The tight menu of six rice bowls is designed to get people in and out as quickly as possible. You'll typically find just few people working here, assembling ready-made ingredients into compostable boxes for a line of office workers escaping their desks for lunch. The setup is simple: rice, meats (for vegetarians there's an egg and rice option), and curries are layered on top of each other, and then garnished with pre-sliced veggies and freshly cracked sous vide eggs. While this pre-made approach keeps things moving, it comes with some drawbacks. The rice gets a bit mushy, and certain meats, like the pork belly end up with too much chew.
