StreetXO, the more informal and unruly counterpart to DiverXO, is chef Dabiz Muñoz at his most playful, aggressive, and unapologetically maximalist. This is not “fine dining” in the traditional sense. It’s street food inspired cooking filtered through three Michelin-star technique and an absolutely fearless palate.
The style is loud, messy, and intentionally chaotic, but the execution is anything but. Expect explosive combinations of Asian, Spanish, and Latin influences: aggressive heat, deep umami, sharp acidity, and dishes that swing between indulgent and razor sharp. Nothing is subtle, and nothing is meant to be. Flavors are layered, bold, and relentlessly high impact, yet somehow remain controlled and precise.
What’s most impressive is how disciplined it all is beneath the madness. For all the visual chaos and punk energy, the cooking is technically serious. Sauces are tight, proteins are cooked with precision, and every dish feels engineered to hit hard and linger. This is food designed to entertain, provoke and overwhelm in the best possible way.
The open kitchen, counter seating and constant movement add to the sense that you’re eating inside a controlled explosion. It’s loud, fast and not especially comfortable and that’s entirely the point.
Hats off to Dabiz Muñoz for creating something so distinctive and uncompromising. StreetXO isn’t trying to please everyone, and that’s exactly why it works. It’s one of the most memorable, meals you can have in Madrid pure attitude, backed by serious skill.
