A Guide to Oysters Around the Globe

"With its coin-shaped shell, the Angasi is native to Australia and is mainly cultured on the Tasmanian coast. Unlike its Sydney Rock cousins, it’s known to be a rather slow grower and quite fragile—a rare treat that’s best to be consumed right after harvesting."

Quick stop on our way back to Hobart from Port Arthur and what a find! Anyone who lives there freshest oysters on the planet should stop here. Affordable, amazingly fresh oysters and OMG, Tassie Golds; life changing. Worth the one minute detour but I would have driven hours now that I know.

Just had the pleasure of attending a function as part of the North Festival in Launceston, featuring oysters from Tasmanian Oyster Company. Amazing! Some of the best Tassie oysters I have ever had. And the guys were very knowledgeable and happy to talk about the product.
