This place is a proverbial hidden gem in the Berkshires.
Like at some top world restaurants, such as Noma, Babel, and so on, the Distiller forages for unusual and compelling ingredients year-round, and using hand-made methods from ages past now largely lost to time and automation, crafts a spirit for every season of a unique, arresting flavor profile.
The place has at once a hip, relaxing and unpretentious vibe, part bar/lounge of organic decor, private tasting and screening room, and alchemical chamber of curiosities, with the huge copper still displayed prominently.
The distiller, erudite and cultured in virtually all areas, also down-to-earth and laid back, is happy to chat for hours about the arts, humanities, maths, particle physics, sports, you name it - and of course the distilling process and its intricacies - or hang back quietly, working with the still from time to time, and leave patrons to their personal conversations.
And one can buy full bottles of the saintly spirits, sold exclusively by choice in the Berkshires.
Not sure that a few of the reviewers here 'got' the place. If there were Michelin stars for Distilleries-cum-bars, this space would certainly get some.
