Where to Find Jaw-Dropping Peruvian Food in Portland and Beyond

"Third Culture Kitchen at the Hinterland food cart pod draws on the American chefs’ childhoods in Peru and Japan, which results in an eclectic menu that contains everything from Nashville hot chicken sandwiches to ramen made with brisket. Peruvian cuisine emerges in the form of pollo saltado (soy curls are also available) and specials like the asado con puré, essentially mashed potatoes and beef smothered with gravy. Third Culture Kitchen’s version is made with pork shoulder and freshened up with a little fennel and pear salad." - Krista Garcia

A Guide to the Hinterland Food Cart Pod, Opening This Week - Eater Portland

"Third Culture Kitchen comes from Tasty N’ Sons alums Billy Fuqua and Jon Free, who both grew up in other countries with American parents. This place was delicious! They have a great selection of unique dishes on their menu. The lamb shank was so tender and perfectly seasoned. The Nanban Ramen was both smooth and not over powering or heavy. Also make sure to add the pork chasu with your ramen.

I had the lamb shank with Peruvian gravy and it was honestly one of the best food cart meals I’ve ever eaten. The $20 price tag was a little intimidating, but it turned out to be a bargain. The lamb was tender and flavorful. The gravy was rich and perfectly seasoned. And with the beans, rice, peas, and carrots served along with it, I was absolutely stuffed after cleaning my plate. Even the presentation was surprisingly impressive. It felt like a $40 high-end meal at half the price. This place is something special. I can’t recommend it highly enough.

Google
Super bomb saltado fries as you can tell by the photo. Nashville hot chicken was perfectly crunchy, not too hot and on a delicately delicious bun. Ramen was full of flavor and a kid pleaser as well.

Google
Excellent Nashville Hot Chicken sandwich! The service was super nice and explained the cart's Japan+Peru background.

Google
Good menu, friendly service, food was good! Had the fried chicken sandwich. Sauce, chicken and bun were great.

Google
Soy curl saltado was delicious! Ready pretty quickly and nice and hot. The spice was great.

Google
Incredible- had the Steak Saltado, price seemed high for steak fries, but it was so worth it, they’re so much more than that and the steak was cooked to perfection!

Don’t really want to tell anyone about the ceviche… its a bit pricey, but def the best meal i’ve had in a long while. Really i just don’t want it to be sold out when i come visit.

Yelp
This place needs more love from the Portland community; Sure it's a white guy slinging Asian food, but it's good Asian food. The fried chicken sandwich is a tempura fried chicken, that's well seasoned with turmeric and other spices that'll make your mouth sing. Get the fries and then get some tacos from Matt's bbq tacos, so that you can get their green and red sauces for the chicken sandwich and fries. For Matt's tacos, I'd recommend the breakfast pork belly, breakfast chopped brisket and hot mess.

Yelp
We stopped by this place when we were checking out other food truck around the neighborhood and this place didn't disappoint us. We have ordered the Steak Saltado and it is amazing! The sauce is prefect with the steak and fries, and we demolished within 5 mins! We will definitely come back again!

Yelp
If you are 'chickentarian', you'll love the fried chicken sandwich. Make it Nashville hot and it's quite enjoyable as well. They have vegetarian and vegan options that I want to try out, if I can get past ordering the fried chicken sandwich, someday.

Yelp
This place is absolutely excellent. I had heard from a friend that their friend chicken sandwich was top tier - it absolutely is and was my standard order here for a little while. However, I've tried a few other things on the menu including the butternut squash soup/grilled cheese (holy wow) and the saltado. Everything has blown my mind and tastebuds away. It's a food cart so there's not much to say about service; the people working there are nice and friendly. I do really enjoy sitting on the deck at Hinterlands-- the other night the heaters were so cozy I even took off my jacket!

Yelp
The Saltado bowl with steak over rice (you can get it over fries or fries and rice) was out of this world delicious. With a soul warming flavors and melt-in-your-mouth steak served in a real dish with real silverware. The verde sauce has a complex kick topping this bountiful stew-like dish. The Hinterland food-pod is run really well as well with heated outdoor porch and heated enclosed back patio with indoor dining and a bar. This was the perfect place for a nice warming lunch on a a cold-ish day. The guys running the cart were genuinely friendly with a laid back enthusiasm.

Yelp
So this was my first visit to this food cart pod. It is a surprisingly great little cart pod. There is a great bar, plenty of high quality seating, and good drinks. I came with a group, and the majority of our group were on a mission to try Matt's BBQ Tacos. But I was turned off by Matt's wait time (30+ minutes), and decided to try this place with the Chicken Sandwich. It was good. Solid pickles, good breading on the chicken, and cooked well. It was a bit plain, with no side. I guess I should have looked at the menu, as I'm sure they had some sides available. Regardless, it was a great meal. Service was friendly, and they use a wireless pager which I am a fan of.

Yelp
Why are there so many Songs about Cultures And what is there other than fried? Cultures are visions But only illusions And Cultures have nothing to hide So we Lomo And Ceviche, believe it Take it from Jon and Billy Someday you'll find it Third Culture Kitchen The Mammals, the Muppets, and Me Who said that every dish Could be Hinterland? A series of starry carts Somebody thought of that And eclectic chefs served it Look how we've come so far What's so amazing That's keeping us grazing And what variety might we eat? Someday you'll find it Third Culture Kitchen The Mammals, the Muppets, and Me Have you been half asleep Ignoring choices? Peru, Okinawa, Japan Is this meal melody Calling for rainbows? Cultures are one and the same I've heard it too many Times to ignore it It's something that I'm supposed to eat Someday you'll find it Third Culture Kitchen The Mammals, the Muppets, and Me

Yelp
Hello, new food cart! Third Culture Kitchen (or TCK as they abbreviate it) opened in late January 2022 at the new Hinterland food cart pod. They're the first cart as you walk in. Their cart is designed in a neat way, it's as if their menu swings wide open to welcome you in. They serve food that combines Japanese with Peruvian and a hint of American - fried chicken sandwiches, ramen, ceviche, saltado, salad. It's a small menu but they're a small cart just starting out. The vegetarian options are the salad or the soy curl saltado. I got the latter and it was amazing. For $14, you get fries piled with onions, tomatoes, soy curls, fresh herbs, pickled onions, and a delicious sauce. No part of those toppings was neglected or just thrown on, it seemed like they'd all been thought through and prepared well. Just really great flavors that somehow meet both of their cuisines. Prep time was a little slow but it's worth the wait. Take your buzzer to Hinterland's front or back seating options, with super-powered heaters for winter cold. There's a TV out back to watch the game. Dogs welcome since it's outdoor seating. Beer is available. Cheers!

Yelp
Had the fired chicken sandwich. Breading crisp and more reminiscent of what i hget with fish and chips than chicken. Keeps the chicken nice and moist. Some turmeric and pepper in there, little bit of cucumbers. Pretty pod with sparkling rest room. Want to come back to try some other things. Service was quick and friendly

Yelp
Vibe: busy food truck staffed by friendly and helpful people. Food: kinda Asian-ish menu, nicely prepared, flavorful, had one vegan and vegetarian option. Other options chicken and meat. Bonus: tables nearby and a non gendered bathroom. The vegan ramen had a rich broth with a hint of curry. Nice texture with fresh vegetables, noodles and herbs.

Yelp
I wanted to like this place. Tried two different dishes the pineapple one with fried chicken and the Peruvian rice dish. Both were very underwhelming and one note. My friend paid extra for half rice and only got fries with hers. As far as service goes our order took extremely long and our friends who ordered from other carts with equally long lines got theirs and finished it with ample time before our buzzer went off.

Yelp
The whole family is already regulars. Going back for the ají de gallina and the lomo saltado. Today we tried the Seco de Cordero and it was Soo amazing Billy and the guys are so talented, definitely going to be back frequently and highly recommend their food. Thank you guys, so delicious!

Yelp
We decided to check out the new food cart pod, Hinterland, this weekend so we gave Third Culture Kitchen a try. I was the first to order on Saturday and unfortunately I think I caught them a bit unprepared. We basically ordered one of everything. They told me it would be between 10-15 minutes, but it ended up being much longer, again I think it was because they weren't quite ready yet. Fried Chicken Sandwich: Loved the bun and the pickles, but my own preference is for fried chicken to be breaded instead of battered like fish and chips. Love that it was a giant chicken thigh, and the flavors were good, but all that batter gave off more greasiness rather than a crunch. Ceviche: Probably the best thing that we ordered. The fish was marinated and super bright with acidity. It came with delicious pickled onions and several delicious sauces. The fried tostones were crisp and also just a bit chewy in the centers - perfect! Steak Saltado: My partner loved this one. The portion was huge! The fries were thick and absorbed the umami rich sauce wonderfully. Steak was cut into large pieces and retained its juiciness nicely. Ramen: A bit of a disappointment unfortunately. The tantanmen style broth was tasty, but the noodles were more of a Chinese style noodle and did not have the bite and bounce that you'd expect in a bowl of ramen. It was also served warm, but would have been tastier hot. Glad we gave them a try and they are a great addition to this pod. One suggestion would be for them to get buzzers like the other carts to alert us when our food is ready. Because of their placement upfront, there is no direct view from the back seated porch, so we kept having to walk over around the corner to check if our food was ready.

Yelp
We got takeout from Third Culture Kitchen and it was amazing. We practically inhaled the food. Our favorite was the steak saltado. I also really loved the unique spin of flavors in the shrimp and grits as well. The fried chicken sandwich was not oily at all and very crispy. Everything we got was so good. I'm going to have to go back to try everything on their menu!

Yelp
We checked this place out after the soap box derby. I am not sure if that was why we had a 45 minute wait, but it was super long. Our meals were not spectacular and really only had one flavor note-salt.

Yelp
Massive slab of delightfully fried chicken on a brioche bun with chive mayo and delicious thin-sliced dill pickles. Friendly staff. Pairs well with a cold Rainier.

Yelp
Unbelievably good food, and super inventive dishes. The Saltado is sort of like a spicy south American poutine, with a touch of french onion soup vibes almost? With perfect steak on top. It was one of the best things I've ever had. I'm going to come back so many times.

Yelp
Third Culture Kitchen continues to kick ass. The current Yemenite Style Ramen is nothing short of incredible. It's very smartly made, with fun flavor combinations. This place rules.

Yelp
I have only been here once but food came up fast and tasted amazing. Really impressive flavors. I had the lomo saltado and it was so good. The portion was also very large. I loved every bite. Also great presentation. It's hard to get LS to look appetizing. They did it. Also staff was nice. And hinterland is a great food cart pod.

Yelp
Super flavorful and generous portions. I had the chicken lomo saltado which is unique as I'm used to only seeing a steak version. They also had a soy version which I figure is vegetarian. They were very nice to leave off the spicy sauce that is normally on top. Love the space with tons of covered seating. I will be back!!

Yelp
I have not explored the full menu, but can attest that the grilled chicken sandwich is super. The chicken is flavorful - with turmeric, cumin and light chili shining through. Served on a high-end bun with exceptional and crisp pickles and a not-overpowering slather of spiced mayo. It's good, their service is fast and the folks at the bar know how to make a solid Manhattan (I don't know how this came to be a rare skill). I will surely be back to explore more items on the menu. These folks have a serious handle on flavors.

Yelp
This isn't just the best chicken sandwich that I have ever had... This is some of the best food that I have ever had. I have been dabbling with the idea to come here for months. The only thing I'm mad about is not coming here sooner. I had heard rumors about how incredible the food was here. Now that I have had it... I now know. This place is special.

Yelp
Solid and reliably delicious. I have to say, I was a little skeptical with the food choices being all over the place regionally, but my first bowl of ramen here pleasantly surprised me. It was richly flavored, and though the noodles aren't traditional ramen noodles, it's satisfying in its own way and goes with the broth. Salad has fresh ingredients and a dressing that's to die for and chicken sandwiches are spicy and flavorful. There always seem to be a bit of a wait to get your food, but so worth it!

Yelp
This place is amazing. The saltado with steak is incredible, the portions are generous, and it truly is a brilliant mix of cultures on their menu. This is my favorite food cart in its area, and they always have delicious options for all.

Yelp
Please go here! The chicken and steak saltado blew our mind. We will 100% be coming back
