"With its 250-acre biodynamic Mineral Springs Ranch farm and vineyard near Carlton, Soter’s connection to and reverence for the land is evident in its thoughtful pinot noirs and nuanced traditional-method sparkling wines. This ethos is also front-and-center in the winery’s hospitality, with the ranch’s stately tasting room overlooking the grounds from its hilltop perch, swaddled by trees and vineyards. But it’s not just the wines that evoke a sense of place; the farm’s regenerative spirit continues in the farm-to-table Provisions tasting menu, with many ingredients grown or raised on-site. Open daily from 11 a.m. to 5 p.m., Soter requires reservations for all tastings." - Katherine Chew Hamilton
"Soter is the full-meal deal, and the most well-rounded winery experience you can have in the Willamette Valley. You’ll try pretty fantastic rosé, chardonnay, pinot noir, and bubbles under the same roof. You’ll stare at a vineyard view that’ll make the most sensitive human in your group say something profound, like “Holy sh*t.” And you’ll do it all on their 240-acre biodynamic slab of land known as Mineral Springs Ranch. Soter’s full kitchen sweetens the pot by way of tasting menus involving their crop—think barley tortellini with parsnip cream, or pavlova with fir tip syrup." - aimee rizzo
"Wildflowers carpet the hills of this Carlton vineyard and farm, home to grazing highland cattle, heritage breed pigs, plenty of cane berry bushes, and — of course — wine grapes. The farm, known as Mineral Springs Ranch, supplies the winery’s kitchen, run by Clyde Common alumnus Clayton Allen; Allen incorporates what he finds as a part of the MSR Provisions Tasting, which falls somewhere between a wine tasting and a prix fixe lunch. Adjusting seasonally, meals may involve house-baked bread and handmade pastas, succotash with sweet corn and wax beans, olive oil made with Mineral Springs olives, brothy ranch-raised chicken with earthy morels. The wines themselves are, clearly, no afterthought, paired well with each dish. The tasting is available Fridays through Mondays at 11:30 a.m. or 2:30 pm.; reservations are required." - Emily Teel
"Encapsulated within the biodynamic property of Mineral Springs Ranch, Soter is part of an ecosystem dedicated to the integration of its plants, animals, and soil. Located in the Yamhill-Carlton American Viticultural Area (AVA), founder Tony Soter established the sole estate vineyard on scenic and pastoral woodland in 2002. Top Chef: Portland cheftestant Sara Hauman helms the kitchen, so don’t miss the winery’s provisions tasting, which expertly pairs her creative farm-to-table dishes with Soter’s Pinots. Reservations are required for all visitors." - Janey Wong
"With stunning views of the Willamette Valley, the winery’s lodge offers two tasting options: a classic flight of their current releases or their Provisions Tasting, which pairs the flight with an expertly crafted lunch by chef Sara Hauman. Hauman uses the bounty of meat and produce from Soter’s biodynamic farm to provide a memorable farm-to-table experience. And in true yogurt-queen fashion (as she was known for her use of the versatile ingredient while on Top Chef) you can expect a yogurt-based sauce or two on your plate. Reservations are required and are available via Tock." - Janey Wong
