"Saint Urban, a new Flatiron restaurant from Syracuse, flips the typical fine-dining script by building its tasting and prix-fixe menus around wine, not the other way around. Each month highlights a different region, like Tuscany or Southern France, with pairings ranging from $90 to $410. (The $175 Reserva is a sweet spot; pair it with the $188 seven-course tasting.) The flavor-packed dishes—from June’s Spain menu, for example—might include milk-fed pig with sherry-pickled peach, turbot with arroz negro, and a crusty rye sourdough. They're all very good, but it’s the wine that takes center stage. In the former Veritas space, Saint Urban's beige room and suit-and-tie-wearing staff let those wines speak for themselves. One sip of a floral garnacha or fruity 2001 rioja and you get it. This isn’t just a meal, but a mini-tour through a wine region, one elegant glass at a time." - Bryan Kim, Molly Fitzpatrick, Willa Moore, Will Hartman, Sonal Shah
