"Start with drinks on the terrace as the sun goes down, then move into the impressive new kitchen, refitted at the start of the year, for delectable, cleverly crafted nibbles like “mango, tamarind glaze” and “eel, citrus, aigre-doux” while chatting to a palpably passionate team. The neutral, serene dining room keeps the focus on exceptional food that’s packed with Niall Keating’s personality: an appealing multi-course set menu (meat, vegetarian, vegan and pescatarian) delivers accomplished modern cooking whose well-measured originality balances classic and contemporary techniques; despite the visual simplicity, many elements are at play and the flavour combinations are simply sublime. Asian influences—particularly Korean and Japanese inspired by his travels—meet ingredients kept close to home from trusted farms, fishermen and suppliers in Devon and the West Country, with standout dishes including grilled king crab custard; “risotto”, chorizo and scallop; and Wagyu, kohlrabi, date and ssamjang.
