The 17 Best New Restaurants In NYC - New York - The Infatuation

"Saint Urban, a new Flatiron restaurant from Syracuse, flips the typical fine-dining script by building its tasting and prix-fixe menus around wine, not the other way around. Each month highlights a different region, like Tuscany or Southern France, with pairings ranging from $90 to $410. (The $175 Reserva is a sweet spot; pair it with the $188 seven-course tasting.) The flavor-packed dishes—from June’s Spain menu, for example—might include milk-fed pig with sherry-pickled peach, turbot with arroz negro, and a crusty rye sourdough. They're all very good, but it’s the wine that takes center stage. In the former Veritas space, Saint Urban's beige room and suit-and-tie-wearing staff let those wines speak for themselves. One sip of a floral garnacha or fruity 2001 rioja and you get it. This isn’t just a meal, but a mini-tour through a wine region, one elegant glass at a time." - Bryan Kim, Molly Fitzpatrick, Willa Moore, Will Hartman, Sonal Shah

NYC’s New Restaurant Openings - New York - The Infatuation

"Saint Urban, a restaurant that got its start in Syracuse, is a tasting menu spot in Gramercy. The food changes every month to reflect the cuisine of a different wine region. For example, a Côte de Beaune-inspired menu has a parmigiano custard with morels, and roast chicken with beets and rhubarb. The seven-course tasting is $188, while a four-course prix fixe costs $148. Wine pairings start at $90." - will hartman, willa moore, molly fitzpatrick, sonal shah, bryan kim

Saint Urban's menu changes monthly—and stellar wines lead the way - Review - New York - The Infatuation

"At most restaurants where the thickness of the plush white tablecloths can be measured in centimeters, and the staff wear full suits and ties, the (probably excellent and definitely expensive) wine is a complement to each composed course. Saint Urban—a restaurant that recently arrived in the Flatiron from Syracuse—cleverly flips the script. Here, the tasting and prix-fixe menus ($188 and $148 respectively) change each month to highlight a different wine region, like Tuscany or Southern France. The wine pairings range from $90-$410 (we suggest the $175 Reserva pairing), but whichever you choose, expect stellar wines at good value, poured before each dish arrives. The experience is like a mini tour—of Spain’s wine-growing regions, for example, with dishes that might include milk-fed pig with sherry-pickled peach, turbot with arroz negro, and a crusty rye sourdough. They're all very good, but it’s the wine that takes center stage. photo credit: Sonal Shah photo credit: Saint Urban photo credit: Saint Urban Pause Unmute Saint Urban is fittingly located in the former home of Veritas, a restaurant similarly known first for its wine collection before it closed in 2013. Now a beige room with loungy music, the environment might seem uninspiring at first. But it’s all cleverly designed to melt away, allowing you to focus on how your garnacha smells like an entire bouquet of flowers, or how that fruity 2001 rioja butters up the roast lamb on your plate. photo credit: Sonal Shah photo credit: Sonal Shah photo credit: Sonal Shah photo credit: Sonal Shah photo credit: Sonal Shah Pause Unmute" - Sonal Shah

What Are the Best Wine Restaurants in NYC?

"I asked our restaurant critic Matthew Schneier to write about Saint Urban, a new place that takes a wine-first approach to service; the coverage frames it as a spot intentionally oriented toward the minority of diners who care deeply about wine and positions wine as the central element of the dining experience." - Grub Street

Saint Urban is easily one of Manhattan’s best new restaurants. With a rotating monthly food + wine menu, the restaurant evolves with time. Saint Urban has a 4 course or multi-course (typically 7+ courses) menu that boasts wine and culinary traditions from the world’s most iconic wine regions. Chef and Sommelier owner Jared Ian Stafford-Hill doesn’t disappoint with this fine dining casual concept. Add it to your list if you haven’t been. Thank me later!

We celebrated our anniversary at Saint Urban and it felt special throughout; the service was the definition of hospitality and the ambiance was romantic. We were not very hungry so opted for the 4 course dinner which still left us feeling very full. The plates were elegant and savory, and the extensive wine list will satisfy even the most adventurous of palates. Highly recommend for special occasions or when you just want to feel fancy.

Google
We had the four-course tasting at Saint Urban and were both beyond impressed. The cooking is seasonal and refined yet genuinely comforting. Although pairings were available, the sommelier guided us to a beautiful French white that carried the entire meal. The wine list is outstanding and unusually well-priced. We envision a Michelin star in Saint Urban’s future. 5/5

Google
You can never go wrong with a place like this. You’ll leave here knowing it was one of the greatest dining experiences you ever had. Michelin star level of everything. Better than some Michelin places I’ve been. If you are just walking by you might miss the door or maybe realize you’ve passed it before but that’s because if you know what you’re looking for you’ll find it. They made an extra effort to accommodate my fish allergy with the sommelier never making me feel stupid for not knowing the fish on the menu was indeed a white fish. That was much appreciated and just one of many ways they exemplified excellent service. Had been to their previous location upstate a few times. First in time in NYC and they have only gotten better. Give your sommelier a price and let them do their job and give you the best wine/dinner experience you’ve ever had.

My favorite place to eat in NYC right now! Can you imagine a restaurant you want to return to every month because the menu and wine pairings change to highlight a classic wine growing region? And the dishes are so creative and perfectly executed that you’re excited to see what’s next instead of missing your favorite dish? Like - I can’t miss July because it is Tuscany month and the pastas are to die for. How can I miss May and not get the White Burgundy pairing!? I’m already planning my fall dining around Red Burgundy (Cote de Nuits in October) Truffles (Piedmont in November) and Bordeaux in December! It’s so rare to find a place that serves exceptional, DELICIOUS food AND has the greatest wines of the world open which not only compliment the food but are themselves enhanced by the dishes which were created with the wines in mind. How grateful to be excited by a restaurant!

Google
Welcome to Burgundy, oh my wow! We ate here for the first time ever last night and it was beyond incredible. The recommendation came from a friend’s friend who was a fan prior to their move and suggested it for their birthday. The friend even called in a champagne toast to start which was so fun and kind of them. We chose the 8 course with wine pairing and could not have been any more perfect. We were so deeply savoring each dish, that regrettably there are barely any photos to share, but honestly I hope everyone else has the same experience and forgets anything past the table exists. Just live in the lobster with sunchoke and chestnuts paired with (what is now one of my favorite wines) a fabulous Pinot Blanc or the partridge and squash that could not have been any more decadent. I guarantee those are worth it. I was surprised by the sea beans, having never had them before, and they were a perfect pairing with the urchin. We ended sipping on L'Abricot du Roulot and honestly it was a completely perfect evening.

Google
Saint Urban visits a new wine region every month with an ever changing regional menu in the old Veritas space. The food is well executed fine dining and the wine pairings exquisite, making for an overall transportive experience. Service was excellent and it was a pleasure to chat with Mitchell about my favorite Spanish wines. The space is beautiful and the food delicious.

Google
Well done to Saint Urban after their recent opening. Food, ambience, staff are all wonderful. The dining room was calm with tables of 1-6 people and everyone well taken care of. Love the regionally-inspired rotating monthly menu. The wine list is impressive with multiple options for pairings with the dinner and tasting menus.

Yelp
The place reminds me of old school fine dining days - tablecloth, proper silverware, more attentive service, etc. The food is your standard French driven presentations and techniques. The menu changes monthly so it may be different every month but overall the flavors were fine but nothing spectacular. The wine list is where they make up the points lost for food though. It is quite extensive and you will most certainly be able to find something to drink. Go and open a bottle and do the smaller menu to complement the wine. It's more Wine than Dine.

Yelp
Saint Urban - NYC From the moment you step into Saint Urban, the experience is nothing short of extraordinary. The space, designed by Bentel & Bentel, strikes the perfect balance between dynamic energy and soothing elegance--beautifully conducive to conversation while building anticipation for the courses ahead. We enjoyed a four-course tasting menu, beginning with an amuse bouche and culminating in an array of delicate petit fours. Each plate was a work of art--meticulously composed, beautifully presented, and bursting with layered flavors. I especially loved the inventive monthly theme; our evening featured a creative incorporation of tomatoes, including a surprising and refreshing tomato-citrus sorbet that was as inventive as it was delicious. A graceful tableside pouring of sauce over the entrée added a touch of ceremony, while the menu's clever design--with its cover announcing the monthly theme and enticing choices for each course--heightened the excitement. And the bread... perfection. With its crisp crust, mellow tang, and paired with butter so good it could have been a course of its own, it set the tone for the meal. Dessert was divine--a sweet finale of exquisite bites, including a homemade marshmallow that was pure bliss. The wine list is extensive and thoughtfully curated, with the sommelier offering warm, knowledgeable guidance that made selections a delight. From artistry in the kitchen to attentive, engaging service, Saint Urban delivers an experience that is refined, creative, and truly memorable. I can't wait to return to discover the next monthly menu.

Yelp
The food and presentation of dishes was superb. Each better than the other. Flavors mixed in rainbow of tastes perfectly planned by the chef to impress the palate with each bite. We loved the idea of new menu every month and wine pairing! Serviceman were attentive and knew every detail of each course. The restaurant location was strategically chosen in Gramarcy to attract the your crowd. Thank you for a great experience!

Yelp
Go for the wine, stay for the food. Saint Urban is a jewel box in every way. Relatively small -- but not cramped or crowded -- and beautiful with one of the very best wine lists and amazing food. Each month they focus on a different wine region which is reflected in their menus and the associated wine pairings. They also have a more flexible menu option and a 10,000+ bottle wine list.

Yelp
New modern French restaurant from Chef Jared Stafford-Hill. Previously, he had a restaurant of the same name in Syracuse, where he received numerous awards, including one from Wine Spectator. He's not new to the city, having previously worked at some of the best restaurants in NYC, i.e. Gramercy Tavern and Hearth. This restaurant was highly recommended. First off, the restaurant is stunning, with 'stars' hanging from the ceiling and a big bouquet of flowers in the dining room. The restaurant is advertised as fine dining with a focus on wine, an understatement. I went with the premium wine-tasting, and it was one of the best wine pairing I had in a restaurant, which complimented beautifully with the wonderful tasting menu (see menu and food photos). So many nice, pricey wine, reasonably priced, imo. They could have easily charged more. From the wonderful tasting menu: Meyer lemon-cured Danish hiramasa with green almonds and favas Halibut veronique with muscat grapes and white asparagus 4 year-aged parmigiano custard with morels and green garlic (chef's signature dish and one of the best restaurant dishes, imo) Heritage chicken on a spit with chiogga beets and rhubarb Beef duo bourgignon with heirloom carrots, lardons, chanterelles and cippolini Palate cleanser Chocolate confit paris brest poached apricots and almond praline Petit fours Service - wonderful Highest recommendations : 10 Saints

Yelp
My husband and I came here upon the recommendation of a former sommelier at Le Bernardin. We did the 7-course tasting menu and each tried different wine pairings (the Reserve and Lopez de Heredia). Hands down the best wine pairing experience we've ever had, even as we've been to better-known fine dining restaurants. The service was excellent and the intentionality behind the wine pairing was remarkable. While Saint Urban has only been open for several weeks, it's the kind of meal that you'll be telling your family and friends about long after the experience. Don't miss out on this absolute gem!

Yelp
Potentially Incredible addition to the neighborhood. A very small restaurant where most everything has been very carefully considered, except for the guest experience itself (i.e., "kitchen noises" of yelling and screaming and berating and belittling and threatening and insulting)... The base concept is unique (every month they create different wine pairings to celebrate a different wine region, then they create different food menus to complement those wines)... If you can somehow manage to enjoy yourself through all the aforementioned obscenities and offenses, it could be fun and unlike anything you've experienced anywhere else; except for the fact they kept rushing and interrupting us; they stood over us with our next courses ready before we had even finished actually eating our current courses! My main complaint is these days we need to focus on kindness! Price was not worth the turmoil... If only there weren't all the ranting + rushing!

Andrew C.

Yelp
The food is not just delicious, but thoughtful. We got the seven-course tasting menu, and each dish is brilliantly conceived. The chef, Jared Stafford-Hill, does especially remarkable things with fish. His meyer lemon-cured Danish hiramasa with green almonds and favas was divine. Likewise, his halibut Veronique with muscat grapes, whit asparagus, and salsify highlighted the subtle natural flavor of the fish. It's fine dining, so the service is very attentive, but the waiters were friendly. The restaurant has a remarkable wine cellar, including rare wines seemingly only Jared is able to get.

Liz R.

Yelp
What a treat! Loved the wine paired with the food. The pasta with seafood was mouthwatering!

Brad L.

Yelp
These is nothing else like this in NYC! The food was fantastic- not only delicious, but extremely well developed and thought out. They actually change the region that the menu is based off of every month. They offer generous portions even on the four course tasting menu. The wine bench is deep, and the whiskeys are curated and special. All of this was well priced. We'll be back for the next month's menu change.

Michael K.

Yelp
It has truly been a pleasure eating everything Chef Stafford-Hill and his team cooked. I cannot compliment the food highly enough, nor can my review capture the complexity and extreme level of execution found in every course. The staff are sincere, friendly and exceedingly knowledgeable. Dining at its best in a beautiful, relaxing environment. I am so thankful and cannot wait to return.

Susan T.

Yelp
Disappointed after high hopes. Sommelier ignored our price range and kept recommending bottles up to twice the price range we gave him despite there being many less expensive bottles
