In Pilsen, Sleep Walk Chocolateria Presents a Rich and Decadent Story Powered by Tradition | Eater Chicago

"For Día de Muertos, an ofrenda recounts the memories of deceased loved ones of the employees: “Día de los Muertos is mostly a journey for elder ones that are no longer with us; to keep their memories alive,” says Jorge Fierros, the chocolate program manager. “The fact that we remember them every year — that keeps their essence alive,” he says. “The meat, the food, every kind of taste that they loved during their time with us — we bring that up to them on the altar every year for them to come back to us and for them to say to us, and us to say to them, ‘I still remember you, I’m still with you.’” The ofrenda is filled with photos, prayer candles, and the beloved snacks of ancestors passed on: Flamin’ Hot Cheetos, a huge concha, pulparindos (tamarind candies), and chocolate, and a copy of Popol Vuh, a text often referred to as “the Mayan Bible,” is prominently displayed next to bars of the shop’s award-winning chocolate. The Popol Vuh’s role on the altar underscores the chocolateria’s effort to honor Indigenous histories: the text, written during the beginning of the Spanish conquest to preserve Indigenous culture, contains numerous mentions of cacao and even instructs readers in one passage to drink cacao in honor of Hun Hunahpu. On identity and sourcing, Aaron Campos, director of operations at Dark Matter Coffee, explains the origins-focused approach: “When we started [Dark Matter], it was important for us to focus on El Salvador, Mexico, Guatemala… places where the coffee is delicious and amazing, and usually has a lot of rich, complex, and vibrant acidity,” he says. “It’s an identity of flavor, which is really special.” The operation sources cacao directly from Mexican farmers—currently from Chiapas and Tabasco, buying from the Broca family in Comalcalco, Margarito Sanchez, and the Agrofloresta Cacao Comunitario collective—and plans to work with Guatemalan producers who invested land in the valley to grow cacao alongside coffee. Production details are specific and hands-on: large bags of beans from Mexico are cut open, roasted, cleaned with husk separated from the flesh (the husk used for compost), then ground into a paste, tempered into bars, and sometimes mixed with coffee, chiles, or marigold flowers. Early training and partnerships are part of the story: a trip to Mexico City introduced the founder to the La Rifa family farm, whose cacao orders helped keep them afloat during the pandemic and whose artisans trained staff in chocolate-making. The chocolatiers began with traditional two-ingredient bars (cacao and sugar) and expanded into bars infused with mezcal and tequila, beans fermented in whiskey barrels, a bar filled with spicy mole, and one called Aztec with amaranth seeds and marigolds; as Fierros notes, “Everything is natural spices... different kinds of chiles from Mexico like Oaxaca pasilla, chile ancho, guajillo flake, cayenne pepper, Mexican cinnamon, Mexican vanilla.” Drinking chocolate is central: they offer a picante flavor with cayenne (the traditional Mexican way), and use a molinillo — “The molinillo is quite an ancient tool used by artisans from Mexico. In Mexico, they even use huge ones, to mix up for massive production of drinking chocolate,” says Fierros — with the shop’s molinillos handmade by Arteollin Alonso, a family company five generations old. Fierros, who arrived in the U.S. 24 years ago and previously worked as a truck driver, bartender, and in steel mills, finds his past useful in chocolate-making: “By turning liquids into solids and vice versa, working in steel has helped, because you have to temper steel, and you also have to temper chocolate to create a good bar so it’ll preserve,” Fierros says. Visual and mythic elements reinforce Indigenous influences — jaguar paintings and Mayan iconography that speak to crossing between worlds — and Fierros insists these references are substantive: “This is our heritage.” The shop also collaborates on chocolate-infused alcoholic beverages with Revolution Brewery, Half Acre, and 18th Street Distillery and has a partnership with chef Rick Bayless. Ethically, the team emphasizes direct relationships and fair pricing: “Coffee is like the second most traded commodity in the world besides oil in the world, so there’s a lot of money in it, and when there’s a lot of money in something, I feel like it’s constantly a minefield to understand who your supplier is and how it’s being cultivated,” says Campos, adding that politics and climate must be considered; “It’s been way more comfortable for us to be able to work with people directly, to set prices that work for both parties, to grow together, and to exchange ideas.” In sum, the operation positions itself as a maker of award-recognized chocolate that combines direct farmer relationships, traditional techniques and tools, region-specific ingredients and flavors, and a conscious effort to honor and preserve Indigenous cacao knowledge and cultural memory." - Nylah Iqbal Muhammad

Sleep Walk Chocolateria & Cafe is what I would call a true hidden gem especially if you're a devoted chocolate lover. Tucked away like a secret waiting to be discovered, this café welcomes you with the intoxicating aroma of chocolate the second you open the door. The ambiance is cozy, modern, and infused with artisanal charm. Right up front, they proudly display their award-winning chocolate bars, which are all handcrafted on-site. You can literally see the chocolate being made, tempered, molded, and packaged with care which adds an authentic and immersive touch to the whole experience. I ordered the hot chocolate and an almond croissant, and let me tell you, this combo was pure perfection. The hot chocolate isn’t your typical sugary drink, it’s bold, deep, and unapologetically rich. From the first sip, you’re greeted with a touch of sweetness, but as it coats your palate and moves to the back of your tongue, you’re hit with a powerful wave of true dark chocolate bitterness. It’s intense in the best way, and definitely not for the faint of heart. Only true chocolate aficionados will fully appreciate this layered and complex flavor. The almond croissant was equally impressive, lightly crisped on the outside, soft and buttery inside, filled with a subtly sweet almond paste, and dusted with powdered sugar. Together, they created a breakfast experience that was comforting yet elevated. Takeaway? If you love chocolate in its purest, most passionate form, this place is a must. Don’t skip the hot chocolate. It might just ruin all other hot chocolates for you.

Sleep walk rocked our world. We had to get the mocha obviously as their specialty is chocolate and it was the perfect balance of coffee and chocolate without being too sweet. We also were able to grab their last breakfast taco and a pistachio donut- they were also amazing.

Storefront coffee Cafe with pastries and some breakfast options. I had the bacon and egg Taco. The bacon was more Canadian type bacon; it was smokey and savory. It really took the breakfast Taco to a unique tasty level. There's a small seating area with half a dozen tables. The staff were friendly and accommodating.

I love this coffee shop for a little sip and bite every once in a while. Yummy coffee + pastries and friendly staff interactions always. Only constructive criticism is a problem seemingly every coffee-shop has: wobbly tables. I come to journal and drink coffee, so if I shift my writing hand from the left side of the spread to the right side, I would love not to threaten my delicious drink! I'll be back :)

Today I tried the agave latte during my first time at Sleep Walk Chocolateria. It was recommended to me as one of the best drinks there. It had a nice flavor with the chocolate and warm spices. The foam on the latte was made perfect, and with beautiful foam artwork as well! The atmosphere is humble and there are a few small tables with chairs. They also have wifi. The decor is quite hispanic with the papel picado, low rider painting, the decorated skeleton painting, candles of saints, and more... You'll definitely feel like you are in Pilsen and in a unique café. I'd like to come back to try their other lattes and special chocolates they sell on the shelf.

We had a craving for hot chocolate and went out of our way to support this local shop this past Sunday. Arrived just after 4:20 PM. Decor and ambience were nice, but the service was lacking to say the least. After tending to his own tasks for a few minutes, the barista asked if we would be ordering lattes. We told him we wanted two hot chocolates and he told us he had already shut down the machine that creates it for the day. "Is it broken?" "No, it's just we're closing soon" They close at 5PM. I believe the employee just wanted to leave as soon as possible which is understandable, but we were pretty annoyed to drive all the way over here just to be turned away because someone doesn't feel like making hot chocolate within an hour of closing time. Won't be returning.

Boutique coffee bar with an edgy look and feel. This Dark Matter chocolate/coffee shop pairs flavours in some creative drink options. I had the bourbon barrel aged mocha latte, iced, and it didn't disappoint. The flavors are bold yet blend well. I paired it with the pistachio donut (too zesty/lemony for my personal taste) and a boston cream one (which, unfortunately, seemed to miss the cream). The service was super friendly, I'd definitely go back next!

Super cool, medium energy vibe in the heart of Pilsen; this is Dark Matter's chocolate shop. In other words, if you want a spicy hot chocolate, spiked with caffeine, you absolutely have to stop in here. Lot's of light, plants, and some solid music, making this a great study and/or date spot. All drinks are also made with 60% cocoa, as they should be

This is a bit of a boutique spot for coffee and chocolate. Prices may seem high for the neighborhood but are a steal for the quality, novelty, and service. Love the unique spin on the coffees here and that many incorporate Sleep Walk's homemade chocolate mix. The dolor de oro was SO good and spicy. And I'd like to come back to try their spicy hot chocolate. Drinks are about $5-$6. They have a variety of milks to use and offer decaf. The ambiance and decorations are great as well as the items for sale. Really cool spot to go every once in a while or to explore the city with tourists. And helps that you can go down the street for great tacos before or after. When we went, it was not too busy and the barista was super nice explaining everything.

I stopped in for coffee on Saturday morning around 8 while visiting my sister. I grabbed a drip with oatmilk and a mocha. There was no wait and no one else in there. I was originally just planning on grabbing coffee but the pastry case caught my eye. I decided to get a Cinnamon croissant and blueberry scone. Both were delightful. The croissant was almost like a cinnamon bun crossed with a croissant. The scone had a lemony icing on it that really brought it all together.

This coffee spot was exactly what I was looking for. While visiting Chicago, I wanted to see the famous murals of the Pilsen neighborhood. While walking in the Chicago summer heat I was craving an iced coffee and happened on this great little shop. I ordered a large coffee and it was super spicy! I would give this place five stars but the coffee was really spicy (I have a good tolerance but next time I would order a non-spiced option). The flavor wasn't mixed as thoroughly as I would've liked. All the spice was settled at the bottom. I know this place has great coffee and great service, but next time I'll get some Mexican chocolate and a more relaxing cup of Joe.

You can get a decent Americano here, but it's kinda inconsistent. The Bean still has the best iced coffee n scones. Luckily, this place has the best donuts (if u can get there early enough). I wish they'd order more donuts is my only issue. This place has grown on me. The service was shady before, but the customer service is so much better.

This coffee shop is super stimulating and not just because of the caffeine. Everything is covered in beautiful art from the walls to the paper cups to the bags of coffee beans. Ive tried the mocha, latte and cafe miel... all three had a really nice espresso flavor and the sweet drinks weren't too sweet.

I had been to all Dark Matter Coffee locations and I took a trip to Pilsen to make Sleep Walk my last stop! I absolutely love Pilsen and all the vintage shops nearby. Sleep Walk is so cool and cozy- I think it was an old bakery and I love that they kept original design features. The employee working was so kind and we chatted about books. I even bought a crewneck as a reward to myself for visiting every location! Love Dark Matter so much.

I'm a fan of dark matter coffee... but this chocolate shop seems super out of touch with the neighborhood. I spent $7 on a tiny bar of chocolate (this neighborhood is predominately working class). It wasn't "amazing" or any different than a candy bar I can get at the candy store from the senora down the street for a dollar.

Amazing service, delicious coffees and hot chocolate for kids. 4 stars only bc the space is small,not ideal place to sip and work. Would definitely go back when mood for speciality coffee. Tried the Dolor de Oro (espresso, honey, chocolate, coffee) and a coffee that was bourbon aged. Again very friendly staff well worth the prices.

Good unique coffee. I ordered a spicy cinnamon coffee that had some kick. All the staff were friendly and welcoming. Look for barista Alexis to make your latte and see his attention to detail in designs in the foam. A bit pricy for some items but worth a try to have something different.
