"Saddle is a tasting menu spot in Salamanca that’s versatile enough for any important event, from a romantic proposal to a 40th birthday extravaganza—just expect to spend at least a few hundred euros per person (high by Madrid standards). The bar area is sleek and sexy, but the dining room is the highlight, with geometric light fixtures hanging over the tables from wall-to-wall skylights. The dishes, like the garlic-topped Mediterranean red prawns, Caspian pearl caviar with blinis and crème fraîche, spider crab marinated in sherry, and aged beef shank deliver and let the flavor of the high-quality ingredients shine without excessive sauces and seasonings. Every course on this tasting menu is so phenomenal you’ll already be planning a return visit over the after-dinner coffee, where you can select your preferred beans." - lori zaino

"The name of this restaurant located opposite the Ministry for the Interior is an equestrian nod to the legendary Jockey, a famous name in the history of Madrid gastronomy, that once occupied the premises. In essence, and despite the more modern look, Saddle replicates the philosophy and excellence of luxury restaurants from days gone by, hence the impeccable service and levels of comfort which enhance superb contemporary cuisine that is built around classic recipes. The overall ambience is one of space, light and elegance, and includes several private rooms plus an inner garden. The classic-contemporary menu (with media ración options) is complemented by a tasting menu. The constant movement of trolleys (bread, butter, cheese, spirits etc) adds a further special touch!" - Michelin Inspector

"Madrid has establishments where food gets the sci-fi treatment—a centrifuged this, a spherified that—yet a dwindling number of restaurants offering Old World European luxuries like foie gras, caviar, and roasted rack of lamb. Enter Saddle, a restaurant so unabashedly classic (bread carts! leatherback menus! ambient jazz!) that it feels, ironically, fresh. This is an ambitious restaurant with a laser-focused kitchen that understands nostalgia as well as it does service and culinary technique." - Benjamin Kemper

We celebrated my wife and daughter birthday there. The atmosphere and service were excellent. We ordered tasting menu. The food was perfect except the last dish , rock of lamb. It was not hot, barely warm, and totally tasteless. Overall, we had a good experience in this Michelin star restaurant.

Had the tasting menu here. 9 courses in total, the overall quality of cooking is good but nothing exceptional. They did use some really high quality ingredients; the tomato was very flavorful, and the sea bass we had was very fresh. However we were hoping to have at least one memorable dish but didn’t have any. The food just feels conventional. To name a bad one, the red shrimp tartare was strangely fishy, the fried head particularly. The service, on the other side, was impeccable. The staff took great care of us even with the language barrier. Their attention to detail is on par with some of the best restaurants in the US, if not better. The restaurant is located in a quiet neighborhood of Madrid and is beautiful inside, nice decor, well illuminated, with a cute little garden outside of the window.

Saddle Madrid was one of the best dining experiences I’ve had! We had the tasting menu which was exceptional. Our favorites were the eel, prawn, lobster, mackerel, pumpkin flower, and rack of lamb. We also had the cheese board and good wine! The staff were exceptional. The ambiance was beautiful and I will now play birds chirping in my bathroom, lol. What really sealed the deal was the printed thank you and menu we received at the end! Thank you for a memorable dining experiences! Chef’s kiss!

Saddle in Madrid was outstanding! The staff’s attention to detail was top-notch, and the mushrooms and veal sweetbreads were next-level delicious. Can’t recommend it enough!

Had the pleasure of celebrating my birthday there. Everything from the start and the booking process, to the dinner itself was amazing and really well communicated. The food was more than excellent and the service in the private room was literally perfect, it was very well coordinated and very professional, yet very friendly and warm. Thank you!

Worthy heir to the old “Jockey Restaurant”, Saddle is very elegant but also modern and spacious. Their bar service is a nice addition with a very professional and knowledgeable bar manager. I appreciate the flexibility of options: course menu and a la carte. Very attentive service. Cuisine is in line with its Michelin star rating (as of 2024) with a good mix of classic and modern recipes, great execution and correct presentations.

Again a great experience in Madrid. The reduced menu can be challenging for people with food restrictions but for me it was amazing. The snails were superb and the zucchini flowers one of the highlights. Good wine list, the bread and the butter were fabulous. Alvaro helped us with a fantastic service. Congrats, a restaurant that honors the 1*
