"Fishing is the second largest industry in Seychelles, employing approximately 17 percent of the population, and much of that fish makes its way into great sushi. The Sushi Room, the dinner-only restaurant located at Raffles Seychelles on the remote Praslin Island, uses local catch, such as jackfish and jobfish, in sashimi, maki, and nigiri, in addition to the standard array of sushi fish.
