Soil

"Soil occupies a delightful house with a romantic patio-terrace, in the shade of leafy orange trees in the Pangrati district, a stone’s throw from the famous Panathenaic stadium – the venue for the first Olympic Games of the modern era. Here, chef Tasos Mantis (co-owner along with Alexandros Mouridis, who runs the front of house), creates contemporary seasonal cuisine featuring classic techniques, a solid basis in Greek cooking and a Nordic touch. This is showcased on a menu of well-presented small plates that reaffirm the restaurant’s “farm to table” concept, with a special focus on vegetables, herbs and edible flowers from the chef’s kitchen garden in Alepochori (cultivated by his father). At the end of the experience, guests are even given a bouquet of the herbs used in their meal." - Michelin Inspector

Athens : our selection of restaurants with terraces and views

"Soil, from garden to plateNear the Panathenaic Stadium, the trendy Pangrati neighbourhood is a mine of top-notch restaurants. Opened in 2021, Soil is housed in a magnificent 1920s building with a neo-Classical façade and ironwork features. On entering the premises, the first thing you see is the kitchen, where the team can be glimpsed in action : it is an introduction that speaks volumes about the spirit of the place. The interior of the restaurant is most welcoming with its small, intimate spaces decorated with works of art ; however, in the summer months it is above all the terrace that sets the tone, when tables are laid out in a superb courtyard garden dotted with orange and lemon trees. The local, sustainable and zero-waste food is the work of chef Tasos Mantis, who has worked, most notably, at Hof Van Cleve in Belgium. He maintains that "simplicity is the peak of elegance", but that doesn't mean that subtle and original flavours are off the table. After all, he finds his inspiration primarily in the restaurant's extensive kitchen garden, which he likes to tend, before using the vegetables, fruit, herbs and flowers in his cooking. A cook, for sure, but also a gardener ! The single tasting menu (with a vegetarian or vegan option) changes almost daily according to what is ripe and ready to harvest. The wine list features some fine options and a balance between labels from Greece and abroad." - MICHELIN Guide

Two days in Athens

"In the garden of this intimate restaurant housed in a beautiful early‑20th‑century building, the cuisine is local, sustainable and zero waste, as chef Tasos Mantis—both cook and gardener—creates a single set menu (with vegetarian or vegan options) tailored daily to produce from his kitchen garden and to fish and meat delivered by his supplier partners." - The MICHELIN Guide

Athens : two exceptional restaurants promising a sustainable fine dining experience

"Located in the heart of Athens, in a neo-Classical house in the trendy Pangrati neighbourhood, this restaurant conceals a huge organic vegetable garden in Alepochori about 60km from the capital, blessed with a view of the silvery waters of the Gulf of Corinth and brimming with vegetables, fragrant herbs, plump fruit and edible flowers. Here, the menu is tailored to the daily harvest from the kitchen garden, demanding constant adaptability—“When produce isn't ripe, we can't use it; when it's ripe, we have to hurry up and incorporate it into our menus before it's too late,” says Tasos Mantis, a humble, highly talented cook and skilled gardener who learned to cultivate the land from his father on Lesbos. After experience abroad, he returned with a desire to serve sustainable cuisine inspired by the bounty of his native Greece, guided by a ‘farm to table’ philosophy that ensures he knows the origin and ethical, impeccable quality of his raw materials; even the ceramics are custom-made by craftsmen whose expertise and livelihoods are sometimes in jeopardy, extending the restaurant’s commitment to sustainability." - The MICHELIN Guide

Soil Restaurant in Athens, Greece, is a Michelin-starred dining destination renowned for its farm-to-table philosophy and sustainable practices. The restaurant, led by Chef Tasos Mantis, cultivates its own garden to source fresh vegetables, herbs, and flowers that feature prominently in its innovative dishes. We enjoyed a multi-course tasting menu that is inventive and well-balanced flavors, with a focus on earthy and natural ingredients, making each bite a sensory and culinary adventure. The ambiance is relaxed and intimate in a beautiful neoclassical house with a charming garden courtyard where diners can enjoy their meals surrounded by nature. While the restaurant is located in a working-class neighborhood, the food quality and overall dining experience are highly regarded, making the environment an unexpected but pleasant contrast to the excellence of the cuisine. Service at Soil Restaurant is professional and knowledgeable, with staff ready to explain the ingredients and origins of each dish, adding to the immersive experience. The wine list is extensive and well-curated, complementing the diverse and artistic menu. The meal is at a relaxed and thoughtful dining pace. The restaurant offers a unique and memorable dining experience that beautifully showcases Greek ingredients with modern culinary artistry. In summary, Soil Restaurant is highly recommended for those seeking a refined, sustainable, and innovative meal in Athens, with an atmosphere that celebrates nature and Greek culinary heritage through exceptional taste and presentation

Second visit, and this time I left a bit underwhelmed. The food remains good and consistent throughout the dinner, and technically there’s little to complain about. However, the menu hasn’t changed much in almost two years, which made the experience feel less exciting. Nothing really exceeded expectations, even though everything was well executed. The format includes 9 courses with options, followed by 2 desserts and mignardises. At €110, the price is fair for a one-star Michelin restaurant. The wine selection is solid overall, but the by-the-glass options are rather unremarkable. Service was acceptable but not quite at Michelin-star level. At times, sommeliers and waiters were nearby but clearly busy with other tasks, making it difficult to get attention. Waiting close to 20 minutes for a water refill doesn’t align with what you’d expect from this category. I also felt the rhythm slowed down in the second half of the meal — the dinner lasted over 3 hours, which felt a bit long and affected the overall flow. Overall, still a good choice, but in Athens I’ve had stronger experiences at a similar price point, such as CTC, Makris, or Aleria.

We had such a good time at the chef table ! Everything was incredible, the wines choose, every detaild, every using herbs, all the Favour was perfectly maitrised. One of the best restaurant i’ve ever been so far. I’m still wondering why they don’t have another star Michelin. Thank you for your time and your kindness

We decided to treat ourselves to a Michelin starred restaurant during our stay in Athens and were not disappointed! The service was very attentive and the dishes were served at a good pace. The plating was beautifully done with care and the food itself was outstanding. Absolutely recommended for a special night out!

What a great experience. After ringing the bell at the front door to get into the Restaurant I got a warm welcome. I was showed my table and could give a quick hello to the kitchen. Like the venue with all the warm colours. Had the tasting with menu with the additional lobster and wagyu beef. All the coursed tasted great and I love all the nice plates. A lot of fresh vegetables, herbs and fruits from their own garden. Had the greek wine pairing. Worked perfectly with all the dishes. Thanks to the friendly and professional staff for having me and making my visit special. You can't go wrong with spending your evening at Soil.

Google
amazing food with incredible, warm service! everything was so creative and delicious. the add ons were definitely worth it - extra the lobster course was next level! don’t let them trick you into ordering the “special” birthday cake though (€8 pp for a small, completely undecorated chocolate cake with a single candle in it - when everything else has so much detail into it why would they do this?)

Soil truly embodies its name—outstanding experience definitely worthy of its Michelin status! I did the tasting menu and what stood out to me were the little details and personal touch—the chef meeting you on your way in and out, seeing fresh ingredients from the chef’s family farm, the little booklet of herbs you got to take home. The presentation and flavors were a 10/10. Even a humble tomato was elevated to perfection with watermelon-chili sorbet and a fresh sprig of basil you got to rub in your palms to soak up the experience. The shrimp with marigold and citrus was another standout. And both the pear and strawberry desserts were delicious. I loved the cute patio. We were visited by some Persian cats and even a kitten!

Whenever we travel, my husband and I peruse the Michelin Guide to see what each city has to offer. After reviewing Athens’ list and doing some research, I could tell Soil was special. I booked the Chef’s Table Experience and we thoroughly enjoyed our dinner. From the time we rang the bell at the front door, we were treated like family and well cared for. We had 17 courses and did not do the wine pairing but we were able to choose our own wine within 200 euro. They gave us the offer of tasting the pairing options on top of our wine. Another guest at the table (6 seats total) had a beer pairing which was an awesome touch. Typically, with a tasting menu, there are 1 or more dishes that do not quite work or suit me. We did not have one bad dish. Each had a special touch and story and many of the ingredients came from Soil’s garden. Chef is very passionate about his craft. We went to another Michelin restaurant the previous night and they were different aesthetics and concepts but Soil was by far the winner. If you enjoy a culinary experience, please do not miss this one.
