The staff is very well trained and very professional. But still, Saddle Madrid was a huge letdown! The tasting menu was €185 per person, totaling 8 dishes including dessert. Each dish, including sauce and plating, was no bigger than the palm of my hand, and I was still hungry when we finished. More importantly, every single dish was extremely salty. After the third dish, I told the waiter to use less salt for the rest, but it was still salty! After 5 "tiny" appetizers, the main course finally arrived: "Catch of the day," which was a small piece of grilled grouper. Seriously, no bigger than the palm of my hand! And to top it off, the fish was bitter, and the sauce poured over it was flavorless... At that point, I didn't want to make any more requests. After the main course came a raviolo (Italian dumpling). The dumpling wrapper was half-raw (hard and thick), filled with mushrooms, and incredibly salty. Every single dish used mayo; maybe this chef couldn't design a menu without mayo? The problem is, does this restaurant really deserve a Michelin one-star price tag of €185?

Michelin star restaurants have it a bit hard as you come in with high expectations. We tend to appreciate really good food and we don't really need much pomp/ceremony. The food was solid not amazing. The best dish was a blue lobster tail served in a delicious broth with a bit of spice and some crisp vegetables garnishing it. It had a second portion which was lobster ravioli which were not as remarkable. The next best dish was the simple wide pasta with a butter sauce and fresh white truffles, but the truffles get most of the credit, the texture on the pasta was a bit uneven. The staff was just a bit too visible and not 100% on their game, a few times my place settings were put down backwards (spoon and knife on the wrong side) not a big deal but just a silly thing for a Michelin ⭐ restaurant to get wrong. The biggest disappointment was the main course. We ordered the Sole Meunière for two. While attempting to plate it table side, the server struggled as the fish was not fully cooked and was not coming off the bone. She finally had to apologize and take it back to get it further cooked. It returned a while later - already plated and just luke warm. A pretty disappointing presentation vs hot off the bone from the sizzling plan. The deserts were quite good, I am an excellently prepared souffle. So a few good dishes and a few big kisses, not up to the standard we expected and no apology on the main course other than a very frustrated seeming server.

Saddle is one of those places where you just feel well taken care of from the moment you walk in. The service is warm, professional, and makes everything easy. The French-inspired cooking is spot on—classic flavors done really well, no gimmicks. And the wine list? Awesome!

An extremely sophisticated culinary experience at this classic-contemporary Spanish restaurant. An amazing open kitchen which produces very elaborate dishes full of textures and bold flavors. We tried the steak Rossini and the Rack of Lamb which were memorable. The Chocolate Soufflé Saddle and the Tanzania Cocoa were superb. Service was impeccable. Definitely a must in Madrid!

We had an amazing anniversary dinner at Saddle and would gladly come back. Everything from the service to the ambiance was great, and the food was excellent of course. We order a few items a la carte and they were all delicious, especially the squid and peas, and lamb shoulder. The desserts were exceptional as well.

Exceptional service from start to finish. The food and wine were absolutely top-notch, and everything was beautifully presented. We had a fantastic evening and truly enjoyed the experience. One small disappointment was that the tasting menu wasn’t available after 21:30 – it would have been helpful to know this when booking the table. Still, a memorable night and a place well worth visiting.

We celebrated my wife and daughter birthday there. The atmosphere and service were excellent. We ordered tasting menu. The food was perfect except the last dish , rock of lamb. It was not hot, barely warm, and totally tasteless. Overall, we had a good experience in this Michelin star restaurant.
