried head particularly. The service, on the other side, was impeccable. The staff took great care of us even with the language barrier. Their attention to detail is on par with some of the best restaurants in the US, if not better. The restaurant is located in a quiet neighborhood of Madrid and is beautiful inside, nice decor, well illuminated, with a cute little garden outside of the window.
