The 21 Best Restaurants in San José, Costa Rica | Eater

"Chef Pablo Bonilla has diligently studied Indigenous Costa Rican cooking to refute critics who doubt the country’s historical gastronomy is equal to that of its Latin American neighbors. At internationally acclaimed Sikwa, he uses local ingredients and provincial techniques in a warm, casual atmosphere. The menu is filled with spectacular displays of Costa Rica’s ancestral Indigenous cuisine: Several dishes are prepared with native annatto seeds, the pastel de pejibaye (peach palm) fruit is filled with pork marinated in vino de coyol and served over tamarind sauce, and grilled bone marrow topped with beef tartare comes with tortillas made with native maiz pujagua. Through grilled jumbo shrimp over arroz de maíz (porridge) — a play on shrimp and grits — and sweet corn yoltamales for dessert, Bonilla finds connection with pre-Hispanic maize cultures all the way north to the American South." - Bill Esparza

What Is Costa Rican Food? | Eater

"Led by chef Pablo Bonilla, this restaurant has been central to Costa Rica’s modern culinary awakening by rebuilding ties with fishermen, foragers, and Indigenous communities to resurrect ancestral dishes; since 2021 it has offered a seven-course tasting menu in a jungle-themed dining room and a full bar programmed with original cocktails that use local ingredients like passion fruit mead and breadnut bitters." - Nicholas Gill

The Unsung Food Destinations to Travel for Now

"Pablo Bonilla serves pejibaye tamales and achiote chicken with pineapple, while working closely with the Bribri people in the Talamanca mountains. Part of a foodie buzz on Calle 33, with sell-out falafels at Faqua’s and craft brews at Costa Rica Beer Factory."

First night dinner here, and it did NOT disappoint. Every dish was thoughtfully prepared, but the shrimp tartare stood out as my favorite appetizer—fresh, vibrant, and full of flavor. By the end of the trip, this meal remained the most elevated dining experience I had in San Jose. What truly set it apart was the service: each course was presented with care, and the staff took the time to explain the intricacies of every item—even how to enjoy it as the chef intended. A memorable start to the trip.

Absolutely stunning dishes, creatively imagined and expertly prepared. It was a beautiful meal, and well worth the stop. The cocktails were also very good, but did not appear to be executed at the same level of care as the food. Mostly my disappointment came from the fact that 3 of the 11 signature cocktails on the menu were not available at 6:30pm on a Friday night, which seems far too early to be running out of anything. We also received an outdated menu when we were seated, which caused a little confusion. Overall though, absolutely excellent and definitely recommend.

Sequa is a great restaurant tucked away in a quiet part of San Jose. It’s a little bit on the pricier side, but the males are excellent. Everything I’ve had here, and I have had a lot, has ranged from good to great. This includes the drinks, and they have some very good juices

While very (!) expensive (matching fine dining in New York or London), Sikwa offers a one-of-a-kind experience that is a lot more than a dinner. The chef has meticulously studied regional indigenous dishes and ingredients and created a celebration of local flavours that exposes the diner to a plethora of unknown plants and cooking techniques through innovative and delicious dishes on tailor-made plates that are outright works of art. The staff goes at great length to explain everything and one gets a lovely booklet that even indicates the Latin (scientific) names of the ingredients.

I came upon this restaurant because of the world's top 50 list. I went here my first night in Costa Rica. The service was dreadfully slow, though the staff was friendly. The food was tasty, but I think their overall menu is a little too sweet for me. It could be that I just combined too many sweet-leaning things, but my stomach was not happy with me the night that I ate here.

Sikwa lived up to the hype. Got an Uber 30 minutes from the hotel to come try it out and it did not disappoint. If you’re a foodie this is a must try. The bar attached to the restaurant is also an amazing spot for a final final.😎

Hands down one of the best meals and restaurants in Costa Rica. Unique flavors and locally sourced, fresh ingredients. Michelin star worthy. You can taste and feel the passion of the chef in each and every dish. It is a fine dining place. But the prices are justified for the quality and way more affordable than you would pay for something similar in say New York or a big city in US. Highly recommend if you are in San Jose and looking to try some local flavors with a twist.

Great experience! We went for the 5 course tasting menu (even though it is not on the menu, it is still offered). I think the dish selection is great. We loved the usage of traditional ingredients in new and creative ways and how they were paired and how well they worked together. Our only suggestion if you go with the 5 course tasting menu would be to order an extra appetizer before the desert because we think 5 courses might be cutting it a little short.
