This is not gourmet or the best Mexican food in Colorado, not even close. For you SoCal transplants, this is reminiscent of that chain of fast-Mex joints that ends in "to's". Some of it is downright bleh, yet I've been here three times now! So, I've been going back and forth between a 3 and 4-star rating, but I'm holding at an A-OK rating of 3.
First of all, the double drive-thru is ridiculous, especially since they don't deliver food at drive-thru speeds. So, if there's a line, prepare to wait and wait. And don't think you can circumvent the madness by parking and going to the window. No matter what and especially if they're busy, be prepared to wait a good 20+ minutes. The upside, of course, is that I've always gotten hot AF, freshly prepared food.
Speaking of the food, I think it really depends on individual menu items. The first time we went, I got a chicken quesadilla. It was huge and full of cheese, but the large chunks of chicken were bland and so watery, the whole thing was a soggy inedible mess. Tacos were standard with not a lot of flavor in the carne asada. Store bought tortillas were a little rubbery and it just needed a really good dosing of salsa to make it worth eating. Wife got taquitos, which were pretty standard for a semi-fast food joint. Half melted cheese, basic guac, nothing special, but sorta hit the spot.
The next couple of times were much better, I think because we kept it simple. Ordered the Colorado Burrito which comes with carne asada, potatoes (actually french fries), cheese and salsa. Not much can go wrong here and, it was pretty tasty with the cheese and salsa giving the meat much needed flavor. The green and red salsas that they pack with your order also added some nice heat and dimension. What I actually really appreciated is that they rolled this burrito nice and tight, so it was easy to eat while in the car and stayed hot all the way through.
On our third visit, it was early-ish on a Sunday and holy shit, there was no line! Again, keeping it basic yielded a decent meal. Wife got a sausage breakfast burrito, and I went with bacon. Inside was meat, egg, cheese and "potato" according to the menu but french fries yet again. Really solid burrito, proper dispersion of ingredients so there were no "pockets" of just egg or just meat. And again, a nice tight roll that made it easy to eat. I actually had to give up about three-quarters of the way through. It was very filling, and I'm not the type of gal who fills up quickly.
Overall, not a place I'd go for a delicious, authentic meal. But if I'm in the mood for (sorta) quick and easy and a few steps above Taco Bell, this fits the bill. I do think the prices are a little high considering the quality just isn't there but nothing outrageous. If the line is short and you're not expecting a 5-star experience, definitely give them a try.
