"Chef Martin Štangl’s eponymous Nordic-influenced fine-dining restaurant in the Karlín neighborhood, just out of the historical center, is confusing at first. Above Eska bakery, the dining room and kitchen have no barriers, so when, say, going to the bathroom, you can high five a sous chef who’s sautéing one of your five courses—such as grilled rabbit blended with saffron and mustard or whatever else the kitchen staff foraged in the nearby Bohemian forests. You’ll have a wine pairing choice between continental or Czech wines, and you should go with the latter (more affordable) choice for some funky natural varieties from south Moravia, the Czech Republic’s up-and-coming wine country.
