This is a true butcher shop. They have a case with seafood. Today they had scallops, shrimp, oysters, and fish. The meat case had beautiful beef. There were the common cuts and some specialty cuts. There were really nice pork cuts. The also have spices, rubs, BBQ, tools, and T shirts. The staff is super. They are knowledgeable, helpful, and friendly. They will offer cooking tips, and provide special cuts. There are few real butcher shops left, and even fewer like the Chop Shop.

Great product (NY ribeye) and great crew. My dad asked if they had a different piece that the one exposed, with more intramuscular fat, the butcher cut a new set of pieces so he could choose. We grilled it and it was top-level. I guess price is in the high end but it’s worthy.

The team is just great. We did a "scout" visit so we could plan for our weekend meals and the whole team supported it. When we came back the next day they were ready. Seam butchery shows up in the case, which is great for anyone looking for a cut you haven't tried before. I'd argue their dried aging beats most heritage or waygu you will find in your chain butcher. Oh and there was the cheese and cured meat case...my oh my. I hope they open in the Triangle.

Randomly came into the butcher shop the other day. I was greeted with a hello and many friendly smiles. Everyone in the shop appeared to be super friendly and very knowledgeable about all their products. I bought a delicious slab of Osaka Salmon for a dinner party I was hosting and holy smokes it blew everyone out of the water with it fresh and incredible flavor. I also purchased some of their chefs special beer sausages and let me tell you absolutely mind blowing flavor. I will without a doubt be back soon! You can’t go wrong here, yall definitely gained my future business!!

Amazing butcher shop! Has multiple options and cuts of beef, pork, poultry, fish, shrimp, sausage, sandwich meats, cheeses, etc. Even cutlery, spices, and cast iron cookware. Bought 2 lbs of beef liver, & a quart of beef bone broth. One of the butchers, Alex helped me and was efficient and kind. The one stop heavenly shop for omnivores! Products: Fresh and local rotating selection of various fish, chicken, pork, steak, bones to roast for marrow and stock, jerky, turkey, and more. Ps: House made brisket on Fridays (you're welcome!) Quality: Best in town, always fresh and local. It's easy to be a great chef when you're working with great products. Awesome Staff: They cut everything down in house. Very knowledgeable about each piece in the case, including occasional cooking tips. Sustainability: This is THE way to support sustainable animal agriculture! The prices reflect the quality and local availability - its not always easy for small farmers, especially in today's economy. There will always be people that can't/won't be vegan. I have so many food allergies, including to the all too common legumes (soy, peas, beans, etc).

We were so excited to find this butcher shop, and even more delighted when we reached out to them and everyone was so kind and helpful. Spoke with Joanna as we were planning a special dinner and the recipe called for outside skirt. It was so awesome that we went back again and bought more! It was also great to be able to place the order ahead of time so it could be ready for pick-up. They have such a great selection of meats and other products; can't say enough good things about this place and this team. Check them out!

BACON, EGGS and PRIME RIB all in the same place!! First off you'll walk in and find handsome butchers to cut up and package your meat perfectly lol Super nice upon entry I had to buy from these guys! Bacon and prime rib were both sliced to order. I could smell the bacon as soon as we walked in it was awesome. The fact they sell fresh eggs was a bonus. Yes, incredible bacon. Just cooked the prime rib, it was about 4.5 pounds. Simply roasted medium rare it came out amazing. I will be back next time I'm in town. Thank you!

Was in town for a mini family reunion and needed a good butcher to make a family steak dinner. The Chop Shop didn't disappoint! I told them exactly what I was looking for because they didn't have it behind the glass at the counter. He came back with an absolutely gorgeous, 45 day dry aged rib roast. These things were absolutely gorgeous (pics included below). I asked for the two thickest tomahawks, the butcher sliced them fresh for me, and was on my way. Dry brined them overnight, smoked/reverse seared on my brother's SnS travel kettle. It was a tight fit but we made it work. Everyone at the table said these were the best steaks they ever had! I make a lot of steaks, but the quality of these steaks were unlike anything I've ever had before. Truly worth the price, particularly for a special occasion (which this was). The alternative was getting a couple of tomahawks from Sam's Club, and believe me when I say these absolutely blow anything from Sam's out of the water! As in...not even close!

This butcher has amazing meats, cheeses and fish. All organic and sourced locally. We live 40 minutes away and consider this well worth the drive. The only place around that carries Denver steak, if you have never tried this cut try one!

Treated myself to a perfectly wonderful steak! My chuck eye steak was delicious, nothing needed but salt and pepper! Was blown away at all the various options from the meat & chicken, fridge & freezer items to the wine selection. They even have a small offering of seafood! I noticed they offer classes as well, looked online and the next class is already sold out; so, if there is any interest in taking one of their classes, definitely sign up early. Looking forward to popping in someday soon for lunch!

I have a soft spot for meat lockers and butchers. Perhaps this is the reason for my two star rather than a one star. I purchased ground beef and breakfast sausage. Both were cooked and ended in the garbage. The ground beef was "off". It had a strange barnyard flavor that my wife immediately binned. The breakfast sausage is seasoned like no other I've tasted. Please find a new recipe. This one is unbalanced and spikey in herb flavors. To be clear the beef was eaten same day as purchased and the sausage was eaten two days later. I really liked the store, even though the staff wasn't particularly friendly. Too bad.

This place is seriously on point with quality, service and amazing selection. The meats are top notch. I won't even question the cost because you can't put a price on the quality of amazing meat and where it's from in this gem. There is a kid behind the counter who looks like he's 15 but very wise beyond his years! He just knows everything to the pick of meat to the wine pairing. This kid (probably an adult) went above and beyond himself to find the wine i wanted because he ran out, sent me to his distribution place. Made a phone call for me as I stood there. He just knows it all and he is super on point with his suggestions. I have been here like 3 times now as we just visit the area for long stays and we are super impressed with their sausages and the meats. This will definitely be a place I will come back to. The chicken is better then anything you can get in the supermarkets too!!! Have I said how much I love this place!!!!

Unsanitary! Came here Friday night and the guy behind the counter picked up several pieces of meat to show my husband and wore no gloves!! In the interim he rubbed his closely shaved beard and picked up another pieces of meat! This place has disgusting employees and why is there not a protocol by the OWNER that all employees must where gloves??! So gross!

We make it a point to stop at the Chop Shop every single time we're in Asheville! We load up the cooler with goodies like short ribs, house cured bacon and skirt steak. Other favorites include the jerky, pastrami, guanciale and duck (breast and fat). They also have a great selection of left over bits and pieces (literally) in the dog treat basket. The employees are always super friendly and patient. We never know what we want to get when we go in and they put up with us wandering around the tiny store in circles hemming and hawing. They make excellent suggestions but never overbearingly so and always send us away with ice for our coolers.

Great place to get super fresh, high quality, local steaks. There is also a ton of variety of other meats/seafood as well! Easy to order online for pick-up (there is also delivery options). You pick a time online and once your order is ready, you'll receive a text. Easy to stop on the curb (there are also a few parking spots), make a quick phone call, and someone comes out quickly to give you your order.

This is a weekly stop on our grocery run. Meats, wonderful meats. And seafood. And spices. And wine. This is the real deal in AVL. Best to ask the counter folks what they recommend - you may be surprised. Cold smoked bone in pork chops were the best thing ever tasted from my grill! Homemade sausages - curry wurst, Toulouse, and andouille. Go here, get meat, EAT!

What isn't to love about this place?? We've had charcuterie, steaks, pork chops, scallops and now their Florida Royal Red Shrimp (cooked according to their guidance----SO delicious)! From their pre-cooked we've had chicken pot pie, barbacoa and carnitas (tacos for the win!)...they've got it going on! But they also have amazing curbside delivery during Covid ... pull up and they bring your order out. They forgot one of our freezer items and when I swung back around to pick up they tossed in some salami on the house. Great folks, fantastic service and amazing meats!!

I was looking for a beef tenderloin, already trimmed and tied, and decided to try the Chop Shop. They weren't sure if their supplier was going to deliver one, but took my mobile and said they would call later that day. No call, so the next day I called them. They did not remember the request, and said they wouldn't have any for at least a week. I have heard they are over priced from several friends who have shopped there over the last couple of years. The meat quality seemed to be OK, but not competitively priced. I will continue to get my meat from the Fresh Market, which offers Choice and Prime cuts at lower prices, and whose ground beef is processed each morning. No reason to go back, this place doesn't offer anything I can't get for less money elsewhere, with at least the same quality.

This place is absolutely fantastic! I went for lunch and was amazed to see a charcuterie board listed for $12.99! The quality of all of the meats was amazing along with the cheeses and sides served with it. My absolute favorite was the jar of bacon jam. It had so much flavor in it! I'm definitely coming back for more!

We've been buying the sandwich ham by the pound for a year. Thankfully during covid, you called order in and butcher would bring it out to car. Excellent, best thin sliced ham, fresh and tender. Only complaint is they run out of a lot. Which I guess isn't the worse thing. Last wk I ventured inside to pick up a steak for husbands birthday. Not knowing what to get, butcher gave me suggestions and offered advice on cooking it properly. Well, husband made so many yum noises and never talked to me while eating....ha.. He was more than satisfied. Thank you and keep up the good work.

I, on the other hand am not wealthy and grew up on a modest butcher shop in Michigan and almost pooped my pants when I saw the Ribeye steak for $32/pound. For sure one of the best places I know for all meat and I m from Germany! Everything is fresh and looks tasty! When I don't know the name of a part I need to make German sausage they are really helpful and investigate with me! You can order specialties like goose or pork liver and they call you when it arrives. In the freezer are the things that are not sold so frequent like rabbit or quail. They even have cow tongue. The meat is local and they know the farmers they are interested in your receipts and share theirs oh and it smells just so good!

This is a real gem- a high-rent place for sure, but you get what you pay for. Whatever you buy there will be fresh, high-quality, mostly local fare from ethically-raised animals. This is the kind of place where you can order exactly what you want. The folks behind the counter know what they're doing, and can custom-trim, etc. exactly as you need. Just like the neighborhood butcher shop my Mom went to 50 years ago, before Cargill Boxed Beef became the norm. The customer service is top-notch too, I had a problem with a recent order, and while I was disappointed at first, they wasted no time making good, which is all I ask for. Shops are run by fallible humans, and mistakes will be made, but every mistake is a valuable opportunity to shine, and they did.

Recently discovered but very impressed! Moving from Charleston,SC over a year ago made me have to start over with my sources. So glad to have found this place as I was doing a catering for 15 men during a fun weekend they were having. I called first to ask about their selection and was told they could answer my questions through email. I emailed and they responded with prices per pound. First, in case everyone doesn't know, you get what you pay for so it's worth it. Anyway, for my catering I wanted to do good quality charcuterie. I purchased house made and imported meats: bresaola, prosciutto, capicolla, sopressata, and head cheese. Everyone loved everything, especially the bresaola! They also slice all the charcuterie for you, without attitude I might add. Very awesome! We also purchased some of their Carolina bologna that we were told is something they play with a bit. They make Carolina sausages and decided to try dry curing it. It worked out well! They also have a lot of fresh local meat and poultry and seafood such as sashimi tuna, shrimp, etc. The boneless skinless chicken thighs were the best looking we have ever seen. So they also have a freezer section that isn't very noticeable. They have duck fat, tallow, chicken livers, bones for stock, etc. If you are a culinarian, this is a must!

Still, they took their time with us, giving suggestions and explanations about a couple different cuts of steak. Not cheap, but worth every penny. The steak (and Paso Robles wine) were delicious!

Their smoked Kielbasa is the best! The staff is knowledgeable and super friendly. Great local pickles and condiments. They have lots of cuts that are hard to find anywhere else. You can tell they about where the food comes from an how you will cook it. Skip the grocery stores in the area and go see a real butcher!

I wanted some better meat than ingles and the local grocery stores so after looking at positive reviews on Yelp I figured to give this place a shot! All though I work at a high end steakhouse I am front of house and don't have much experience cooking, However I'm starting to learn so I'm starting with cheaper cuts. The lady who assisted me and my girlfriend I think her name was Anne was very helpful and knowledgable informing me about all the meats and where they are on the cow. We bought 2 chuck eye steaks and some bones for our dogs! The total came out to about 20$ and as I was checking out she gave me a slab of hamburger meat for free that she wanted me to try! Definitely Recommend & I will be back for more steaks!

We were in Asheville visiting friends and were on a mission to find dry aged beef to make the best burger ever for our friends/hosts. We stumbled upon the Chop House based on a Google search. First, I have to say the butcher was incredibly knowledgeable. He answered our questions and even saved us a ton of money with his recommendations. He swore the beef would be what we needed it to be and he was 100% right. The beef was delicious as was the manchego cheese he recommended. Lastly, he pointed us to a spot where we could find pretzel rolls. Fantastic customer service and an even better product.

I typed in one star and the message says, "Not good." Yeah, not good. I've never shopped at the Chop Shop Butchery before because I have a couple wonderful butchers in my neighborhood that I use. I've eaten lots of meat from the Shop and it's always been good. My partner shops there a lot. I've had no complaints. But over a week ago they were advertising a St. Patrick's Day special -- Corned Beef Brisket box with all the trimmings. It was expensive, but I wanted to surprise my partner who has been making corned beef and cabbage for me on St. Patrick's Day for around 30 years. So, I thought I'd treat her for a change. I ordered the box to be picked up the day before I was going to cook it. I brought it home, unpacked it, and stored the ingredients in the refrigerator -- a beef brisket with a beautiful fat cap, a couple carrots, some small red potatoes, a quarter head of cabbage, a quart of beef stock, and a pickling spice pack. The next day when I cut open the cryovac package with the meat I thought, "this looks like a regular brisket" but the included recipe was entitled "How to cook your corned beef brisket" so I preceded. About a hour into the three hour simmering process I noticed the brisket was not pink but had turned a grey-brown color and I realized the brisket had not been corned at all. I was too far into it not to continue. Long story short I had just ruined a $63 cut of beef. My partner looked at the finished beef and confirmed that it hadn't been corned. It was tire rubber on a plate. If I had known what I was getting I would have seared it and oven-braised it like I would an ordinary brisket but instead I followed the Chop Shop instructions to the letter and St. Pat's dinner was a complete fiasco. Totally inedible. When I called the Shop the next day the woman I spoke to was terribly apologetic but said she'd have the manager call me when he came in the following day. He didn't call. I noticed several other people on Yelp mentioned they couldn't get a return phone call either. Apparently they just don't care about the customers as long as they get their money. The woman I spoke to also told me it was their way to hot-cure the brisket when it was cooking, hence the spice package, which by the way included no salt. I tasted the beef broth they included and it was wonderful but again no salt. What do they not get about the corning process?! Corning is a five to seven day process and that's why it's usually expensive. Tire rubber. $63. I wouldn't be writing if the manager had indeed called me but now I'm just angry. Needless to say I won't shop there again. These people are truly clueless. The term "corning" comes from the archaic word used for salting. I know it's Asheville but still if you're going to call yourself a butcher you need to know these things. Just know that if you do shop there you need to know what to do with the meat. They don't. I won't ever leave my neighborhood butcher shop again. And at least they're nice. Oh, and my partner has decided to drive over to my neighborhood from now on for her meat. She was upset also. $63. Tire rubber.

I love coming here. The beef is super tender. The workers are knowledgeable and friendly. Just like any small business butcher, if there's a specific thing you want, calling ahead is smart. But why call ahead when you know you wanna buy everything in the store even if they don't have that one thing...

Being from northeast, the Chop Shop is about as close to that old-time, white aproned butcher as I am used to. But they are way more expensive. The Chop Shop carries a variety of beef, pork, chicken, venison and other game meats, sausages and some fish. Most everything is already pre-cut; which sometimes works out for you and sometimes not. The quality of their food is high but I scratch my head as I watch them work. Once I ordered a piece of beef at $10.00 per pound and found a large slap of fat on it when I got home. I cut off the excess fat but that likely cost me about $5.00. Another time I ordered beef and asked them to trim off the excess fat. They did, but they first weighed and priced the piece with the fat on it. Just reminds me of a butcher pressing his finger on the scale. Anyway, the Chop Shop is the only butcher game in town. You either pay the price for good food or shop at Ingels and chew and chew.

I visited with my girlfriend to get some steaks and peruse a little. We had been waiting for it to open since before the "Opening this summer" sign was taken down in defeat. Their selection isn't exhaustive, but they cover all of the basics plus some, and probably has one of the better, if not the best, selection of non offal meats in town. They also have a small selection of pantry items (oils, vinegars, spice rubs.. that kind of stuff). This is the sort of place where you can ask the guy/girl behind the counter something- and they'll know. As for our trip, I was pleased to see venison and rabbit in the reach-in, we asked for a couple flavorful inexpensive steaks.. The guy behind the counter was a little defensive over the pricing (for the record: the pricing was very fair, it's just that we're broke) It's worth noting that for about $20 we bought 2 aged sirloin steaks that fed us dinner and lunch. I cooked them between bleu and rare with salt and pepper- making sure to get a crust on them in a smoke-alarm tempting pan. The steaks were great. For a cut that is widely regarded as flavorful but chewy, these were very flavorful and not at all tough. I know that it's a little hard to judge a place on one visit, but if I had the cash, I'd be there a lot more often. My only wish is that they would carry more offal, and possibly provide me with a stipend paid in meat.

Completely awesome! Since they have been open, we've tried several beef and pork cuts, all better than, say, Earthfare or Harris-Teeter, and at about the same price. We also roasted a duck from The Chop Shop which was out of this world. Two weeks ago we tried their home-made cassoulet, which was the best I've had this side of Paris. We also hear the sausages are amazing, but haven't tried them yet.

This is a great place. When entertaining in the past, we would go to the grocery store, grab whatever meat appeared best and go home to do what we could with it. Now, we take our company WITH us to the chop shop, buy quality food that appeals to every sense and go home to prepare it together. The quality of these ingredients compels you to care more. It's an odd thing I guess. But it's real. Try it for yourself. Your guests will go from "great dinner, thanks" to "this has been amazing. I can't believe you know your butcher".

This is an amazing shop. Even when they are slammed before a holiday they are so polite and apologetic. Every single employee that walked out apologized for the delay and greeted everyone with a friendly smile. The service was great and the meat was fantastic. I never write reviews but I can say this place deserves it!!!!!!

Incredible butcher shop. Definitely not the cheapest place but we got a huge dry aged porterhouse for the family and it was one of the best Steaks I've ever fixed at home. We were just visiting Asheville but I would go there for special occasions if I lived there, Although the prices Could Definitely come down a bit.

This is definitely the best place in town to buy local meats. They also make the best tuna salad with fresh ahi! All of their employees are awesome. Love love love

I used the shop to purchase some steaks, chops and sausage to cook in my home. The quality of the meat was good but I got shorted one hamburger patty and the pork chops had almost an inch of fat surrounding them. Considering this place is not exactly cheap I would have expected a bit better and don't intend to return. Additionally, my initial email to them was not answered and I wrote another one to express my dissatisfaction and that one was not returned either. Get on the ball guys!
