Served with freshly baked pita, the simple Hummus Abu Hassan, inspired by a famous hummus spot of the same name in Jaffa, is like chickpea whipped cream blended with tahini and lemon, and topped with chickpeas, parsley, and a lots of olive oil. A heartier hummus dish comes decked with braised lamb, carrots, and green chickpeas.
