From the appetizer, entree, to dessert, the sauces continued to wow. Just elevated each dish. The service was exceptional. Friendly, great recommendations, and made the evening. Crab cakes with lobster bisque (hit). Mom’s Apple cake ( brandy butter sauce) are a must. This place is spacious. Great for small or large gatherings. Street parking. Thank me later.

Exceptional food and staff! Halibut is the best I've ever had served anywhere in the world and I've traveled a lot. Highly recommend their wine pairing suggestions as well. Excellent service including attention to allergy needs and never pretentious or stuffy. A better meal and atmosphere cannot be found in Oregon!

Well, where to start Service are lovely, I can see worker are trying their best to provide good service to us, no doubt about it. I love it. I appreciate their attitude that taking care of our ice cream because they run out of the special appetizer. Alcohol is really great, I’m sure if they open a bar would be a lot of ppl coming for it. No doubt for their drinks. Appetizer are absolutely disappointed, price are not expensive, around 10$ for each but did not reach what I expect, I mean their appetizer is creative but … anyhow Entrees are exactly as what I expected, about average on this price. Dessert are great, not really sweet and I believe the ice cream is hand made 🫡 Anyway, I will give 3 star not because how much I hate it, just base on the taste of the food I just think they can do better I guess.

Many people will tell you that if you're looking for high quality, delicious meals, Sybaris is one of the must-visits. As always, it pays to listen to the locals. Sybaris delights on both the food and the drink fronts. The staff were a delight- welcoming, fun, and knowledgeable and made you feel right at home. The starting bread, hand made and fresh, was fluffy, moist, and full of flavor. A perfect way to begin when accompanied by their delicious mixed drinks. The appetizers were inventive and charming, the curried peach soup with cayenne whipped cream was a fresh take on spicy and just the right amount of sweet to balance. The entrees were done to perfection. The salmon was moist with a nice sear on the outside while remaining decadent inside, and the veal was simply incredible paired with the blistered lemon sauce. Finally, the lamb merguez stuffed peppers with a mint -chile drizzle offered another unique, fun pairing of deliciousness in 3 distinctive ways. The dessert still ran away with the show, if you can believe. Our table was split between the sweet corn flan (with the best dark mole cherries) and the apricot sachertorte as our favorites. Both delectable and perfect ways to end a meal with a glass of Port. Grab a reservation (you'll probably need one) and don't hesitate to treat your tastebuds- it's definitely worth it!

Visited for a birthday dinner this evening, full family! Sybaris’ staff was very accommodating. Loved the atmosphere, service was impeccable, food was outstanding. Our table had the meatloaf, steaks, steelhead, scallops and duck and there were zero issues with any dish, fantastic attention to detail, perfectly done. I’ve had the privilege of eating at some very high end restaurants across the US, and this restaurant is right up there with the best of them. Nothing but positive feedback to give. Highly recommend.

The place seemed relaxing, atmosphere was great! However the waiter/manager was always in a rush and not very attentive! I had to interrupt his conversation he was having with the next table, which I thought was waaaay to long to be there when I needed him for something! They've say it's been in business for 24 years, but I don't think I'll be going back! The only thing I paid for was my soup, was good too! I left $1

We made reservations for our anniversary dinner. The service was excellent, so attentive and knowledgeable. The food was top notch. The whole menu looked appealing but we had the beer cheese soup, salad, flat iron steak and grilled steelhead. The vegetables blew me away, perfectly cooked cauliflower and broccoli with this lemon flavor amazing! The mashed potatoes were stellar. The steak and fish were both melt in your mouth.

I wish the website had an email contact address that I could send this review to instead of leaving it here but I am not seeing one. Management - feel free to reach out to me if you would like. My family of 6 had dinner last night and I would say it was about the worst expensive meal I have ever had. The server was lovely and sweet but that did not begin to make up for the awful food. The bread on the table was cold, served with butter served on small rocks, which could be cute, but with cold and somewhat stale bread should have been a warning of what we were in for. One person at the table had a martini (meh) but the other spicy cocktail was delicious. Wine was served too warm, warmer than room temp and while the wine itself was tasty, a restaurant this price range should know what temperature to store and serve wine. I had the lamb, which was over cooked but at least edible. The vegetables served with it were cold and unseasoned. My partner had the osso bucco - how they could call what they put on that plate osso bucco is beyond me. It was completely inedible. Dry as a bone, 100 percent flavorless and without sauce. When the server picked it up and could see that it was completely uneaten, they might have asked if it was ok. The only reason my lamb got eaten is that it was better than the osso bucco and we were seriously hungry. The lamb was served with what was supposed to be Shepard pie - it was NOT that. It was a thin layer of potato over a dish of foul gravy substance with a handful Of arugula tossed on top. Unseasoned, disgusting texture. Another person in our party had the steak. Now I completely understand that when she ordered it medium, the chef probably rolled their eyes but that is in fact how she ordered it, right or wrong, the n it came out closer to Rare and it had to be sent back. In fairness I will say the desserts were delicious. The chicory ice cream was amazing. The port was lovely. The coffee was good. But would I go back? Never. Having the tip automatically added to the bill Was insult to injury. We would have tipped the server well regardless - we were just coming from our Moms celebration of life, no one wanted a scene and the server was lovely. It just was eye rolling lay pretentious and bad.

Ug highly recommend for a date night. Ug and cavemate celebrate 16 years bonded and they didn't know and we still received the best of service. Very comfortable ambiance. Food was so delicious and portions were bigger than Ug expected. We sat and enjoyed many things over a 3 hour period as after every dish we just wanted to try more and more. Good selection of libations and delicious non alcoholic drinks. The habanero one is a must try if you no drink anymore like Ug. Ask for extra spicy. Ug take dessert to go and enjoy later. Owner knows how to make a pastry very good. Ug extremely pleased with experience.

Great food, friendly service, pleasant eclectic atmosphere. This place was everything I hoped that it would be. We were looking for a nice dinner after several days of casual eating while visiting the Albany area. Based on recommendations this seemed like the perfect spot. The menu seems to change on a regular basis depending on what is in season and available to the chef, always a good thing. A nice selection of craft cocktails (as well as the standards) are available. Also a good selection of wines. We started with a fresh selection of local heirloom tomatoes. It was fabulous! My wife enjoyed the lamb meatball and I had the duck. Both were well prepared and tasty. Accompanied by appropriate sides and a glass of wine recommended by the staff. The Chocolate Hazelnut Cake is their signature dessert, and well deserves its reputation. In the Albany area you can't do wrong with a meal here!

Came to Sybaris for the Bill Carr Scholarship Fundraiser Dinner and WOW! The food and service was top notch! A special menu fit for the pilgrims of today! Venison terrible, clam fritters, silky squash and roasted pepper soup, butter roasted cod and lobster succotash, duck confit and stuffed pumkin and warm hasty pudding! It was all amazing! Like lick the plate clean yummy! And! We happened to raise over $74,000 for the Albany School Foundation!

I went here for an anniversary dinner and it was phenomenal! The restaurant is cozy but still spaced out well where you can enjoy your own meal without being crammed. They had a huge drink menu and some great nonalcoholic beverage choices as well. Our server was top notch and very enjoyable. He had great recommendations and was very attentive. I had the successful Michigan Hunters mixed grill and it was delicious. My girlfriend had the sturgeon which was also great! We had the apple cake for dessert and loved it. All and all a fantastic experience start to finish, will be returning!

Loved the squash sauce with the prawn dinner special and the soufflé was amazing!! Our waitress was so busy but still managed to be attentive and did a great job serving with the sauces poured correctly! The venue is great with the brick walls and tables arranged so it feels private!

Chefkoch Matt und seine Frau Janel haben über viele Jahre hinweg die höchsten Standards aufrechterhalten. Er ändert das Menü jeden Monat mit köstlichen Vorspeisen, Hauptgerichten und Desserts, deren Zutaten, wenn möglich, aus der Region stammen. Sybaris is special in Albany, or all of Oregon for that matter. My family and my parents and I have dined here regularly. It is in the space that was at one time, long ago, a blacksmith's shop. It is not far from the Willamette River where there was a ferry crossing, at one time. It is steeped in history. But best is the special dining that changes daily as the Chef (Matt Bennett, previously from Manhattan, NY) sees fit. If you are in Albany, or anywhere in the Valley, from Salem to Eugene, you will not find any better place for a special dinner with family and friends.

Great food and staff. We were on a 3 week road trip, this was the best meal of the trip. Sturgeon in red pepper sour cream sauce and chocolate cake were standouts. Waitress and chef were friendly and helped make it a great dinner.

I just wish there was better outdoor seating than sitting right out front surrounded by the hot cement and asphalt in the heat of the summer. I'm hopeful the new location will have such a setting.

Our party of four tried Sybaris based on the positive reviews but sadly, were disappointed. The overall ambiance was nothing special, mostly due to the large open space, minimal decor and overhead lighting. We were expecting a more intimate experience with soft, cozy lighting. We never even saw the fireplace that is highlighted in the online pictures due to where we were seated and the room was so chilly my wife kept her jacket on the whole time. She had a lemondrop cocktail that was sour and lacked flavor. Beers and wine were good. Various breads were provided, but were cold and lacked flavor. Butter was weirdly served on chilled rocks, which made it difficult to pass and spread. After awhile, it slid off onto the table. Because the menu changes, we were disappointed that some of the options we saw online were not available. We had the flat iron steaks (very good) and BBQ meatloaf which I'm still flabbergasted was served in a "fine dining" establishment. Basically, a slab of dense flavorless meatloaf with a dollop of standard fare BBQ sauce. For dessert, our table shared a carrot cake, which was a huge slab but extremely disappointing. It was very cold and dense and mostly nuts and frosting. Also, our waiter must've had too many tables as he was not very attentive. The meal dragged. Sorry Sybaris, we know you have a lot of great reviews, but we will not be going back. When asked, have told people it's over-rated and pretentious. 3 stars

What a satisfying experience. First off, they're working through the Covid thing like everyone else. With that, I mean one glaring thing I've noticed with a lot of businesses is they tend to go overboard, often leaving me feeling like a Leper. This was NOT the case for Sybaris. They've limited tables, have outdoor seating (which is super nice on a good day), and they have a seating arrangement that is limited, but still feels natural. A blast from the past so to speak, like 2019. Lol. Anyway, I took my wife here. The occasion you ask? We found a babysitter, so, "because reasons," as I like the say. We made reservations and arrived on time. Our table was ready and waiting. We had one of the most amazing servers. I wish I remembered her name, but she really created and supported a great experience. Food. Wow! I had the steak, which isn't typical of me. The steak was seasoned well. Unfortunately, it was a bit undercooked. Despite this. It was served over a bed of, essentially very tasty and crispy hash browns. Excellent idea. It was paired with a few asparagus. I do with there was a little more. Other than the undercooked part, it was fantastic and Id still recommend it to the next guest. Wife had the earth day dish. This was great. I thought it tasted fresh, with a bit of earthiness to it, and had a lot of flavors. Excellent idea. We shared a Salmon Cake. It was great and went even better with the bread they serve with the table. I wish they would have had some crostini type options to go with it. Ugh, that would have made it phenomenal. Overall, this restaurant has a dark, romantic setting inside. It was quiet, warm and inviting. The service was a 11/10. The gal we had was outstanding and a true gem to the restaurant. I wish I could remember her name. She was always attentive and drinks were never empty, ever. I digress in saying, come here for a nice date with your significant other. Plan to be gone for several hours and enjoy your company and the atmosphere they provide you with. You won't regret it.

I would say that this is one of the nicer restaurants in the Albany/Corvallis area. The ambience it's perfect for a date night or special occasion. Our server was as attentive as you would expect for a nice restaurant. The menu changes seasonally, so the items we had may not be available during your dinner. The heirloom tomato salad was extremely good! All the food was very good. We had a very nice experience here.

I was in town from San Francisco visiting my eldest child for their birthday. We kicked off the celebration at Sybaris and what a great way to start. I wanted to KISS the chef in gratitude for the amazing food. The chawan mushi was a delightful upgrade to a traditional Japanese comfort food. I especially enjoyed the crisp rinkon and seaweed with (surprise!) ginger. But the duck, oh my! Rich duck breast with a mustardy sauce and (this is when I wanted to kiss the chef) cherries. So yummy. Also the server was super. Positive, energetic, friendly and knowledgeable. I hope that I'll be able to visit again.

The food was delicious. Our server was personable and knowledgeable. My husband had the Black Cod and loved the whole plate. I had the Halibut and it was fresh and delicious. Their signature cocktails were excellent. Next time we'll save room for dessert. Highly recommend for special events. The ambiance is cozy and comfortable.

Sybaris is the best restaurant for miles around. The ambience is historic brick walls and high ceilings. For adventurous diners, getting on the mailing list for the monthly menu or checking it out online is lots of fun. For less adventurous diners, there is always a fairly plain option to fall back on. The waitstaff is knowledgeable and professional. Vegetarian options are limited.

I guess this place does monthly menus... unfortunately for the month of May (5/2023), the menu was "British". This made ordering an entree that much harder... I went out of my comfort zone and ordered something "British" rather than a safe order of Steak and Potatoes. That was a mistake. The "fish" I ordered was good, but it was placed on a soaking and soggy piece of garlic bread in a pool of sauce that was not so pleasant. The side was a bunch of streamed edamame beans and spinach, which felt very out of place. Also Soy=estrogen... no tks... On the drink menu, the drinks had their descriptions/ingredients next to it. The cucumber cooler looked like a healthy cocktail; Vodka, Lime, mint, cucumber and lime juice. Well, I should have asked... the "lime juice" was just a bunch of simple syrup and sugar b*llcr*p! The service was alright... the woman had a pure soul, but wasn't the most polite. Water pours were improper and we were given dessert menus to start. Somehow, she made every interaction extremely awkward (its not just me). The dessert order was creme brûlée. I don't know much about desserts, but the person I was eating with said it was not what creme brûlée should be like. The ambiance was good and the tall ceilings were nice. Its too bad that its in such a weird location. I think on a better menu Month this place is a 3.6/5 star, but for this month I have to give it a 2/5. Not a place I would go to again and I would not recommend. Hopefully they don't do "British" menus again, or make the menu better...

Passing through on a business trip. Typical small town, where foods are meh and everything is closed by 7pm. Luckily, Janel let me in. It was 3min 'til closing. My expectation was low, but chef Matt (Janel's husband), blew it out of the water. The meal was quite fantastic. They change the menu monthly, 1st Tuesday of the month I believe. So, I wouldn't even mention the specifics of the dish, other than it was very thoughtfully prepared and is top notch. If you drink, the wine pairing with the dish is practically required. I am from LA, and this place in LA would need reservation weeks in advanced. Oh and the price. It has $$$ from Yelp. Matt and Jenelle, you guys should raise your price. The price for what you get is extremely low. Who would have thought, this food in Albany? What a treat. Can't wait until I am in town again. You locals are lucky.

We recently moved to Albany and started exploring the dining scene and Sybaris blew our wildest expectations out of the water. The food was phenomenal; we shared a braised cabbage steak with wild bore sausage for appetizers, I had squab with creamed morels and polenta and my partner had Bastille Day leg of lamb. Every single part of each dish was cooked in a way that it could be perfect on its own, but put together with everything else was just mind blowing. The drinks (cocktails, wine, espresso) were all delicious, refreshing and complemented the dishes. Finally, the service was truly some of the best I've ever encountered; Jessie struck the perfect chord of being friendly and attentive in a way that elevated an already exceptional meal into an experience. All in all, we're delighted to live somewhere that we can enjoy such a wonderful place

I think that this beautiful bistro in down town Albany is one of my most favorite restaurants in the world !!! My goodness the staff is extraordinary with helpful advice, just listening to the description of the various menu choices was truly amazing! The Oyster & Crab appetizers were such excellent taste treats, yummy good ! Looking back now, at the memory of my entree, THE Exploded Nettle & Fresh Cheese Ravioli ! Well, it still makes the hair on my arms stand up and my taste buds sigh with the pure joy of the Hollandaise sauce ... it was ... beyond my dreams of deliciousness The other meals were, Double Clam Linguine I couldn't believe ALL of the clams piled so high and I was told it was delicious. The most unique meal was the Tandoori Spiced Wild Shrimp this was such an incredible taste sensation !!! The Flat Iron steak was grilled to perfection. Then we decided to just look at the dessert menu . We are so happy that we indulged in the Chocolate Hazelnut Cake ... truly the very best treat. I am now trying to come up with a reason to return to Albany and the Sybaris Bistro ‼ Sorry I didn't take pictures of our meals ... hey just found my reason to return to the Sybaris for the photo

One of the BEST restaurants in Albany and the surrounding area. First the atmosphere is so warm and inviting. The service is friendly and perfect! The selection of wine and cocktails are amazing and all the food choices are creative and sound so appetizing which makes it hard to pick just one and to end the evening with a fun, creative and tasty dessert is a perfect ending. Definitely one of my favorite places to go for a nice dinner with my Honey.

1st time for dinner recently. Very impressive. The flavorings/sauces were especially good. The mixed greens salad was very simple (and generous) - just very fresh greens, but its dressing was superb: I had never before thought of mustard as a *subtle* seasoning. Not oily and just the mildest saltiness. The star of the show was a chicken terrine whose recipe the chef had tailored to accompany a Pinot Noir tasting. We even had a little tasting of our own, each of us ordering a different glass of Pinot and then sharing them. Real attention to flavors and a very nice experience. We second the other 5-star reviews. We'll be back.

A gem in Albany. Picked up at airport by my aunt and cousin and they took me here for dinner. It is there favorite place in town and I can see why. Delicious food, friendly staff, delightful owners and relaxing ambiance. So much good food that I don't know where to begin. Trust the recommendations. I couldn't decide between two items and they steered me in the right direction. The left over chocolate cake makes a great breakfast!

I would choose Sybaris 100 times over the best Corvallis has to offer, including Del Alma. An always friendly, welcoming atmosphere and excellent service. You truly feel like a guest. High quality ingredients and an ever changing menu to keep things fresh. There is no food style or season outside of this teams' wheelhouse. They always deliver. Prices are competitive and expected for this range of fare - you will get what you pay for and not be disappointed. If you live in Corvallis and you're too cool for Albany, this post is especially for you. Ride your high horse over to Sybaris for the best date-night dinner the mid-valley has to offer.

I went here with family to celebrate my 70th birthday and everyone was underwhelmed by our food. The service was okay but not stellar. We ordered appetizers that were not worth the price. The venison heart appetizer was compared to hormel chili out of a can. The cod though cooked to perfection was bland, as cod is, but I expected that the chef would add something that would make it more interesting. The green bean "casserole" was trying too hard and just didn't work with the rest of the plate. As for my companions, a couple steaks (okay) the bird bigo (unappealing) and the hasenpfeffer sausage (boring). The cabbage with it was not great either, as my daughter let me try it. And I love cooked cabbage. The cocktails were good. All in all, I was disappointed in the food but we had a good time anyway as we love each other.

What a great evening! You know how sometimes you just need to feel "taken care of" - this was it so we spent the evening at Sybaris. Jesse was a fabulous! He took care of our questions and provided everything we needed (such as a superb martini!). I hadn't taken a peak at the menu as I usually do, but we were not disappointed! The monk fish and "big birdos" dishes were wonderful and the German chocolate tres leches cake was a perfect ending with fresh brewed coffee.... Seriously, our favorite place for great food and some wonderfully special attention.....

Can you give more than 5 stars? Because this place deserves it. The food is exquisite and the service is top notch. Matt and Janel have created a dining experience that is phenomenal! I highly recommend the Oyster Stew in December. The staff is amazing. Jesse always knows what I would like to drink and what would go with the food I order. Thank you Sybaris for the superb service, food and the warm friendly environment.

Celebrated my husband and sons birthdays last night at the Sybaris. There were 4 of us and all the food was outstanding, the halibut on corn chowder deserves a special mention, it was amazing. Service was very good as usual. Can't wait to go back again.

I love Sybaris. They do what they do very well. I do wish their menu was a bit more extensive, but they regularly rotate dishes so there is usually something different to try. I have loved every dish and desert from here. I am pretty sure the individuals I met who i think were the owners - who were super sweet and incredible people - while dining and would absolutely return.

This was a good but not remarkable meal. Flavors were a little more muted than one might want. For starters the miso cream cheese had far too few crackers for the amount of cream cheese. Banh mi salad was excellent -- a standout part of the meal. Goulash with venison cheeks definitely seemed to want salt and I never add salt nor did I this time. Salmon en croute was a little flat and lacking in complexity leaving a too dominant salmon flavor. By contrast, the Yorkshire sausage entree was an absolute knockout. Desserts were very good with a lovely creme brulee over what tasted like stewed apple and an amazing (if egg-y) "snow egg" which was reminiscent of an île flottante ordered in Chartres nigh on 20 years ago. Service was friendly but hesitant and a little nervous and distant. Not a complaint per se, but would have liked more engagement and narration of the menu. All in all, good. No doubt the best Albany has to offer. Still, room for improvement.
