Seven Caves Spirits

My first time at Seven Caves was December 2024. We went to celebrate our friend’s birthday. Seven Caves is located directly next door to Embolden Brewing Company. The signage is small so keep an eye out. The owner, Jeff, is a riot! We did a tasting that was curated by him and our love for libations. He makes all of his spirits himself. His distillery started with gin which is why I’d never been because I don’t like gin for any reason. I would love to say that I remember the different cocktails that he whipped up for us but we drank a lot and that was months ago. LOL. I can say everything was outstanding! My favourite was this fluffy daiquiri ice (Baskin Robbin’s ice cream I love) flavoured cocktail that was indescribable but so stinking delicious. When our tasting was done we all lined up to purchase bottles. I bought a bottle of rum which was my favourite libation of the evening. I’ve been told the maple syrup and the pancake mix he sells is a must to buy so definitely go check it out. Looking forward to our next tasting, Jeff!

Geoff is wonderful. They weren't open for tastings but he still came out and talked to us about all the items they make and even mentioned a few places near us in Nevada we could enjoy them. We got a few bottles to try and can't wait to get home to enjoy. Thank you Geoff, we can't wait to come back and see you again!

Seven Caves is a San Diego GEM! Whether you’re a local and have been in the area a while or just visiting, hit up Geoff and schedule a tasting! This was an incredibly fun, laid back, and educational experience. Geoff is so personable, a great conversationalist, and can carry you through the tasting experience with ease, whether you know a lot or a little on spirits, cocktails, and flavors. His spirits are playful and experimental, putting a spin on traditional flavors which reflect the San Diego area. The quality of his products is too-notch, whether it’s spirits, canned cocktails, or his out-of-this-world bourbon barrel maple syrup. Get your hands on it, I promise you won’t regret it.

This place is absolutely worth a visit! We booked a private tasting, and it was so much fun and very intimate. We got a wide range of drinks, and everything we tried was really good. We were there for about an hour and a half. The owner Geoff was able to craft cocktails on the fly, and everything he threw together was fantastic. He asked us what we like, and he used those selections to make masterpieces. Definitely try his canned cocktails, they were the best we've had. They're dog friendly btw. Something else to note, if you're just looking to pick up just some bottles or cans, you can show up without an appointment. You just need an appointment to do the tasting, but absolutely you should do that if you've never been there before. The only downside, we tried a couple of things that weren't available for purchase. It was a little frustrating, to try some absolutely amazing drinks, and then see that we can't buy that in his store. But I guess that's just good motivation to keep going back

This was my first time visiting a distillery. The experience I had with the owner Geoff was extraordinary. You can clearly tell that he has a passion for what he does and that shines through with the quality and flavors of the liquor he produces. Being on a personal journey to discover what types of gin, rum etc that I may enjoy this was the best possible place to do that. Geoff took the time to explain terms, answer all my questions and even get into the art and science of distilling which I very much appreciated. Definitely going to refer this place to others.

I've been to two of Geoff's releases where he's hosted tastings and both times I was blown away by his passion for his craft and his gregariousness. I ALMOST turned around after a couple circles in my car of the cul-de-sac where his distillery is but, man, am I glad I parked and double checked! Just like Little Miss Brewering (coincidentally in the same cul-de-sac), Seven Caves is an absolute gem if you can find it. I'm sure it's intentionally hard to find as Geoff truly enjoys sharing his creations in the intimate operation that he runs, and you will undoubtedly learn a lot about spirits and the local scene if you plan a visit. Thanks for spending a couple of awesome afternoons with us Geoff!

Absolutely do not come here San Diego, these are not the droids you are looking for! Keep this place a secret, what an incredible experience, incredible flavor, incredible quality! I can't wait to come back with more family and friends. What a fantastic time! Jeff is a wizard!

One of my favorite parts of being a life long chef is that once in a while you run into a golden unicorn. Someone that really takes the time and puts in the effort to make things that are really great. This is Jeff. The rum I bought is aged in oak and mead barrels i think? I'm not usually much of a dark rum guy but holy crap this stuff is good. I spent four years in the US Virgin islands and I love me some rum, I'm going to spend the whole day with this bottle like the good ole days. Haven't tried the gin yet but I'm super excited to do so.... My favorite part about seven caves distillery is that they are also making real deal maple syrup aged in the rum barrels! What!? I also went to Culinary school in Vermont and will assault someone that gives me corn syrup with my pancakes. The flavor of the syrup is phenomenal, the aging in the rum barrels really shines through without being too aggressive. If I wasn't already a big chef I'd eat this every day. The coffee and cinnamon infused maple syrup, ridiculous. Try it you'll love it. Jeff also makes his own pancake mixes so it's a one stop pancake shop!! Jeff threw me a curveball, he also makes his own soy sauce! And ages it in the barrels! You want to go do karaate in the garage?! I think we just became best friends. The soy sauce is great, flavor bomb, and I will be using this in all sorts of different dishes. I'm going to go get myself into a sugar booze and salt coma and I recommend you guys do the same. Yay! Had a great time here for a private tasting with some friends. Good way to try so new and explore a bit. Would definitely recommend making an appointment in advance and come ready to socialize and learn.

This place is absolutely amazing!! They only do private tastings and they are incredible. You must go online to reserve a time. The owner will guide you though all types of his distills. He has all different types of Rums, Gins, Whiskeys and even battle aged maple syrup. You will be able to try the distills on their own and also mixed in a mini cocktail. After your Incredible tasting you have the opportunity to purchase bottles and if you are lucky, his canned ready to drink cocktails. The Seven Caves canned cocktails are some of the best canned RTD's available. I challenge anyone to prove me wrong. Will go back and often, can't wait to go again.

This place is fan-freaking-tastic. Came here for my first tasting experience ever and couldn't have been more satisfied. The drinks were out of this world and the owner is extremely knowledgeable and talented. I highly recommend this experience to anyone who wants to try new things.

Jeff, the owner, distiller, accountant, HR manager,ect, is magical and fantastic. You can tell he's just doing this for fun. When we were there, there were 10 of us and we tried gin, rum and whiskey. But I feel I need to go back soon because he always has something new coming. I saw soy sauce in a barrel. I got two bottles of the rum aged maple syrup. Cans of his cocktails are at the local Total Wine. He didn't have a ton of the cans to sell. But I did get the Jasmine Tea rum and I'm looking forward to mixing with that. Your experience here is what you make of it. DO NOT GO IF YOU'RE NOT GONNA HAVE A GOOD TIME.

Jeff is so accommodating and helpful! His shop is by appointment only for tasting which I did not know when I initially called his main line. I was looking to pop in quickly to purchase bottles and Jeff was so accommodating. Even though he was having a private tasting he provided some quick samples of bottles that I was interested in. At the time there was a Paru tea infused rum that smelled and tasted amazing. They also sell a maple syrup that was recommended to me by a fellow yelper. Haven't tried it yet but I am looking forward to it. Very interesting flavors of infused rums which make great gifts. There are also canned cocktails that taste like Capri sun which is also available at Totalwines stores!

Definitely do a private tasting with Geoff. This guy knows his spirits and can mix up some tasty cocktails. I've been here several times and it has always been a fun experience.

Suggested to come into this place by my cousin. After a hike near Poway we decided to stop in during our trek home. The distillery was closed to the public, but you could buy goods from the door (dec 2020) but we were greeted by a wonderfully aged German Shepard. It took a bit for us to be greeted by a human but the dog was a wonderful distraction. Especially the week before Christmas. The team seemed busy with orders. When we were helped we got nearly 1 of everything. No regrets. The spirits we purchased were incredible. The seasonal gin was spicy and perfect for Christmas cocktails. My husband mentioned that his drink had an almost eggnog flavor (I don't remember what the mix was). The whiskey was smooth. The Orange rum was my favorite. I gifted the agave spirit so I didn't get to try it but I'm sure I will be back for that goodness as well. This man is a wizard. I almost don't want others to know but the spirits deserve all the praise. Stop by and buy some quality locally made magic liquids.

A group of friends and I did the 1.5 hour, $25 per person tasting, a highly interactive session which is more than worth the money. We got to sample many different spirits, and then enjoy a mini cocktail made with that spirit. We were all super impressed with the experience and want to come again with new people. You have to book the tasting in advance with an online reservation, and you might have to wait a while for a free timeslot, but it's very fun. Most of us purchased bottles of alcohol and canned cocktails after the tasting because they were so good. The gins impressed us most here.

Come watch Geoff show you what he has created. The Gin and the spirits are incredible as is Geoff's knowledge. He makes the best ever maple syrup that is created in rum barrels. I can't say enough how great that is! Come over and check it out, you won't be disappointed.

We found Seven Caves about 3 years ago and we've been huge fans ever since! We enjoy the quality of all the spirits. The latest discovery that we just love are the canned cocktails!!! We feel Seven Caves is really special and everything we've tried is delicious!!!!

Great tasting and experience, however on the way home both sealed bottles fell over on its side and we lost half of the bottle of the gin we bought :(

Coolest tasting experience I've ever had. At first, I thought I was in the wrong place because the location does not have any signs, but after searching around the side we heard Geoff telling us to come in. Geoff is the only owner/distiller/worker, a one-man operation, so you get insight on every part of managing a distillery. The warehouse is also really small but it's nice because you get to see all the machines and barrels while your tasting. For the tasting, Geoff started us off with Gin and would usually pour it raw first and then as a mixed drink after. Gin is not really my or my girlfriends spirit of choice but after this tasting we definitely have more of an appreciation for it. The tasting was very relaxed and kind of like a Q&A. Sometimes our questions even led to experimenting with ingredients so it was cool that he was flexible with the tasting. Geoff also had us try some Rum which he paired with some legit maple syrup that you just have to try. We learned so much from the tasting and it was such a surprisingly good time!

Had an absolutely amazing experience tasting different liquors and cocktails with a group of eight. Geoff was very inviting and passionate taking about his work distilling and flavoring his spirits with the highest quality ingredients. He literally had a ton of sugar sitting on a crate waiting to be distilled into rum. The different gins and rums were delicious and I also learned a lot about the tasting profile and the process of distilling. An absolute gem.

Amazing tasting and cocktails experience for groups! Geoff is a thoughtful cocktail artist with an amazing ability to pair flavor and spirits. Range of cocktails we tried were traditional gin and tonic elevated by his delicious gin to the tiki inspired Fancy Poolside Punch (personal favorite, although hard to choose) capping off with a house made maple syrup (worth the trip alone) and charred oak rum old fashioned. Everything was delicious and Geoff's passion for his craft made it a highlight of our friends trip to town. A must try!

An unexpected find while wandering up-down Miramar RD. Was good timing that Geoff was available for a walk in tasting so we came on in. Had a great time learning about their distilling and the projects underway. The maple syrup is awesome! On our radar now to stop in a check what the latest releases when in town.

My boyfriend and I came here to celebrate his birthday with seven other people. We contacted Geoff beforehand via email to make an appointment and he was super helpful. We ended up opting for the $25 cocktail plus spirits tasting, and it was SO WORTH IT. Pro tip: Eat a big meal beforehand. I would definitely recommend the cocktail plus spirits tasting, because I think otherwise you'd miss out on some of the complexities and unique aspects of Geoff's spirits. We had multiple gins, rums, and whiskey's (and cocktails with each). The best part was that a lot of cocktails were seasonal, so you get a different experience everytime you go. During the tasting, Geoff was friendly, helpful, interesting, and informative. It's clear he loves what he does, and he's damn good at it. We loved everything we tried, and a few of us even bought some of his spirits and maple syrup after. I would highly recommend booking a tasting with him! We definitely plan on coming back!

My daughter scheduled a tasting as a birthday present for my son. Our family went and had the best experience ever. Geoff is very knowledgeable not only with his products but with the most amazing mixed cocktails that just blow your mind and open up your taste buds. My son in law brought some beers and hard tea for Geoff and he made some cocktails with it just from the top of his head. I highly recommend scheduling a tasting and buying some of the products. We bought some and I mixed some of the Rum Barrel Aged Maple Syrup ( yes this a maple syrup) and put some in my morning oatmeal mind blowing! Thank you Geoff fun day.

Seven Caves has gained a new and happy customer! I placed an order online for a bottle of rum and opted for the "pick up at store" option. When I went to pick it up, Geoff just happened to have stepped out for a bit so he offered to deliver the bottle to me free of charge! He even went the extra mile and threw in a complimentary bottle of his barrel aged maple syrup! The rum is very good and the maple syrup is amazing. Fabulous tasting experience from someone who knows the craft and makes it enjoyable for experienced cocktail aficionados as well as the casual tipplers.

This place is fantastic and Geoff is a wizard at cocktail making. Do yourself a favor - gather some friends and book a "spirit + cocktail tasting." It's fun and interesting and the products are literally top shelf.

We had a fabulous time at our tasting - portions are extremely generous so pace yourself but everything was delicious and Geoff was a blast to talk to.

I love this place! Geoff offered our group a nice tasting and I decided on the Tiki 20 Gin. It's so great by itself but with some pomegranate cherry Pellegrino, it's simply magic! Thank you!

Five stars is not enough for Seven Caves! The founder/owner/distiller, Geoff is amazing! Super nice guy who is very talented and knowledgeable! I've really enjoyed everything I've tried from Seven Caves but it's an extra special treat to try the offerings in the Exploratory Series! Geoff is a master at his craft and clearly enjoys creating unique spirits, using the highest quality ingredients, while supporting local and small businesses. I love buying for myself, and their amazing spirits have encouraged me to become a more sophisticated cocktail maker! I also love giving Seven Caves spirits as gifts! I highly recommend Seven Caves!!

I visited Seven Caves today and was very impressed! Geoff (Who owns the place) greeted me and offered free hand sanitizer which is very hard to come by these days! I was looking for something to impress our guests with and Geoff recommended the rum. Served it to the guests and it was a home run! I am normally a Vodka Martini guy but after tasting Geoff's Rum I may switch my allegiance. It was outstanding! Also came home with 2 bottles of the Rum Barrel Maple Syrup.. This was the surprise of the night! The kids that were in attendance were served vanilla ice cream and had the syrup poured on top.. I'm sure it's good on pancakes, but served over vanilla ice cream was insane!! Can't say enough.. Reasonable price! Local San Diego business! Can't go wrong! Highly recommend.

By far the best tasting experience! The most tastiest spirits made here, all you need is to add a piece of lemon or tangerine to garnish. The owner Geoff is passionate on what he does. We happened to go on a stormy, rainy Saturday afternoon, he opened the distillery just for us and educate us while sharing his favorite spirits. The tangerine gin and maple syrup is to die for!

What a wonderful tasting experience! Geoff really knows what he's doing when it comes to mixing and crafting unique, delicious spirits. The husband and I spent a lovely afternoon sampling and learning more about the distillation process all while seeing what it really takes to churn out an awesome product. I would highly recommend Seven Caves to anyone interested in small batch distilling or craft cocktails. And be sure not to miss the maple syrup!

Placed an online order for a maple syrup. The bottle looks beautiful, its delicious...the product itself is great. In a customer experience perspective the experience sucked. I work in the area Mon-Wed only cuz of covid, so when I placed the order for pickup I thought I would go grab it any day. I discovered in my email receipt that I can only pickup Thur-Sat 12 to 5pm...ok sucks cuz I live 30 miles away and if I dont have to come into the office, i dont drive down. I decided to call and ask if it could be shipped instead..No answer...this was 2 weeks ago. I called fri and sat no answer so I decided to email and ask about details on pickup or delivery options. Another week went by and still till today no answer. Already annoyed I just decided to drive down there. It was hard to find, from the front it looks like a warehouse, no signs to pickup door. I walked around and saw a lady waiting so I finally found the tiny delivery door thanks to a customer waiting. The lady btw was not wearing a face mask whole time she was interacting with im pretty sure was the founder. The only separation between him and the customer was a small table so since we are at 0% ICU capacity, she should have been wearing one but i guess. As I am waiting there for quite awhile because the pickup orders are not ready to go. The person in charge has a list with orders so he looks through and picks up your stuff...again this should be already prepacked but again ok...since I am waiting there for what feels like for ever I notice the many other lost customers having a hard time finding this place. I saw a man turn around about 4 times...stopping..looking at his phone...looking around lol so ya I wasnt alone. Anyway there is my rant...I understand things are hard, I understand we are rolling w the punches but because of this I feel like customer service should b key and this was lacking. Product though...beatiful.

Oh my. Doug is the master distiller. Spent a lovely two hours tasting his gin, rum and agave spirit he makes in small batches. Then he made various cocktails with fresh ingredients. Loved the hot toddy in this gloomy day! He has a passion for his craft that was evident throughout the presentation. What a great place!!

SAN DIEGO's best craft spirits! Geoff is very friendly and knowledgeable, helpful and enthusiastic, and loves sharing his knowledge of the craft! I don't even know where to begin! Geoff was more than a joy and graciously hosted me and my friend while I visited from Long Beach. His distillery was my favorite part of the weekend. He is incredibly knowledgeable in every realm of the spirit's world. His product was phenomenal, but his genuine, whole-hearted run through of the complex distilling process sold me the dream! If you are even remotely close to this area, it's worth the pit stop. Make sure you make an appointment ahead of time so you don't rob yourself of the experience. 10/10 would spend countless weekends at this place if I lived closer.

What a unique experience. I've been to countless distilleries and breweries, and this place is a first among them. Rather than an hourly tour, Geoff basically invites you into the distillery like as a house guest and takes you through their history and products. Great, intimate experience with great rum and gin offerings (as well as maple syrup). It's a little hard to find, so look right next to Aquaneering (there's a small door on the side with a doormat that said "Not a meth lab").

Highly recommend! Stopped by Seven Caves during an impromptu craft distillery crawl on a rainy San Diego winter afternoon. Geoff, the owner, invited us in and we sat around the tasting table as he regaled us with stories and explanations about every phase of his grain to glass process, from his very specific ingredient sourcing to the hand selection of the barrels he ages and finishes his spirits in. The tastings ran the gamut from unique new gins to a rye whiskey barrel aged rums and everything in between. The quality of the spirits was incredible. Geoff's enthusiasm for the craft, and hearing the stories behind each flavor profile, made them even better. I have toured distilleries across the globe and this is hands down the best one I've ever experienced.

Can't praise enough. Geoff is knowledgeable and talented. We had a great visit. Thank you for being so wonderful. I didn't even know how good and old fashion could be!
