"Third Coast Dogs is a hot dog pop-up inside a bar tucked into a motorcycle shop — and its Texas-style beef dog is at the center of it all. The bar in question is Grey Horse Saloon (embedded in Legion Motorcycle Co.) and the third coast is the Gulf of Mexico, with specialty dogs honoring coastal spots like Corpus Christi and Houston, as well as some landlocked lone star towns like El Paso, San Antonio, and Plano. Portland Pop-Up Incubator Grey Horse Saloon Opens in a Motorcycle Shop | Eater Portland

"I learned that what began as a bedside fantasy while Sage Houser recovered from a broken collarbone became Third Coast Hot Dogs, a pop-up specializing in South Texas–style franks topped with bold, playful combinations. The menu leans on Houser’s San Antonio memories — the Christi features pineapple marinated in the reserved liquid from house pickled onions combined with jalapeño brine, turned into a slaw and finished with a limey “pink sauce” similar to fry sauce; the 512 is a backyard-cookout homage with salsa verde, barbecue sauce, jalapeños and tortilla chips; and the San Anto pairs mole negro with a vegan coconut–lime crema, pickled onions and a handful of Takis for crunch. Many dogs are named for Texas cities and reflect the state’s multicultural influences. Holy moly the dogs here are great. Best vegan hot dogs I’ve had! The Hell Paso was my favorite. The drinks and atmosphere were awesome as well. Definitely worth a visit!

This is the perfect spot to ride my bike after work and grab a beer and a dog. Everything I've tried on the menu I've enjoyed. They put the right amount of toppings so everything ends up in your pie hole and not your lap. Belly up to the bar or find a table outside while the nights are still warm. Friendly people with a welcoming atmosphere for anyone that walks through the pull up doors. Thanks for staying open late too. I've been back and definitely recommend this place to anyone looking for a chill vibe and a good dog in s.e.. go give these guys your money.

Guzzle your glizzys here chat. Hands down the best place to get a glizzy in the PDX. You craving a delicious glizzy made with fresh ingredients and topped with amazing combinations of condiments and toppings? They got you. You need work done to your motorcycle? You’re not gonna believe this. The place gives salty spittoon where we’re all tough enough to get in without eating a bowl of nails without any milk. Nuff said.

These are the best hot dogs I've ever had. So far Ive had 4 different dogs and they are all amazing. I'm usually the type to get the same thing each time I go somewhere but you'd be doing yourself a disservice if you did that here. I've loved each one and Im looking forward to trying them all. Sage is brilliant and absolutely a master of his craft. Each dog is so thoughtfully put together as he takes into consideration not only the flavor profiles but the texture balance as well. One thing that really stands out is that they feel so "light".. these dogs come with a great amount of toppings! What I mean is that you don't finish one and feel like you're heavy, weighed down, and need to go home. I always leave feeling full but could easily go for a jog or something if I wanted to and feel good. Sage is such a great guy and you should definitely take time to say hello. He is passionate about what he does and you can tell that he puts a lot of love into everything. I can't wait to go back and enjoy great food, great atmosphere, and a great chef.

This has been my favorite hotdog and mocktail spot for over a year! I love seeing Sage get the recognition his hard work deserves, but I’m very disappointed in the people who saw the (awesome!) viral video and are complaining because they thought they were the only ones to see it. It’s a one man show. Sage is offering you EVERYTHING for a chill hang. Be chill and enjoy the best hot dogs you’ll ever have.
