Inside Tilly Bagel Shop Fulton Market | Eater Chicago

"Opened by Hannah Tillett and Mike Banaszak after rapid pandemic-era demand for their hand-rolled sourdough bagels, this shop quickly drew long lines—so many that the owners hired a “bagel bouncer”—and expanded to a larger West Loop location to increase production. The new Fulton Market storefront adds about 600 square feet and a kitchen twice the size to produce for both sites, and it introduces a full espresso program (the original location currently offers cold brew and drip). The bagels are made from a 16-year-old sourdough starter nicknamed Tilly (originally called Adrian), cold-fermented overnight in a walk-in fridge for a lighter interior and slight tang, then boiled, topped and baked at high heat for a crispy exterior, fluffy interior and good chew. Offerings emphasize variety and creativity: rotating specials and a bagel-of-the-week plus flavors such as cacio e pepe; a tomato grilled-cheese bagel with tomato in the dough; garlic rosemary; sesame; everything; cinnamon and blueberry; and a Chicago-inspired bagel seasoned with giardiniera and celery seeds. A range of cream cheeses (including caramelized onion, jalapeño chives and bacon chipotle), monthly specials, and bagel sandwiches—from egg options to turkey, chicken Caesar and a crispy potato with chorizo—round out the menu, with planned collaborations with nearby chefs. The interior, led by one of the owners with Vero Design + Build, uses soft earth tones, dark wood banquettes, stand-up counters, tall windows with El-train views, handcrafted-feeling furniture nodding to bagel shapes, custom illustrations by Allison Pericich, and a notable two-foot bronze-and-silver mirrored disco-bagel art piece. Bagel flavors I’ve never seen and sandwich options that aren’t average. Everything here was great. The bagel was nicely toasted, filling well made, and all of the flavors were so interesting. I’ll definitely be back. One thing I’d change: the little puff seats around short tables in the middle. It makes for a good change in table heights, but don’t seem like actual seating options.

Sadly, the only redeeming quality here was the bagel itself. I ordered a sausage and egg bagel, and the egg had the texture of jello, not exactly the breakfast vibe I was going for. The sausage was so dry it could’ve doubled as a coaster. If you actually want something edible (and affordable), do yourself a favor and go to The Great American Bagel just half a mile away. Trust me, your taste buds will thank you.

I genuinely enjoyed visiting this place! The space, the food—everything was great. They bake the bagels fresh right in front of you, and offer unique cream cheese and bagel options that are really exciting. I also appreciated the self-serve station where you can add different syrups and milk to your drink however you like. Plus, they offer online ordering, which is super convenient. Also, the prices are pre reasonable! I came here alone, but I’ll definitely bring my friends next time!

Stumbled upon this place and didn’t realize it’s a famous bagel shop. Wanted a breakfast sandwich to hold the wife and I in the morning. Got the Tilly crisp bagel (never heard this combo before and highly recommend ) with an onion cream cheese, bacon, and scrambled eggs. Great chew and texture to the bagel. The combo of everything else was just a classic. Will be back if we make it back to Chicago and need a bagel sandwich.

If you haven’t been to Tilly Bagel, stop what you’re doing and go. Right now. As a long-time New Yorker, I’ve been looking for this bagel for 15 years since I first moved to Chicago. Don’t get me wrong — NY Bagel and Bialy is the OG, but Tilly makes an exceptional bagel and Chicago-fies it in the way I’ve always wanted. Don’t sleep on the Chicago Bagel, which is their Chicago version of the everything bagel. Chicago hot dog flavors (poppy seeds, celery salt, relish, pickle) + bagel … I mean, what more does one need in life? Maybe it’s the Tilly Crisp, which is their chili crisp take on an everything: zesty with a little lingering heat. It was especially great with their elote cream cheese. There seemed to be a line out the door when we arrived around 11 am on a Saturday of a holiday weekend, but we were at the register to place our order within 10 minutes. Shout-out to Saige for stellar recs: including the above Tilly Crisp+elote cc and the Chicago as a lox sandwich. Go. Go now. Go often. I’m already thinking about my next bagel…

The BEST bagels I’ve had in Chicago and overall. The bagels are always fresh, soft, and chewy. You can tell they make them fresh each day. Other bagel places I’ve been to, the bagels are stale and hard so you can tell they were old. I always get the Salmon Lox bagel, but I love trying their new bagels of the month! Also, if you get a coffee or drink, I love how they have all the syrups and milks to customize yourself without any extra charge.

The food is phenomenal. The staff are always lovely, even when it’s a busy rush. A true gem in Chicago. We’re fans for life. My husband always gets the crispy potato sandwich with chorizo on the Chicago everything bagel with the chive and bacon cream cheese. I always get the egg and cheese sandwich on the garlic rosemary bagel with the chive and bacon cream cheese. Occasionally we’ll get the bagel of the week to go with cream cheese as a snack for later.

The crispy potato with chorizo bagel was SO good. I picked the Cacio e Pepe bagel with jalapeno cream cheese and the combo was the perfect balance. The bagel was loaded with crispy potato and lots of chorizo which I appreciated. I love that you can really customize your bagels here. It was pretty busy on a Saturday AM but line moved pretty fast. There's seating inside but can be limited on weekend AMs, however, a walk around the block isn't bad too! Definitely stopping by again for my next bagel fix.

After living in New York City for 11 years and being inundated with delicious bagel options, this is what I was most nervous about moving back to Chicago. There are extremely limited bagel options in Chicago, but Tilly's was recommended by a northeasterner, as well as a few that were a drive out of the city. Tried Tilly's after a local workout class and it was fine! Relative to nyc bagels, it was fine. Relative to Chicago bagels, it was pretty good. They had good options for bagels, cream cheeses, and specialty sandwiches. I ordered everything bagel with scallion cream cheese (my regular) and was surprised that it was pretty decent. Would I go here again? Sure. But I also did just pack 8 bagels in my carry on from my recent trip to nyc, so I may be okay for awhile.

Ambiance - small, cute, neighborhood bagel shop, offers sit down/standing area to enjoy food, also love that I got to see the bagels being made Service - weekends are usually packed, short line outside, i'd recommend ordering ahead online for pickup, 15 min wait outside + 20 min order/food ready Food - they definitely pack the bagel sandwiches with protein, the lox bagel sandwich was soooooooo good but the Chicago bagel was definitely harder/chewier than I expected

We shared: 1. Chorizo egg cheese on everything bagel w/ caramelized onion cream cheese 2. Bacon egg cheese on tomato grilled cheese bagel w/ Sun dried tomato cream cheese Great flavor and chew in both bagels. I loved the fluffy egg. The recommended cream cheese for our breakfast sandwiches were very good. The only weak point was bacon - overcooked and dry. Friend's latte is comparable to Starbucks. No issues with service. Would definitely come back to try more of the menu.

Tilly Bagel shop is a Chicago must!! The west loop location is great, clean and friendly staff!! Unfortunately I came on a day the sold out of everything, but it doesn't take away from the most delicious bagels and sandwiches ever. I love the chorizo and potato.

Got the crispy potato with chorizo bagel sandwich with hash browns, chorizo, scallions, and salsa verde on an everything bagel. Hands down one of the best bagel sandwiches I've had in a long time. Everything was hot, crispy, flavorful, and the bagel had that perfect balance of chewy and soft. It was messy in the best way. I also got a matcha but the way they do it is kind of a DIY situation. They hand you a plain matcha and send you to a little syrup bar to customize it yourself. Cute idea but not helpful if you don't know how to make matcha. I had no clue how much syrup to add and ended up with something that tasted off. Next time I'll probably skip the matcha or ask if they can just make it for me. Cool vibe overall though. Chill spot to sit and eat. The sandwich alone is worth coming back for.

I've been to the south loop location many times and was in the west loop area so I had to stop in. The inside definitely reminds me of the south loop spot. We were happily greeted and our order was taken in no time. I went with the bagel of the week which was blueberry French toast with sausage, egg, and cheese along with honey vanilla cream cheese. We were fortunate to beat the rush and our bagels were out super fast. That first bite feeling is real. So good!

Much better experience at Tilly's this trip! Enjoyed my Bacon, egg, cream cheese on an everything bagel. Little light on the cream cheese, but that is my only critique! We ordered our sandwiches around 9:50 on a Saturday and picked them up by 10:45.

Stopped by after seeing another location in the city that had quite the crowd. This location also had a line when we got there, but it moves pretty quick! The staff is super friendly and cool. I ordered an everything bagel with bacon, egg, and vegan cream cheese. The bagel itself was pretty thick!! It was yummy, but I think I could've gone without the vegan cream cheese, it almost felt like a big glob of butter, but other than that my bagel was good! Obviously you can't compare Chicago bagels to NY, but if you're looking for a good bagel this is it! Seating is limited, but it's a cute little spot.

The staff were super nice unfortunately the bagel did not live up to the hype. The ingredients were fresh and the egg and sausage were seasoned well but the cacio e pepe bagel lacked flavor. The onion cream cheese had more flavor than the bagel. The texture was ok and it had an ok crust but i don't know if I'd be running back.

Came here around lunch and got the chicken Caesar bagel sandwich and it did not disappoint. The staff was friendly and super quick with the turnaround of the sandwiches. So we were in & out. Now let's get into this bagel.. it was HUGE! And all the ingredients paired well with one another. I got it on a cacio e Pepe bagel with bacon & chive cream cheese. It was stunning! I could only eat one half because the sando is too big for just one sitting. Would recommend trying them out.

I love Tilly bagel so much! I ordered online. Pickup was an hour wait and when I got there it was another 20 minute wait but they are so busy. This time I got the crispy potato and this was amazing. I did the bacon chive cream cheese. Full of flavor, huge portion and great prices!

It was my first one trying Tilly Bagel and it was good, the wait wasn't too long and the staff behind the counter were so nice. I got the Caesar salad bagel with caramelized onions and Caio e Pepe bagel. It does get busy in the morning sometimes once I walked through the door. They do have a variety of bagel options to choose from and there's seating inside as well.

finding a good bagel in Chicago is like finding a seat on the L during rush hour... - I think for the metropolitan area of Chicago, this is a winner. there are obviously hundreds in the suburbs that seem to have a stronger bagel game, but Tillys comes in hot for the city. - loved the way the store balances interesting, seasonal, and exciting flavors while maintaining the basics to a strong degree. they have a chicago bagel with dill and mustard seed, a cacio e pepe, and a tilly crisp bagel -- along with other eccentric flavors and cream cheeses, of course, alongside the classics. maintaining that spunk without sacrificing the fundamentals that make a good bagel is rare. - the outside of these bagels have that crunch while keeping that thick fluff on the inside. a fabulous size that had your jaw working overtime - we split a cacio e pepe bagel with sausage, egg, and cheese (all bagel sandwiches come with cream cheese too!!! hallelujah!!) and a chorizo, egg and cheese on a Chicago bagel with caramelized onion cream cheese. - these were both fabulous. the chorizo was salty and oily and went perfectly with the mellow cream cheese, the fluffy egg, and that distinct American cheese flavor. - the only disappointment was the caramelized onion cream cheese, it really did not have that much flavor. it tasted like it had onion powder in it, but I can't say it was very special. I wish I had tried the seasonal Elote or the bacon chive to see if those had a little more zest. - a small place with about 15 seats. attentive and kind service at the counter where you order!

We stopped at Tilly Bagel Shop while doing an impromptu bagel tour. The lox bagel was incredible, fresh dill and capers with a good amount of lox. The bagel itself was chewy and thick. Out of all the places we tried, we rated this bagel number 1! Definitely will be returning

Finally there is a place in Fulton Market for quality bagels and bagel sandwiches! Located right on Aberdeen, Tilly Bagel Shop features a variety of freshly baked bagels (Chicago-style!), cream cheeses, and bagel sandwiches. The bagels are soft and pillowy, but also have a great chew -- key characteristics for a high quality bagel! I got the lox sandwich with a garlic rosemary bagel and caramelized onion cream cheese, which was all delicious and super flavorful. The staff are all very friendly and helpful, and the interior is modern with a warm atmosphere throughout. Highly recommend and can't wait to visit again!

Bagels hit! Always looking for a good bagel shop and Tilly's it is!! Love that they always have a rotating unique bagel along with some standard flavors like sesame and everything bagel. Love their chili crisp black sesame bagel, cacio de Pepe and recently had their Chicago bagel (IYKYK ). Weekends are busy so be patient but staff is friendly and quick!

I have a pretty basic order here (the tomato grilled cheese bagel is delicious!) and come in a couple times a week. It's a pretty little shop and the employees are all *angels,* probably the kindest and warmest service I have received at any counter-service spot in the city. Even when it's busy, they always give a cheerful greeting.

so - this is probably my last ever tilly bagel, at least for a while, because i'm leaving chicago in a week to go back to grad school in CA. tilly bagel is easily my favorite spot in chicago, not just because the food is delicious but also because it opened in south loop exactly when i moved there and i feel like we've been on a bit of a journey together. they are just consistently good, and not just good but amazing. i recommend tilly's bagels to literally everyone i know. i'm disproportionately sad that i wont have one when i move to california and literally put it on my bucket list to come back one more time before i leave. i just got a basic egg and cheese sandwich on the tilly crisp bagel and it was everything i needed to say goodbye. the tilly crisp is amazing - its basically an elevated everything bagel with a little kick to it. i just love tilly's so much; ill be back whenever i visit.

They have a straight forward menu with so many delicious flavor combo options, including limited time specials that you'll see when you walk in. Here's the thing - these bagels are really reminiscent of NY bagels that have a soft yummy chew, and such bagels aren't meant for toasting (if you get it, you get it). I chose the Cacio E Pepe bagel for my Crispy Potato sandwich and it was everything I could have ever wanted from a bagel sandwich: bagel was still warm & steamy, slight crunch from the hashbrown was divine, egg was pillowy without being "too eggy," overall a savory sandwich that was surprisingly light (demolished in one sitting). I'd eat a Tilly bagel a day if I could.

The bagels are delicious! They have multiple options aid bagel flavors and cream cheeses. I got the cheddar bagel with jalapeño cream cheese and it was a great combo. I would definitely go back for the fluffy bagel. My iced chai tea latte was okay, not the best I've had. It was super busy inside on a Sunday morning, but the service was fast and a group of 5 of us were able to find seating.

Will forever run to Tilly when I need to satisfy a bagel craving. Had seen this place all over TikTok and it absolutely lives up to all of the hype. The bagel was perfectly soft and spongy. I brought some friends from out of town here and they talked about their bagels for the remainder of their trip! Great spot for a Saturday/Sunday bagel fix despite the long line.

Over priced sandwiches for low tier ingredients and taste! Save yourself the trouble and go elsewhere! 2 bagels sandwiches for 35$? The salmon bagel was extremely salty and the chicken bagel Pattie was from the freezer. I will not be going back! Very disappointed

Very friendly staff and a nice seating area but man... those bagels are not it! Trying to do too much with the sour dough as opposed to just making quality bagels. Chicagoans will need to wait for the next $8 bagel shop to maybe be decent. Sincerely, Someone from the NJ

I arrived about ten minutes before closing and the staff in the store were extremely friendly and helpful, which is always a huge plus. The interior is also very inviting. I got half a dozen bagels & they were fantastic... best bagels, by far, that I have had in Chicago. Just as good as a NY/NJ bagel. Crunchy on the outside, soft & doughy on the inside. When I'm in town, I usually get bagels at NY Bagel & Bialy in Lincolnwood, which is also excellent, but these bagels are a bit better.

Honestly, I did not even try the food. I went in, saw that a plain bagel, with nothing on it was $3.50. In a word....ridiculous! There is no bagel that is worth $3.50. It's a shame because I was looking forward to getting some good bagels, but as I was not born yesterday, I will have to pass.
