"I learned that what began as a bedside fantasy while Sage Houser recovered from a broken collarbone became Third Coast Hot Dogs, a pop-up specializing in South Texas–style franks topped with bold, playful combinations. The menu leans on Houser’s San Antonio memories — the Christi features pineapple marinated in the reserved liquid from house pickled onions combined with jalapeño brine, turned into a slaw and finished with a limey “pink sauce” similar to fry sauce; the 512 is a backyard-cookout homage with salsa verde, barbecue sauce, jalapeños and tortilla chips; and the San Anto pairs mole negro with a vegan coconut–lime crema, pickled onions and a handful of Takis for crunch. Many dogs are named for Texas cities and reflect the state’s multicultural influences.
