The Wilderness

"The Jewellery Quarter plays host to this dark, moody restaurant with an open kitchen and pumping music. Choose between two interesting, tersely worded set menus of globally influenced dishes with a playful, showy style. As well as matching wine flights, there are creative non-alcoholic pairings too." - Michelin Inspector

Our first time fine dining and it was amazing! The food is rich with flavour and melts in your mouth. Now I understand why people do this. Thank you Wilderness for this awesome experience <3

Loved it! The flavours conjured up were inspired. I mean a first course called Big Mac. And it tasted just like a Big Mac with a mix of the cheese, mayo, gherkin and tomato flavours with an amazing beef tartare. Wow. Every course was incredible. Go.

Absolutely superb! We had one of the best evenings at a restaurant we’ve ever had, and that’s all thanks to the staff, the service, the atmosphere and of course, last but not least, the food - thanks so much guys! The place is so full of character and it’s great. The music is loud (not too loud though) and the place is all black, but it’s so comfortable and such a nice place to relax in still. The staff, every single one of them, were unbelievable, some of the best service we’ve ever had. They explained the dishes with personality and passion, and spent the whole night chatting away and being attentive, smiling and enjoying it as they did. Hoenstly the staff and service made this night what it was and I can’t thank and rave about them enough. The food was of course sublime, with very unique and interesting flavour combinations that you won’t get to try anywhere else and for that reason this place is worth a visit at least once. The desserts were where this really shone, with a combinations of black garlic and chocolate, pumpkin, matcha and lime, and burnt apple and miso all being knockouts and a valiant end to a fabulous meal. Overall the food is undoubtedly up there, maybe not the absolute pinnacle, but definitely fun and very tasty.

First time trying this restaurant after reading some very good reviews. Celebrating a wedding anniversary, we thought to try something different and it didn't disappoint. The food was delightful and varied with an abundance of different flavours. Can't fault the service at all with every dish explained by the servers. The atmosphere was very relaxed as well which also made it enjoyable.

A great restaurant in the Jewellery Quarter, with dishes that are beautifully cooked and well-seasoned. You can tell a lot of effort goes into the presentation as well as the food itself. The staff were attentive and took the time to explain each dish in detail, which was much appreciated. The standout dish for me was the scallop—by far the best I’ve ever had. It was perfectly grilled on the surface, yet soft inside, and the flavour was exceptional. However, the Wagyu beef was slightly disappointing, as it wasn’t as tender as I’d expect from A5 beef. The Big Mac (beef tartare) taste good but I personally things the crispy onion/ mushroom is a bit overpowered and make the beef itself taste less flavourful Overall, this is a very good restaurant with great value for money. I’ll definitely be returning to try their full course menu!

Absolutely loved it, you guys have nailed everything. Fine dining but casual. You guys should be very proud of what you are doing. So creative with the dishes and flavours, try the big mac. The sommelier is an absolute legend he loves what he does and it shows with the sake, wine list and spirit menu and he knows his stuff. Will be back for sure.

Yelp
This was my first time here and it was beautiful. It is pricey but what an great experience of fine dining, the whole experience was worth it. We had the 3 main course, but you get little entres inbetween each course which were delightful. Would highly recommend if you want to try fine dining, the place and staff were friendly and welcoming.

Yelp
Wow! These guys just "get it." This may have been the best meal I have ever had. The restaurant is covered in preserved moss, greenery and natural materials. We greeted by their staff who were calm, knowledgeable and who seemed like well.. genuinely nice people! The menu is designed by the chef based on memories from his childhood. We opted for the Full Story: 9 course tasting menu with paired drinks (which I highly recommend you go for too!) The story is split into 3 sections: the beach, the forest and the picnic. I won't spoil it for you by describing each course... But let's just say each mouthful was divine and each course seemed to get better and better. Even the ants on one of the picnic courses were delicious... Yes I ate ants... And yes they were yummy! Oh I nearly forgot the drinks... The pairings were fantastic and they don't just include wine. Although I must admit my favourite was the lamb and Cabernet Sauvignon pairing - divine! The whole experience was one I won't be forgetting in a hurry and I recommend you try for yourself.

Yelp
Wilderness is Nomad revamped. The new decor adds to the atmosphere and the food/beverages are as fantastic as ever. We had the tasting menu which was first class and came with at least 3 bonus courses. Particularly liked the wood ant course for the presentation and originality as much as the taste. If you like fine dining with a bit of quirkiness thrown in you'd be hard pressed to find a better combination of the two than Wilderness.

Yelp
Having being to Nomad twice before (one #norules, one regular menu) me and the wife had very high expectations for The Wilderness (on our 5th anniversary - clang). I'm delighted to report that the quality has actually stepped up a level and this is definitely Nomad 2.0. Alex is a legend - I'm always proud when a local chef does something incredible. Tough times recently, first with the Tripadvisor issues at Nomad, then the legal battles, and now the no shows for #norules. But he still executes dishes perfectly, with a smile on his face! There's more consistency with the menu now, rather than changing every few days (as Nomad previously did) and I think this helps the development and quality of the dishes. Decor is stunning - proper tables and chairs! The lush greenery gives you that element of escapism, which I imagine is what The Wilderness is going for. The rest of the staff are awesome, a French waiter who was very friendly and engaging and another guy who was extremely knowledgable about the dishes being served. See my photo for the menu - the first 5 courses escalated in deliciousness as we went on, culminating in the lamb which was one of the best lamb dishes I've ever had, with a perfect accompaniment of green beans, a midget tree and a smooth pea purée. The lamb itself was melt in the mouth, perfectly pink and seasoned to perfection. Special nod to the crispy chicken skin, and the ash on the sea bass - both mind-blowingly tasty. And also a word for the ant dish - whilst the theatre of the ants is certainly very cool, the actual dish itself is totally gorgeous. Cheesy, gooey with a bit of crunch and sharpness from the shallot. I recommend mixing the ants on the plate into the dish as it gives it a lovely citrus hit as you're eating. Also went for the drinks flight - not a standard wine flight (bonus) and included vodka and tonic, green gimlet (one of my fave cocktails) and the most incredibly delicious dessert wines ive ever tasted. Overall a complete experience for the senses and one I'll be rushing back to try again when the Autumn menu is ready!!!
