An exceptional fine dining experience at Saddle in Madrid. From the moment we sat down, the service was polished and warm, and the tasting menu was thoughtfully crafted with seasonal, high-quality ingredients. Each course offered a unique combination of flavors and textures, but the absolute standout was the Garrucha red prawn with almond ajoblanco and green pod bilbaína — incredibly fresh, delicately sweet, and bursting with balanced flavor. It was a dish that alone justified the visit.
Other highlights included the Line caught hake and Chargrilled artichokes, and we appreciated the creative touches throughout, like the nutmeg biscuit with fennel broth and the Grand Marnier Soufflé to end. The wine pairings were spot on, particularly the O’Morto A’Rocha Castes Blancas 2021.
