Easily and by far our favorite meal in Prague out of all the popular eateries and fine dining restaurants we tried over the course of a week there. The menu here is refined; dishes thoughtfully crafted. Traditional Czech flavors and techniques are incorporated intentionally with great impact to showcase the ingredients.
The struggle my husband and I had with other fine dining we tried in Prague was how the flavors or ingredients tended to be overwhelming. It takes a lot of discipline to know when to hold back, to do just enough, instead of the psychologically safe or exciting thing of adding more layers, more flavors, more ingredients. The crew at Stangl have mastered this craft.
The team here clearly understands food. They grow their own greens in-house, pickle and ferment in-house, and experiment with ingredients from other cuisines that show some level of intentionality to explore interesting flavor profiles instead of simply choosing to throw in what's hot and trendy. Beside the flavor and texture pairings being harmonious and delightful, the actual ingredients were prepared impeccably.
The service here is wonderful: warm and friendly but never intrusive. They're attentive without making you feel under scrutiny, even though we were the only ones in the restaurant!
All in all, if you had to choose one nicer restaurant for your time in Prague, I'd recommend Stangl over others like Marie B or Field. I'm not in a habit of writing reviews, but I felt I must spread the good word about Stangl.
