How to Clean and Season a Cast-Iron Skillet | Eater

"“When cast iron comes out of its mold, it has the rough texture of sand,” says Will Copenhaver, the vice president of marketing and sales at the cookware company that specializes in heirloom cast iron. “Seasoning plays a very important role in traditional rough cast iron. It acts as a filler for the porous surface and ensures that food doesn’t stick – cast iron just wouldn’t be very functional without it.” When you season cast iron, you’re building up a thin, protective layer of polymerized oil that guards against rust and eventually creates a natural nonstick surface — that black patina isn’t grime or wear, it’s the goal. Most cast-iron skillets now come pre-seasoned, but it’s still worth reinforcing the surface from the start: rub a thin coat of neutral oil all over the skillet, inside and out (including the handle), buff with a paper towel until nearly dry, place the skillet upside down in a hot oven (around 450 degrees) with foil on the rack below to catch drips, bake for about an hour, then turn off the heat and let the skillet cool in the oven. Doing this once or twice when the pan is new helps build a base coat; over time seasoning strengthens simply by cooking regularly, especially with fatty foods. If rust appears, scrub with steel wool or a metal scouring pad down to raw iron, wash with soap and warm water, dry thoroughly (ideally by briefly heating on the stove), and reseason as you would a new pan; minor specks of rust can often be smoothed with coarse salt and oil. Visited Smithey April 2025. As I drove through the shipyard for the first time, I was wondering where I was. Then I made it to Riverfront Park and the Smithey showroom. OMG I would have never thought this existed. The Smithey showroom was absolutely phenomonal and the staff beyond compare. I ended up with the No.11 Deep Skillet w/ Glass Lid and some accessories, but came back and got the Carbon Steel Wok. I vowed that I would visit everytime I was in Charleston. I visited again in August 2025 and this time picked up the Carbon Steel Paella Pan . The staff again, amazing, remembering us from the last visit. And the skillet and paella pan, simply amazing! Quality material that each cook like a dream and best part now I get to think about our time in Charleston and our wonderful friends we met at Smithey everytime we cook with them! They now have a customer for life!

Smithey Ironware is a truly outstanding company. Our commercial kitchen had very badly rusted and damaged grates on the CharGrill. After not finding any cast iron restoration company that would take on the task I reached out to Smithey. Within ten minutes after sending photos, Lilly, my contact, had reached out to her restoration shop manager and he said YES! The process was so smooth and simple. I'll I had to do was purchase their restoration package on the website. They sent a Fed Ex packaging label and instructions. In spite of the three cumbersome packages weighing 96 pounds total, it was only $120 in shipping fees to the factory and return shipping was paid for by them. In less than 3 weeks I had completely restored grates mailed back to me. If I had to purchase new ones it was over $1,500 and they wouldn't have been have as perfectly seasoned. I recommend everyone watch their short video on their restoration process. If you have a rusted cast iron product, they will bring it back to life. I'm a Smithey convert and can't wait to add their pans to my kitchen inventory. Not only were the professional and efficient but also some of the nicest people in the world! Thank you, Smithey!

As you can see the pan is rather new by its color. First off let me say I've been using cast iron my entire life . I've seen pictures of people on here complaining about the cast iron. Obviously some people brag about knowing about cast iron and yet still managed to burn the pan. Anybody who knows anything about cast iron knows you raise the initial amount of heat to reach the desired temperature. Once the temperature has been reached you lower the amount of heat to sustain the desired temperature. I've seen people with burnt pans and blaming the smithy ironware company. Even after claiming that they know what they're doing. Obviously you do not! So stop leaving bad reviews unless you know what you're talking about! With that said.. unlike other cast iron pans other than maybe a Griswold, I was able to do exactly that , raise the heat to the proper temperature and then lower the heat to maintain it. The results you can see for yourself! Nice and even toasting on both sides of the grilled cheese that I made for my daughter! Their pans are nice and heavy which helps maintain the temperature without having to keep the heat up! Anyone who knows anything about cast iron knows that the heavier of the pan the better it sustains the heat. Again don't embarrass yourself by taking pictures of a burnt pan and claiming you know what you're doing when the outside diameter of the pan is still fairly new. They will now gain the loyal customer for life!

I've been a loyal customer of this company for many years. The products are beautiful and of good quality. Our house burned down in the Palisades California fires in early 2025. The fire was extremely hot. Almost none of our kitchen implements survived. Lodge, Staub, Le Creuset all warped beyond usefulness. All Clad completely melted. The only things that survived completely unscathed were some 100+ year old Griswold cookware. I couldn't find from the rubble any of our Smithey items other than a paella pan and a 14" double handle skillet. They had significant cosmetic damage, but still seemed useable. I contacted Smithey to see if they could restore them at a fee or give me instructions to restore them. They said they didn't make the same paella pan anymore so they couldn't replace it with the same model but they would replace the items under warranty. I told them I just needed help restoring them but they insisted on replacing the items with new items. They even replaced the paella pan with a newer model. The fire was obviously not their fault and they had no obligation to replace the items. That's a pretty good lifetime guarantee.

Terrible quality for cooking. Use for pancakes and half of it will be burned and other half undercooked. There is no even distribution of heat. Products look pretty but don’t function unfortunately. They will not let you return either. Sorry to have to write a poor review but feel the need to on this case.
