High-end Hotels Are Stepping Up to Tackle This Big Sustainability Crisis

"At Costa Navarino, the resort destination in Greece that includes the Romanos, I saw chef Joris Larigaldie return from MAD with an inventive idea—turning spent orange peels from juice into a delicious fruit gelée for a welcome snack—an example of straightforward, practical waste-reduction inspired by the academy." - Christine Muhlke Christine Muhlke Christine Muhlke is a former editor at both The New York Times and Bon Appétit. Marriott and MAD Academy Partner on Sustainable Hospitality

"Senior culinary leadership described concrete changes to deepen connections with local producers, embrace flexible seasonality, and create more immersive culinary experiences: “This year, we have made significant changes to enhance the guest experience at Costa Navarino by deepening our connection with local producers, embracing flexible seasonality, and creating more immersive culinary experiences,” and added that “We have strengthened relationships with both new and existing local suppliers, featuring their products more prominently on our menus and buffets, along with storytelling elements that highlight their craftsmanship.” Those initiatives emphasize supplier storytelling and product prominence as part of guest-facing sustainability." - Ashley Day

The Best Resorts in the World: 2024 Readers’ Choice Awards

"Messinia is a ravishingly remote corner of the southwest Peloponnese that’s a four-hour drive from Athens (or one hour from tiny Kalamata airport). The Romanos, A Luxury Collection Resort, a 321-room polished-marble flagship, is exclusive, with low-slung buildings wrapped around a series of seductively lit lagoons. It's deeply rooted in the local culture with mmersive experiences that include philosophy walks in centuries-old olive groves and grape harvesting in the organic vineyard. The property is aimed squarely at couples, with poolside cabanas and plunge pools in nearly all its ground-floor rooms and gorgeous views of the sapphire Ionian Sea upstairs. Dark wood and polished marble interiors are quietly understated relative to the glitzy clientele." - CNT Editors

The Romanos, a Luxury Collection Resort, Costa Navarino

"Messinia is a ravishingly remote corner of the southwest Peloponnese that’s a four-hour drive from Athens (or one hour from tiny Kalamata airport). It was well under the radar until the advent of Navarino Dunes, a 320-acre Mediterranean-hugging resort that’s part of the ambitious Costa Navarino development—a modern take on a classic agora of shops, restaurants, cafés, and a cavernous spa flanked by two hotels. The 321-room Romanos is more exclusive, with low-slung buildings wrapped around a series of seductively lit lagoons. It’s aimed squarely at couples, with poolside cabanas and plunge pools in nearly all its ground-floor rooms. Dark wood and polished marble interiors are quietly understated relative to the glitzy clientele. Doubles from $422."

We stayed here for 10 nights to celebrate my husband’s retirement. From the outset the staff were excellent but we really wanted to say a huge thank you to Kyparissia Venizelou. Her care and attention to small details really made our holiday so special. She made us feel so valued and she is a credit to the hotel. Our room was sea view and it really was lovely. Food and drink in the hotel is really good and there were lots of dining options. Beach was great and the adult pool area with the super comfy beds was a treat. We never got their names but the pool staff were so lovely and attentive. We golfed on all four courses and the organisation is great and transfers to and from the hotel were so reliable. We really enjoyed our trip to Costa Navarino and would recommend a visit. It’s really unspoiled and the scenery is stunning.

We stayed at the property in September and it was quite busy. We expected more of the friendliness of the staff, which was below our expectations (not regularly greeted when staff members passing by, no assistance offered with luggage at departure, ...) ||The resort looks in good condition and has a nice beach. Some of the sunbeds could be cleaner and besides the Eleon pool olives should be removed from the sunbeds. ||The room was nice and clean.||Breakfast was good too, but there should be a host at the entrance to bring guests to their table, there were two hosts but not at the entrance and so they did not get all guests on arrival.||Altogether a nice property but as the friendliness of staff needs to improve I can recommend to choose the Westin, where all staff was very friendly all the time, during our last few stays.

One of the best resorts I have ever stayed in. The hotel, villas and grounds are gorgeous. Service is phenomenal!! Food and amenities were terrific. Going to the Agora was entering another world. We had a wonderful driver, Kosta, who took us to nearby geological sites and historical towns. All in all, this is a wonderful place to come to.

This is a lovely resort for golf players and families. Overall we had a relaxing holiday and enjoyed our time spent here; there are lots of facilities in The Romanos and in the other hotels nearby (Westin, W, Mandarin Oriental) to cater to all tastes.||Positives:|- four impressive golf courses to match the expectations of golfers of all levels; particularly The Bay Course offers some amazing sea views|- there is a nice blue flag sandy beach (the water is pretty deep near the shore, especially if it gets windy and there are waves) with a good greek restaurant (Barbouni)|- Eleon Pool is great if you are looking for a more relaxed atmosphere|- Anazoe Spa has a wonderful relaxation area with pools, saunas (but for some reason the spa staff doesn't inform the customers about it...)|- as for food, what we liked the most from The Romanos' restaurants was Parafrasi, everything we ordered here was flavorful: roasted beetroot salad with cherries, rabbit stuffed cabbage dolmas, grilled lamb and kadaifi with cherries compote|- in Navarino Agora you can find some nice shops with resort wear and I was also pleasantly surprised to find a Benaki Museum Shop (with good quality museum replicas)|- we greatly enjoyed the idea of the cinema in open air (there is one with classic movies at The Romanos and another one with recently released movies at Navarino Agora)|- the hotel app, where you can find all the intel that you need regarding the resort's facilities and some discounts as well :)||However, there are some aspects that still leave room for improvement:|- the rooms need a bit of a refurbishment|- the food is quite pricey and the quality is not always up to the cost (e.g. the italian restaurant)|- the reception staff doesn't deliver services worthy of a 5* resort, most of the time they seem rather bored|- the cost for different tours is unreasonable...

On the occasion of my birthday, we spent a few relaxing days at the beautiful Romanos. We truly enjoyed our stay! The team surprised me with flowers, balloons, and champagne, making my birthday extra special. The staff was always smiling and friendly, anticipating our needs. Exceptional service in all areas and especially Gioula and Erieta at the breakfast area, Manolis, Giorgos, Melina, and Christos at the Romanos pool, and Panagiota from the Housekeeping team. Thank you all for an unforgettable stay.

Beautiful course and friendly staff. I booked a one-week golf holiday at The Romanos about six months in advance. Three weeks before our trip, we tried to book tee times – but there were none available, only a few late afternoon slots on three days. At first, I couldn’t believe it. On site, it turned out that all four golf courses were fully booked by organized golf tour operators. As hotel guests, we had no access to normal tee times. For all golfers – make sure to book your tee times months in advance, otherwise you might end up in a beautiful golf resort without being able to play.

This is a first rate, wonderful hotel/resort! The accommodations, people, personnel, service, food & ambiance are outstanding. Our driver, Kostas, was wonderful. He took us to all of the places we wanted to see, & added a few additional special ones. I highly recommend this destination, & would definitely ask for Kostas to handle all of your driving needs.

My wife and I stayed at the Romanos for a week in October and were very impressed. It is a lovely hotel resort which is well spread but with such good in-resort transport that you never feel that you are far from the centre. Really loved it and will go back again.
