"Opened today by Chef Alain Verzeroli in the luxe condo tower at 100 East 53rd St., this high-end French-Japanese restaurant completes his two-restaurant project and is centered on seasonal French fare with Japanese influences (its name references the Japanese tradition of seasonality). The menu is seafood-leaning with a luxurious eight-course tasting option; staple dishes include lemongrass lobster, scallops crudo, duck à l’orange, and king crab with daikon, herbs, and honey, and the bread program features seaweed-infused loaves from head baker Tetsuya Yamaguchi. Desserts come from executive pastry chef Salvatore Martone, drinks are overseen by beverage director Roberto Longo with master mixologist Dushan Zaric involved, and wines are drawn mostly from Champagne, Bordeaux, and Burgundy. Housed on the building's second level with a sleek design by Joseph Dirand, Shun has a 58-seat dining room and is open for dinner (5:30–10 p.m. Tue–Thu, until 10:30 p.m. Fri–Sat), with lunch beginning in September. Verzeroli—who spent 21 years under Joël Robuchon and helped maintain Robuchon's Tokyo restaurant’s three Michelin stars for 11 years—brings that pedigree to this project." - Carla Vianna
"Planned to debut in March 2019, this French-Japanese restaurant will occupy part of a two-story venue within the Midtown East luxury condo at 100 East 53rd St. near Lexington Avenue; it was one of two Midtown restaurants Joël Robuchon was working on before his August death and is now being advanced by longtime colleague chef Alain Verzeroli, who worked with Robuchon in Tokyo for nearly two decades.
