"Third Coast Dogs is a hot dog pop-up inside a bar tucked into a motorcycle shop — and its Texas-style beef dog is at the center of it all. The bar in question is Grey Horse Saloon (embedded in Legion Motorcycle Co.) and the third coast is the Gulf of Mexico, with specialty dogs honoring coastal spots like Corpus Christi and Houston, as well as some landlocked lone star towns like El Paso, San Antonio, and Plano. More than just novelty bar food, the beef franks here are legit, grilled to a smoky char that frames its juicy interior. The non-traditional toppings are carefully considered, making these dogs favorites to return to; even better, all dogs are available vegan. "I learned that what began as a bedside fantasy while Sage Houser recovered from a broken collarbone became Third Coast Hot Dogs, a pop-up specializing in South Texas–style franks topped with bold, playful combinations. The menu leans on Houser’s San Antonio memories — the Christi features pineapple marinated in the reserved liquid from house pickled onions combined with jalapeño brine, turned into a slaw and finished with a limey “pink sauce” similar to fry sauce; the 512 is a backyard-cookout homage with salsa verde, barbecue sauce, jalapeños and tortilla chips; and the San Anto pairs mole negro with a vegan coconut–lime crema, pickled onions and a handful of Takis for crunch. Many dogs are named for Texas cities and reflect the state’s multicultural influences.
