Hattie B's vs Slow Burn
First, I'm no authority on Nashville hot chicken. Most representations I've had outside Nashville haven't been that great. Second, As I was passing through, I was only able to try 2 spots. Based on where I was and crowds, I made it to Hattie B's West and Slow Burn so 2 newer entrants. I didn't make it to Prince's, Bolton's etc.
Both were excellent but also different. You can't go wrong with either one
Spice: Both were ordered Hot. Hattie B's was the milder of the 2, cayenne heat and could taste the sweet as well and more of the dry spice. Slow Burn was definitely the hotter of the 2 and had more slather in addition to the dry shake. To compare, you would probably need to go hotter with Hattie B's.
Crust: Hattie B's was nice and crunchy and very uniform. Slow Burn had big crunchy "flakes"
like you get when the batter gets wet and you hand pack layers onto the chicken. The crust was noticeably thicker and harder, perhaps they are still pan-frying as this had the hallmarks of a traditional hand battered, skillet fried crust.
Chicken: Hattie B's both light and dark were nice and juicy. Slow Burn dark and wings nice and juicy, the breast was slightly dry.
Customer Service and Vibe - Hattie B's has the vibe if you are there for the overall experience. Decor, friendly land back staff, all done well. Slow Burn is super friendly in more of a fast casual space.
Overall - I enjoyed sweating it out and the smaller feel of slow burn if I had to choose one but I'd happily go to either multiple times.
