"Having honed his craft in Tokyo, and built his reputation in New York, Chef Masato Shimizu was one of the first to bring omakase, counter dining to Bangkok, in 2015. All the dishes are made of the finest, seasonal ingredients imported from Japanese fish markets, such as Toyosu market. The same seasonal menu is offered across two floors, but advanced reservations are necessary for the definitive experience, served by Masato himself." - Michelin Inspector

Sushi Masato offers an excellent omakase experience that stays true to traditional Japanese flavors. The ingredients are incredibly fresh, and the chef uses real wasabi, which is a rare treat even among high-end sushi spots. The craftsmanship in each piece reflects a deep respect for tradition rather than flashy creativity. Their cocktail selection is also impressive, complementing the meal perfectly. Service throughout the evening was attentive, professional, and warm, making the entire experience even more enjoyable. However, there are a few drawbacks. Booking a seat here is complicated and can be frustrating if you’re not persistent. The restaurant’s location isn’t the most convenient either, and it’s worth noting there’s no parking or valet service available. Lastly, if you’re looking for innovative or modern twists on sushi, Sushi Masato might not be for you, as the focus here is strictly on authenticity rather than experimentation. Overall, if you value tradition, top-quality ingredients, and excellent service, Sushi Masato is well worth a visit—just be prepared for a bit of a hassle getting a reservation.

What a memorable experience. Everything was handled with care and the chef lifts everyone’s mood up. I always enjoyed meals made by happy chef, the food they made usually taste better :) and knowledgeable too! The location was away from the Main Street, making it very quiet and private. While the space isn’t very big, the atmosphere was cozy and peaceful. I can only praise how delicious the omakase was. Highly recommend to try. They change the menu by Japan’s season. That’s every 2-4 months. I had the spring set this time. The ingredients seems to be sourced from Japan so the they’re adapted the menu accordingly. Will definitely be returning to try more of the menu. Also their pickles are amazing, I think I had too many.

I had really high expectations coming to Sushi Masato since they were the only sushi ya in Bangkok with a Michelin star at the time of my reservation, and it was a race to get a slot when they released their booking at 1am Singapore time. However, losing their Michelin star should have been a warning for me. The food was honestly just average. The only piece I found nice was the anago. For some reason, the uni was served extremely chilled, as though it was just taken out of the fridge, and this is the first time I have had uni at this temperature from the many places I have eaten them at. Chef Masato also kept going on about texture, but what's the point if your food doesn't taste good at all?

Phenomenal experience in short. In detail, an unforgettable omakase served in an intimate setting. Chef Masato is a Master of his craft. He is kind and personable and served what was to me the most authentic and true Japanese experience. He is a fine ambassador of his culinary craft and I will not forget this one anytime soon. The service is flawless, discreet and polite and one leaves this venue with a sad heart. Thank you Chef & Team

Busy omakase, but quiet enough to have a peaceful conversation. Chefs were insightful and chatty when asked questions or spoken to. Service staff were attentive to plates and drinks. Food was delicate and great

Chef Kano provided us with an unforgettable experience, and the best meal we have ever had. He put us at ease in an environment we weren't accustomed to straight away, and he and his staff explained everything really well. Just the best food experience you could possibly hope for, in a wonderful place I hope to return one day! Thank you chef!

This review is for level 1 with Chef Masato. Managed to get a seat here for within the week I was in Bangkok and finding it tucked away in an alley was my first step into a wonderful experience. Impeccably sequenced meal with flawless service. Such a treat to watch Chef Masato prepare each dish with seemingly effortless finesse, supported by his crew. Ingredients were extremely high-quality, with Chef Masato explaining the dishes and clearly well-trained staff seamlessly changing out cutlery, condiments in a organised orchestra. As a solo diner I felt comfortable and taken care of, with Chef asking if there was anything I disliked in the beginning of the meal. Especially loved the Sakura Masu/cherry trout, squid stuffed with ankimo, nodoguro and grilled ebi. Strawberry with a fizzy liqueur (?) in the middle was the perfect palate cleanser. ごちそうさまでした! Thank you Chef and crew for a great meal. I would love to be back.
