Yelp
I went to Wasabi Sushi and got a beer at the bar.
I had the Spider B-Ritto ($15), the Tuna (ahi) and Salmon donut, filled with crab ($8), and the Sea Breeze (seaweed) Salad ($3). It was a 92 degree Saturday at 3pm, so there were plenty of tables free at Heist. I ordered an excellent beer (Gigantic's Cloudberries Hazy IPA: $7). The bar counter said they're hoping for indoor seating by January 2024.
The softshell crab B-Ritto is like a roll, but bigger and just split in half, so you eat it with your hands. There's a little wasabi and pickled ginger, and soy is available. It was also rolled in popped rice, which improved the texture, IMO. I appreciated that, as there was surprisingly little crunch from the softshell crab itself (though there was also surimi crab). The portion and amounts of ingredients were good, and everything really fresh (avo/cuke/lettuce/eel sauce), but I wanted more tempura crunch, and more eel sauce, so I'd get the regular roll next time.
The salmon and ahi on the donut, and surimi crab inside it, were also as fresh as could be. It's served on a sheet of nori, but there was no wasabi or ginger(!), they didn't put the red cabbage on it, like in the picture--NOR was the donut made with imperial black rice. Disappointed about all that. Still, it was worth $8.
FYI, because I know you all want to know, like I did: why are the two fried donuts called "sushi" donuts, if, as it appears on the menu, they're just fried rice in a donut shape? ANSWER: because you can ask to have either (the regular or the Cheeto dusted) *filled with crab or spicy tuna* (or not) for the same $7! I'll do that next time! I only didn't because I was already getting something fried.
The best deal there was the $3 seaweed salad. A bigger and more flavorful portion than you'd get for $3 anywhere. I mean anywhere. Really tasty and well balanced recipe!
Bottom line: Wasabi Sushi puts to bed the stigma of unfresh food truck sushi. Friendly counter service too. I give it 4.5 stars (lost .5 for everything missing on the donut), but always round up on Yelp. I also appreciate the Heist space, with several trucks I want to try, and look forward to indoor seating in 2024.
