Tien Hsia San Chueh

"As opposed to the typical cramped noodle shop, this one is lavish and glam. Better still, it also delivers in terms of taste – the signature beef noodle soup with oxtail, shank, tendon and heel muscle lets you sample a range of beef textures. The broth is made with beef backbones and ribs plus four kinds of tomatoes and two kinds of onions for extra depth and dimension. The marinated meat platter, appetisers and pork rib rice are also well made." - Michelin Inspector

Dinner reservations are a must here—otherwise, expect a long wait. Conveniently located just a 5-minute walk from Episode Hotel, the restaurant offers warm, attentive service. We finished our soup before our noodles, and the staff kindly offered to refill it without us asking. My child loved the beef noodle soup—the beef was tender and full of flavor. I chose the pork chop set dinner, and it was one of the best I’ve ever had—crispy on the outside, yet juicy and tender inside. The set came with three vegetable sides and a soup. Prices are on the higher side compared to other local spots, and there’s an additional 10% service charge.

This bowl of beef noodle soup immediately impresses with its understated elegance and inviting aroma. The broth is a beautiful amber hue—clear yet full-bodied, offering a delicate sweetness that speaks of hours of slow simmering. Unlike the heavy, oily broths found in many traditional renditions, this one leans into a lighter, more refined profile. The natural sweetness of vegetables like onions and carrots blends harmoniously with the deep savoriness of beef bones, resulting in a broth that’s comforting, clean, and layered with subtle complexity. The beef is a highlight in itself—tender cuts with just the right amount of tendon, braised to perfection. Each bite melts gently in the mouth while still offering a satisfying chew, soaked through with the essence of the soup. It’s rich in flavor without being overpowering, and showcases the quality of the ingredients and the care put into preparation. The noodles are wide and chewy, with a springy texture that holds up beautifully in the broth. They absorb just enough of the soup to carry its flavor, yet remain firm and satisfying to eat. Topped simply with a sprinkle of chopped scallions, the bowl gains a fresh lift that balances the richness and adds a crisp finish. Overall, this beef noodle soup stands out not through bold or flashy elements, but through its restraint and precision. It’s a quiet, confident dish that rewards attention—a perfect choice for those who appreciate clarity, balance, and the honest depth that only comes from slow cooking with heart.

it’s our first time here, we follow the michelins guide and found this. the beef noodle is tasty and flavor is balanced. not too oily and not too salty. the beef is nicely cooked and very tender considering its thickness. it’s a thumb up. the portion is big. atmosphere is spacious. no beefy smell in the restaurant. the staffs are very nice and explained the menu well and recommended us good dishes. i like the taiwan veggie they serve, but i don’t think the sauce which is sour.

The soup taste/flavour is mild and mixing well. If you like balance herbal soup with mild taste. This noodle soup will be right for you. The meat is tender. But the beef tendon slightly chewy, I came since restaurant just open maybe still need a bit time. The noodle is soft, texture not chewy. The down point is too expensive, with service charge, while the noodle is too little in my point of view. In the end I paid 420TWD for one noodle bowl. I only order the noodle because I went there alone and side dish also very expensive. Total Verdict, overall taste is ok but too expensive for just noodle. With the quantity of one noodle bowl here cannot fulfill my stomach well. Reccommend to make reservation before visit.

Google
Nice, upscale restaurant for beef noodle soup and more. Despite no reservations I was able to secure a seat at a shared table (with lots of spacing). I ordered appetizer of the preserved cucumber which had a light peanut side. Decent. Then it was the Taiwanese pork chop - the best part of the meal. The must have is the beef noodle soup. My personal preference would be a little more umami taste with a little more spice kick. All in all, a very nice place to have lunch !

Popped in while walking in this area. I had to wait 10mins for a table without a reservation during lunch time. The beef shined the most I got there signature beef noodles soup. Medium thick noodles. The beef was the star of this. Beef was super tender and the tenderloin was so soft almost like soft tofu. Adding the chilli oil was a nice touch as it added more depth to the soup Enjoyed very much, I was travelling with my wife and baby 1 years of age and the place was very friendly and provided a high chair and cutlery for my baby. My baby also enjoyed the soup very much;) Came back in April 2025 still great!

While you are here for beef noodle soup, which is a great choice especially the soup.. the real winner is actually the pork chop! Which you can order with rice or on its own. Service here is marginally more pleasant than all other restaurants, which is good, if you know what I mean.

Tourist here. My party of four got reservations here and we were extremely unimpressed. I don’t think our food or service was good because we looked like tourist suckers. The price point is absurd for the beef short rib noodles. Absolutely ridiculous. And they force a service charge on you to top it off. The food was mediocre and probably one of my worst meals in Taipei. This location boasts that it used to be Michelin, but I fail to see that level of quality in the food, service, and overall experience of the restaurant. I regret coming here and certainly feel robbed. $1,280 for a generic bowl of beef short rib soup. Wow highway robbery. I recommend against going here and feel like I’ve been cheated.
