"When the Portland, Oregon–based ice creamery debuted at UnCommons on June 16, I learned they haven't yet added the prime rib or shrimp cocktail–inspired flavors, though co-founder and head ice cream maker Tyler Malek floated the idea and said he’ll likely reveal unique Las Vegas–only combinations in the fall — including one “really cool” art-related flavor he couldn't describe. For the opening they unveiled an Upcycled Food Series alongside more than a dozen classics like Cinnamon Snickerdoodle and Honey Lavender, plus two last-chance scoops — a vegan Chocolate Sorbet and Pots of Gold & Rainbows. Malek emphasized that June’s limited-edition flavors are meant to taste good and educate about food waste: all five flavors are certified upcycled (at least 10% of each would have been thrown away), and they’re saving 38,000 pounds of otherwise edible food. Ingredients used include day-old bread pudding, cacao pulp (which he notes doesn't taste like chocolate), whey, okara flour, and barley milk from the brewing process. He also mentioned that the team of 105 has created more than 1,400 flavors over the years with only a small percentage returning to the menu, that iconic berry flavors will return in July, and that he envisions a visit to be an experience where people spend 45 minutes tasting ice cream and learning the stories behind each flavor." - Ryan Slattery

Any of its classic flavors — such as pear and blue cheese or strawberry honey balsamic with black pepper — or its funky monthly flavors can be made into milkshakes. The Chocolate Gooey Brownie, in particular, makes a decadent chocolate delightful milkshake."
"Have Some Cheese with Your Ice Cream I was on a cruise in Italy when I heard about this place. I'd mentioned that I was heading to Portland , and a fellow cruiser, a native of the town, had told me that if they had one recommendation it would be the ice cream at Salt and Straw. What she didn't tell me was that the flavors are not your usual vanilla, chocolate, and raspberry ripple. In fact, the first thing I tasted at Salt and Straw was their new "Bollywood" recipe, which included carrot custard and cardamom, which sounds almost sensible when you considered that some of their most popular flavors include prosciutto and goat cheese. There was a huge line, even on a Friday mid-afternoon, but it was worth it for the almond brittle with salted ganache, not to mention the apple pie with real chunks of cheddar cheese. They're doing their best to "Keep Portland Weird" here...and it tastes good."
