High-end Hotels Are Stepping Up to Tackle This Big Sustainability Crisis

"At Costa Navarino, the resort destination in Greece that includes the Romanos, I saw chef Joris Larigaldie return from MAD with an inventive idea—turning spent orange peels from juice into a delicious fruit gelée for a welcome snack—an example of straightforward, practical waste-reduction inspired by the academy." - Christine Muhlke Christine Muhlke Christine Muhlke is a former editor at both The New York Times and Bon Appétit. Marriott and MAD Academy Partner on Sustainable Hospitality

"Senior culinary leadership described concrete changes to deepen connections with local producers, embrace flexible seasonality, and create more immersive culinary experiences: “This year, we have made significant changes to enhance the guest experience at Costa Navarino by deepening our connection with local producers, embracing flexible seasonality, and creating more immersive culinary experiences,” and added that “We have strengthened relationships with both new and existing local suppliers, featuring their products more prominently on our menus and buffets, along with storytelling elements that highlight their craftsmanship.” Those initiatives emphasize supplier storytelling and product prominence as part of guest-facing sustainability." - Ashley Day

The Best Resorts in the World: 2024 Readers’ Choice Awards

"Messinia is a ravishingly remote corner of the southwest Peloponnese that’s a four-hour drive from Athens (or one hour from tiny Kalamata airport). The Romanos, A Luxury Collection Resort, a 321-room polished-marble flagship, is exclusive, with low-slung buildings wrapped around a series of seductively lit lagoons. It's deeply rooted in the local culture with mmersive experiences that include philosophy walks in centuries-old olive groves and grape harvesting in the organic vineyard. The property is aimed squarely at couples, with poolside cabanas and plunge pools in nearly all its ground-floor rooms and gorgeous views of the sapphire Ionian Sea upstairs. Dark wood and polished marble interiors are quietly understated relative to the glitzy clientele." - CNT Editors

"Messinia is a ravishingly remote corner of the southwest Peloponnese that’s a four-hour drive from Athens (or one hour from tiny Kalamata airport). It was well under the radar until the advent of Navarino Dunes, a 320-acre Mediterranean-hugging resort that’s part of the ambitious Costa Navarino development—a modern take on a classic agora of shops, restaurants, cafés, and a cavernous spa flanked by two hotels. The 321-room Romanos is more exclusive, with low-slung buildings wrapped around a series of seductively lit lagoons. It’s aimed squarely at couples, with poolside cabanas and plunge pools in nearly all its ground-floor rooms. Dark wood and polished marble interiors are quietly understated relative to the glitzy clientele. Doubles from $422."

Simply put, this is not a 5 star institute. We paid for a room with a pool which cost multiple thousands. The room does not get even an hour of sunlight and so it was rendered completely unusable; the pool too freezing and the porch too chilly to sunbathe on as it was perpetually in the shade. The sunbeds (other than at the main adult pool) are super cheap and just do not feel luxurious in any way. Same at the beach- I was really surprised! They’re like cheap garden centre sunbeds. The rooms also have a mouldy smell (my feet were black walking barefoot around the room) and the shower smelled and looked a bit mouldy. Only by the penultimate day of our stay were we able to get a sunbed at the main adult pool. We left for just over an hour to get lunch and when we got back they had removed our things into a paper bag and given them to other guests. They claimed it was their rule but I had seen that very day, other guests not arrive by their bagged sunbeds (another rule they insist they have , but everyone does it anyway) for well over 1.5 hours. Just be consistent- at the bigger family pool, the attendants just ask if you intend to come back, that way incidents like having your personal belongings removed, are avoided. Not to sound like a petulant child, but it’s feels ‘unfair’ and just very irritating to me. This hotel seems to favour families who are very ‘rich’ or have the most expensive rooms (even though even the entry level rooms are thousands). We were completely ignored by the staff at both of the pools whereas other families got lots of attention and attentive service. I asked an attendant at one of the pools where the showers were; he stared at me blankly and said ‘what?’. Just no charm or manners imho. Certain parts of the breakfast area are reserved for special guests only- we were batted away on day one when we tried to sit there. Again, it just seems like the staff care only about these guests and not really for others. Lastly, and there are more things… we told them it was our honeymoon before coming. (We had stayed at the W down the road a few weeks prior for the first part of our honeymoon and returned to the Romanos for our second half). At the W they had left us a lovely card and a bottle of champagne and checked up on us often. Not that that was expected or necessary but it was really lovely and made us feel really excited and special. Not even an acknowledgement was made at the Romanos (I even mentioned it on the second day when I had to call reception to make a noise complaint about the family staying above us). I think this hotel is satisfactory if you come with small children but if you come as an adult couple it just is not in any way worth it. If you’re spending that kind of money, go to the W down the road. It is 1000000x better. Better facilities, rooms, more attentive and friendlier staff, much quieter and just a nicer and more respectful ‘vibe’.

Room had a very heavy dog smell upon check-in. They happily and swiftly changed room for us. We were super unpleasantly surprised at the adults only pool to be served raw/ uncooked chicken wraps to my pregnant wife. BIG red flag. Whoever prepared this should not work in any kitchen. We also suggest they look into the coffee quality. We couldn't enjoy the beach because of the rough waves and deep. Also not enough sunbeds for all guests. Beach sunbeds very poor cheap quality (2/10) for this level of resort. Adult pool sunbed quality were perfect 10/10. Golf was great. Awesome instructor. All staff everywhere are super kind & friendly.

I have being coming to The Romanos for|Over 12 years the place is superb and service incredible. This year was even better since we met Nikolas Kritikakis. Adorable young man who everyday was interested to make sure we were having a good time and if we needed something to make our stay better. Even one time he shared a moment of his time to be with us during our prayers in the chapel. I noticed he helped a lot of guests but young colleagues as well. Thanks Romanos team fir a wonderful time.

The rooms are very high-end, spacious and well-appointed. If you can get an off-season deal for $400/night, you are getting a great deal. All of the staff are wonderful and take excellent care of the guests. The food is very good and the breakfast buffet is particularly great. Despite this, I am deducting one star due to three serious issues: 1. The wonderful swimming pools, which are a centerpiece of the entire complex, are only open for 7 hours per day. The lack of morning and evening hours shows inexplicable disregard for the preferences of the guests. 2. The food and drinks are incredibly overpriced. I understand adding a little markup at a resort, but dinner inside costs literally 5x what it does outside. 3. There was a private party taking place on the lawn next to the swimming pools, blasting music until 11pm which was loud and disruptive inside our room as well as at all of the open air restaurants. Finally, a mention of shame for an additional 15 EUR / night "climate tax", which was not disclosed until checkout time.

I was here with my family for a week's long holiday at the beginning of July. The resort is great, with several pools, a very nice beach, and the common areas look like a garden. My room was spacious with a nice view and close to the beach. The beds were very comfortable and the infinity pool was a very good solution during the hot weather. The beach is also very nice, with plenty of sunbeds. The resort was full, but it was not felt at all in the common areas, on the beach, or in the restaurants. Perhaps only the pools saw more people. We visited several restaurants, all of them were great with the exception of the buffet at Morias which was not worth it. Restaurant prices were reasonable for what was on offer. We also visited a few bars, they have live music (very good lineup) on some of the days. I want to specifically mention the excellent service at every level in the resort. From the people at the reception, through housekeeping, the waiters at the restaurants to the people from the beach bar.

My wife and I spent four nights last July at The Romanos in Costa Navarino. While our overall experience had its ups and downs, there were certainly some memorable highlights during our stay. Upon arrival, we had to wait some hours before our room was ready, which was a bit of a slow start. However, we were very warmly greeted by the Guest Experience team and offered an authentic Greek welcome with coffee and sweets on the house. Once we settled in, the accommodations were very comfortable and met our expectations in terms of quality and style.||Captain Vasilis, the visionary founder of Costa Navarino and a dear friend of mine, and I shared many great memories playing golf together in Glyfada and in California, often joined by his close friend, a former CEO of Aegean. I remember when he was first inspired to build Costa Navarino, with his dream always been to create a destination with world-class golf courses and luxury accommodations. It was never meant to be focused primarily on family or children’s entertainment. In our view, Costa Navarino has evolved into more of a family-friendly resort, particularly suited for guests with multiple young children. That’s wonderful for many families, but for us, it didn’t quite align with the relaxing getaway we had envisioned. The baby pools were quite noisy with constant screaming, and one of the adult pools we visited often lacked available chairs to sit and unwind.|We dined only once at the Italian restaurant where the food was simply fine, though we admit we’re not the type to plan ahead or make dinner reservations, which may have limited our options. On a more positive note, the breakfast buffet was among the best I’ve ever had, with a wide variety of high-quality offerings. However, the atmosphere was occasionally disrupted by young children throwing food on the floor and loud noise, which unfortunately attracted flies and made it less enjoyable.||That said, the true highlight of our stay was meeting Nikolaos, from the Guest Experience team of The Romanos. From the very beginning, he stood out for his warmth, attentiveness, and genuine desire to make our experience better. He went out of his way to assist us in every possible manner, always with a smile, care and professionalism. In a resort of this size, it's rare to come across someone so personally invested in guest experience. Nikolaos made left a lasting impression on us, and we’re truly grateful to him. Hopefully, the higher management acknowledges such efforts that enhance the stay, especially of their loyal and original guests and rewards individuals like him, who try to make the difference, despite all the downs. Again on a less positive note, we found the golf pros at the pro shop to be somewhat unwelcoming, which was a disappointment given our long-standing passion for the sport.||All in all, while the resort offers much for families with young children, it didn’t quite fit the kind of experience we were looking for as a couple in our stage of life. Still, we appreciated the quality of the accommodations and, most of all, the exceptional service from individuals like Nikolaos, who truly made a difference in our stay.

Our third visit in consecutive years as family. I write because we enjoyed the first year immensely and obviously booked to revisit but weren't overly impressed the second year. Lots off room issues were encountered and the hotel didn't really care. We fed this back to the agent on our return and they echoed that they had received many similar comments with returning guests feeling standards had dropped within a year. Our issues at the time were fair but what was grating was how the hotel attempted to deal with them. Friendly, kind but completely and utterly useless - to be polite. You give up and try to enjoy the holiday. ||We gave things a go for a third year as my kids really enjoy the hotel and the appointment of a guest services director has changed things dramatically. Nikolas Kritikakis is an extremely personable and genuinely friendly member of the team. He made the effort to get to know us a family and was so warm and kind. He resolved one minor issue for us seamlessly and took the time to speak to us about the local area, places to visit and ultimately made a very lasting impression on us all - especially my two children. ||A note to management - appointing this type of individual who acknowledges returning guests, tries to understand their needs and doesn't sit exclusively in an office away from guests is a very smart move. Jumeirah Al-Naseem do this particularly well, as do Sani so it is good you've done the same. The guy deserves all the praise that he is due and I trust you will acknowledge his efforts as he made our trip a very memorable one with his kindness.||The beach here is not overly busy, the pools are well maintained and have great people working there. The restaurant selection is good but can get repetitive after a few weeks in one place. I really enjoyed Flame (steak restaurant) and also Onuki (japanese / sushi). The other really good dining option is the breakfast at Pero, honestly one of the best hotel breakfasts I can think of. The chef, Athanassios, who runs the proceedings is extremely friendly and again, made the effort to get to know us as a family; he is wonderful.

Just finished a one week trip here with the family before moving on to try another of their hotels in the area. We had a huge suite with private 15 metre pool which was wonderful to have. The villa came with a private concierge service and Tassos and Vasiliki were always on hand very quickly to deal with issues. We did seem over run with ants laying on the sun loungers outside I kept having to flick them off of me and then we ended with several in the room and needing pest control. ||The beach is nice, not spectacular but the beach service is non existent. Meant to start at 11.00 and some days 11.30/45 without apology and needs improvement. However the life guards are very good at their job. ||Good choice of restaurants here and areas for the kids. Food is generally quite good also. We struggled a little here for food for our gluten/dairy free daughter and packed her lots of snacks too. Breakfast service was pretty terrible also. ||Things like corn tortillas, corn tacos gluten free pasta, buckwheat, millet, quinoa, rice cakes were mostly a miss here except for the Italian restaurant. In modern times there’s really so many options available also. They aren’t quite up to date with modern times with the Matcha yet they’re using a brand that’s bitter not CEREMONIAL. If I’d have known there was a frother in the room I’d have packed my matcha and co! ||Do seem to be plagued with wasps whenever eating outside so we opted for inside wherever possible and ended up with a horrendous amount of mosquito bites (didn’t happen at the next hotel) so perhaps there’s a pest problem to be addressed.||Fabulous to have access to reformer machines but any gym classes happen in the evening which I found strange, no morning classes was a disappointment and often we would be getting ready for dinner so I couldn’t go. ||Turned out this was the more expensive of the two hotels we had booked but other than the room and concierge the rest of the trip didn’t quite match the same level of quality.
